Have you ever noticed how the less you have to do the lazier you get? I do not wish I had a full agenda, but I certainly was in a funk today. I’ve found, though, that when I get in these itchy moods that a WALK almost always cures it. Not sure if it’s endorphins, cabin fever or sunshine, but after not going to get my hair cut today (it started raining and Matt came home so I lost motivation) and plopping around the house a bit (I did get a short writing project done!), I finally set out on a 30 minute walk. My return mood was like night and day! I made it back just in time for a dreary, rainy night to begin pouring down.
(FYI, ‘plopping around the house’ means you flop down on the furniture and sigh lethargically)
I got pretty hungry around 5:00 and had the age-old debate of a snack or enjoying dinner hungry. I drank some water and was able to fill my time with brain-stimulating things long enough to be perfectly hungry at 6 to make dinner.
Garlicky Chicken Sausage + Kale Pasta
I liked this kind, but AmyLu’s still wins.
We cooked 3 oz of whole wheat angel hair as a base, which I lightly tossed in about a tsp of olive oil. When I’m having pasta with a heavy protein like meat or seafood I usually lighten the pasta load some, so this was about 1.5 oz per person. I also used cooking spray in the pan and saved the flavorful olive oil for drizzling to maximize flavor.
The rest of the dish was cooked sliced chicken sausage, ~5 small garlic cloves, 1/2 a green bell pepper, red pepper flakes, the juice of a whole lemon and a few cups of kale, which was steamed on top of the cooking underfoods.
You know, our cooking habits have changed so much. We used to have so much more zest for cooking and I actually can trace it back to the Thanksgiving Challenge. Once we started significantly cutting back on our groceries, we stopped being as creative. For example, we used to always have parmesan cheese in the fridge and this dish could have really used some. Although this decline in enthusiasm for cooking might also correlate with the start of my busiest semester to date. NOTE TO SELF: Get cooking passion back!
It was awesome!
But surprisingly not that filling. Perhaps I should have gone with a bigger pasta serving. Pasta never fills me up regardless though!
So I found this HEAVENLY surprise in my freezer from Kelsey’s house sitting days.
OMG this stuff is phenomenal!! All the cream of iced cream but a really nice pina colada flavor with pineapple chunks.
1.5 tiny bowls (this stuff is not light!)
Matt had graham crackers + PB for dessert! Now we are both satisfied 🙂
Off to watch the *new* Conan and do some reading. We have Revolutionary Road to watch too, which I am super excited about, but might save that for another night.

I’ve been in the same funk myself today! In fact, I related to pretty much everything you just said!!! I too have lost my desire to cook and really don’t feel like doing much. I attribut it to the busiest semester I have ever had. Ever. It really wiped me out! Sometimes I think we just need a break though. I’m convinced the drive to cook and be productive is lurking just around the corner.

Revolutionary Road is SO SAD. It’s really good, though. The acting…oh, the acting. It’s absolutely fantastic. Those two should make a movie together every ten years for the rest of their lives. However, the next one should be a romcom. 😉

You still cook pretty creatively in my book! When I lose my “zest” for cooking…I rely on more convenience food and takeout. I’m really working on doing that less though, and so far it’s working.

Hey Kath- I can absolutely relate to the “plopping”. I am suffering from some major boughts right now. I actually get that way when I have way too much to do and I am overwhelmed. More specifically, way too much to do over the next 2 months and a lot of which cannot be dealt with right this second- i.e. like moving. I also turn to exercise. I whole-heartedly believe it is the release of endorphins. At any rate, I thank Goodness for exercise!!
Your meal looks amazing! I am hoping that once I have more control over my schedule when I start school and I can spend a little more time being creative in the kitchen.

What has really got us excited at the moment is our CSA box- I think it forces you to be creative and we get so excited about it! I remember you and Matt did a CSA last summer, will your cutting back on groceries this year mean you won’t be participating in your CSA again?

I am a full on plop around the houser. The past three weekends in Miami have been rainy, and I have had the worst cabin fever ever. It has gotten so bad that my boyfriend will go to any lengths just to get me out of the house. He suggested I bike to whole foods and back to buy myself lunch. I was annoyed that he wanted to get rid of me so badly, but the bike ride worked. I totally agree with your walk-and-revive motto. I just have to act on it more often.

Compared to other greens, kale is NOT bitter!! I recommend steaming or sauteeing it until it turns bright green and then tossing it with maple syrup and raisins 🙂 the anit-bitter recipe.
