This afternoon I went over to Holly + Eddie’s to meet Baby Finn, just 16 days old!
He was PRECIOUS! And soooo small! I have never held a newborn baby before – he made my heart melt.
We snuggled on the couch for a while, and of course Finn obeyed the rule of spitting up on the cleanest woman in the room 😉 I didn’t mind though! Holly and I chatted for a while – and I left them with chili and a loaf of Cheddar Garlic, a Chocolata Babka muffin for dessert and granola for mom snackin’!
Back at home, I worked on my own dinner – a roasted medley of chicken, purple + sweet potatoes and kale. Sipped a kombucha for cocktail hour!
My chicken was attacked because I shaved off half to pack for lunch tomorrow! I will thank myself then. This was The Organic Butcher’s herby chicken breasts. Their chicken is SO tender and juicy compared to most I’ve had in my life. I baked this guy for 30 minutes at 400* to the perfect internal temp.
Taters! There has to be some college with the colors orange + purple. If you went there, you should make these for game day! I baked these at 400* for 35 minutes or so. Coated in olive oil, cayenne, cinnamon and salt.
Baked kale. We were too impatient to really crisp it up in the oven, so this was quazi-kale chip style. These were simply olive oil and salt seasoned.
I bought eggnog today to have on Christmas. I might have to go have a shot for dessert!!
Ashley @ Coffee, Cake and Cardio says
Beautiful baby! Newborns are just amazing.
Tee @ She Writes, Bites, and Window Shops says
Haha, I sometimes get impatient with my kale in the oven too. Luckily, it’s delicious even if it’s not quite in “chip” form!
Sara says
Totally personal… but are you planning on having kids soon? Seems like you would make such a wonderful mom!
KathEats says
We both definitely want kids, and we’re thinking about it. Not sure when though (and of course luck has to be on our sides too)
Katie @ Real Food Katie's Way says
Well you will make such an awesome mom!!
My husband and I are at the same stage. It’s a huge step and we want to make sure the timing is right in our financial and home life!

Aleksandra @ Diary of a Liveaboard says
That was Susquehanna University, by the way. Seems I can’t edit my comment. Oops!

KathEats says
🙂 It was a race he sliced bread for
Army Amy* says
Babies seem to have that same radar that cats have. Cats always find the non-cat people and rub up on them.*
Mom says
I am dreading that this holiday. Our old sweet kitty is not exactly who you’d want on your lap.
KathEats says
YES SHE IS!
Mom says
Well she is for her sweetnesss. but her grooming is getting weird. She always kept herself so nice but not so much anymore….
TS says
I mean this in all kindness and love for animals (especially cats), but when a cat’s grooming changes or they stop all together it could mean that there is a serious health issue going on. I think you kitty might be older no? perhaps a vet visit to make sure everything is ok. A cat’s grooming is directly related to their physical health.
Taken from http://animal.discovery.com/healthy-pets/cat-health-101/cat-not-grooming-itself.html
“A vet visit to learn why your cat has stopped grooming should be an early, not last, response to the problem. The vet will determine what’s going on in your cat’s body, or emotions, and prescribe a solution, whether it’s a dental cleaning, medication or a change in diet to address his weight, age, illness or digestive issue.”
Mom says
Appreciate your comment. She’s under a vet’s care–just had a checkup and some meds, which helped, recently. (But she’s a bit of a slobberer when she grooms, always has been, and it seems to be getting a little worse,so if she jumps up in your lap, and she’s not your cat, it can be sort of distasteful.)
Katie @ Peace Love and Oats says
Those are clemson’s colors!! And that baby is so cute! He looks very alert!
Holly says
what a precious baby boy! All babies named Finn are cute, but I’m probably biased since I have a 3 month old Fin (Fintan) myself 🙂
katie @KatieDid says
I’ve never held a newborn either! Actually that’s not true, I was just looking at a photo of my 2yr old self holding by younger brother. But he is a precious one!
Christine @ Oatmeal in my Bowl says

Katie @ Talk Less, Say More says
I recommend a shot of that eggnog in a cup of coffee in the morning! I quickly got addicted and my eggnog supply had to be replenished so there’s some left for Christmas… 😉
Johanna B says
I’ve tho’t about doing that but never got up the nerve to try it. Now, I’ll have to. Thanks for the “idea”.
Kathleen says
Haha, I so drink eggnog “shots” for dessert too!
Kristabel says

J3nn (Jenn's Menu and Lifestyle Blog) says
Awww, an itty bitty 🙂 So cute.
Shot of eggnog sounds perfect. Nice night cap!
Roxanne says
I was just thinking, a lot of people put a little alcohol in their eggnog, would you guys consider BEER? Maybe Matt could find the best one for the “job”…. Or would that be too yucky?
KathEats says
I bet a stout inside would be really good!!
Chelsea @ One Healthy Munchkin says
Aww Finn is such a cutie! Babies always make me melt into a mushy pile of goo. 🙂
Sara @my less serious life says

I know everyone’s swooning over the baby, and I totally am, too—but I’m still additionally swooning over this chocolate babka muffin you speak of. Send some to Baltimore? ; )
KathEats says
I bet the Columbia location makes Chocolate Babka!
Nicole says
They do! Delicious!
Hillary says
I live dangerously close to that location. Don’t tell me this! Haha!
Johanna B says
I had a glass of eggnog last night for dessert. It was commercially prepared but I had freshly grated nutmeg on top which counts for something. It was yummy.
Lauren @ Oatmeal after Spinning says
Ooh- you look like a pro!!
Greg and I are at that point, too, where we’re thinking about it.. and talking about it.. and are not getting any younger (I’ll be 32 in less than 2 months and he turns 38 on Jan. 1st!)
I love newborns, but they are SO delicate- makes me nervous almost!
occula says
I love holding wee little newborns – and then handing them back! 🙂
Megan says
I will definitely be making those potatoes for the fall tailgates at Clemson next season!

Also, I was driving through a part of town (Greenville, SC) that I’m usually not in yesterday doing some Christmas shopping and you will never guess what I saw…a Great Harvest Bread Co! And almost caused my boyfriend to drive off the road because I squealed so loudly…needless to say, I am just slightly excited about going back to check it out this afternoon and make some yummy purchases 🙂
KathEats says
Wheee!
Jennifer G says

Megan says
It’s on the Simpsonville end of Woodruff Road 🙂

The potato combo sounds good…the baby is so Cute!
Charise says
We’ve got a couple newborn friends around here and I die of their adorableness everytime I hold them, even though we still want to wait a few years for a kid, if at all. So fun (and relaxing!) to get to hold others’ babies for now!
