Pizza in the morning, pizza in the evening, pizza at lu-unch time!
When pizza’s on Dakota, you can have pizza anytime!
Toasted Dakota bread plus leftover grilled eggplant plus leftover homemade tomato sauce =
Pizza! Topped with some freshly grated jack cheese.
With a side of fruit – nectarine + Asian pear
Bubbles and two cherries for fun!
Matt and I combined a run with a bike ride to drop my bike off to get a new handlebar before lunch (I wanted it to be longer for a more leaned-over ride). We biked to the shop (2 miles) and then ran 4.3 miles around town. I’m getting better at hills and didn’t have to stop and walk up any! I’m working on running up the steep ones on the balls of my feet and that seems to help a lot. My pace has still dropped about 30 seconds / mile when I include these big hills, but hopefully that’s making me faster on the flat ground! We made it back to the bike shop in 40 minutes flat and biked the 2 miles back home.
I was one starvin’ marvin’ by the time we sat down to lunch at 1PM. And I’m still starving now 2 hours later after our business meeting! Snack time!
First, a bakery conference call.
And then – OUT TO DINNER tonight!! So so so excited. I love going out to eat and we’ve limited ourselves to twice a week, once during the week and once on the weekends. Of course this "rule" is bendable, but it’s a good guideline. Sure makes humpday more fun!
Anna @ Newlywed, Newly Veg says
Lol…bagel bites were so nasty, and I used to BEG my mom to buy them for us. She never would, and now I’m grateful 🙂
Have fun at dinner!
Holly @ couchpotatoathlete says
Kath your pizza looks fabulous!
My husband and I are down to the “out to eat once per week” rule — going out can be so expensive. I try to make more “special” dinners at home so we don’t feel like we are missing out.
Allie (Live Laugh Eat) says
I love that your pizza is lined with eggplant! I’d eat it anytime for sure.
Valerie @ City|Life|Eats says

Jessica @ How Sweet says
I love going out to eat too, and we don’t even go twice a week! More like once if we are lucky. I love it!
Amanda (The Nutritionist Reviews) says
What a great idea to put eggplant on your pizza! I never thought of that before.
Also, I found your Youtube videos last night and got SUCKED in to watching like 10 of them. Love them!
Allison K says
Ugh I too used to love bagel bites, i’m not sure why! Even as a kid I could tell that the “cheese” was soooooo processed. I think it was the jingle!
Jasmine @ Eat Move Write says
I love to go out to eat, too. We try to limit ourselves to only twice monthly, which makes it sooooo exciting when we do go out. Have so much fun!
amber's notebook says
YUM! That looks so good. I’m ready for lunch now =)
Angela says
That pizza looks awesome. Sauce combined with melted cheese is one of the best combinations ever.
I try to follow the same guidelines when it comes to eating out, but its so much fun to try new places! I’m a total foodie and living in NYC makes it hard to stick to those rules, but I’ve definitely improved lately. Now I want to go to eat tonight. I have restaurant envy!
Samantha @ Bikini Birthday says
Aww cute, you get 2 dates per week!
Lindsey @ Gingerbread Bagels says
Oooh that pizza looks tasty! Have fun at dinner tonight. 🙂
Lauren at KeepItSweet says

Stacy says
That looks so yummy! Pizza’s are very versatile you can put pretty much anything on them and they are delicious 🙂 We try limiting going out to once a week. We usually go out on Fridays. By the time our work week is over, my hubby doesn’t want to cook and I don’t want to think about what he should make 😉 I hope you guys are making progress on the bakery front 🙂
Foodie (Fab and Delicious Food) says
Mmmm, the pizza looks great! I like making quick and easy pizzas like that sometimes! So easy to do with English muffins as well or biscuits!

Thanks to your post on your bike, it helped direct me to fitness bike to bike shop down the road, and I actually bought the Trek 7.2 FX last week -2010-so got a great deal! Love to hear your thoughts as you ride it more.
Question, where do you keep getting all great GH breads> Is Matt still training at location closest?
Kath says
See my answer just above – we froze them 🙂
Neen@Broad Bean to Runner Bean says

And muffin/bagel/pita pizzas are such a perfect easy lunch!

Mmm, this reminds me of bagel pizzas I used to LOVE. I actually picked up some ww bagels at TJ’s last night. I know what’s for lunch tomorrow… 🙂
Suzanne C. says
I totally wrote one of my college essays on how that song and bagel bites embody the ideals of our generation…the essay was pretty good, the only problem was having the song stuck in my head for days 😉 Have a nice dinner!
Chelsea @ One Healthy Munchkin says
I love making pizza on pitas, but I’ve never tried it on bread. Love the idea! 😀
Carrie says
Mmmm, what perfect pizzas. Love the cherries in the bubble water, did that actually give a cherry flavor to it?
Bee Goes Bananas says
Wow, that looks delicious! I need to experiment with eggplant more often.
Caitlin (EatFeats) says
That’s a good rule. My boyfriend and I are on the “never eat out” plan lol. The upsides are that it makes going out for special occasions feel REALLY special and it encourages us to cook together. Or…eat beans and rice a lot.
Alyssa says
Great idea for a quick pizza, Kath!
Lisa @bakebikeblog says
oooh what a great way to used leftover eggplant! BRILLIANT!
Chelsea @ Strawberry Sweat says
My boyfriend and I also try to do the “go out to eat once a week” rule. Since we are both students, it’s hard on our finances to go out more than that.
Lunch looks good! Makes me want to go pick up an eggplant after class 🙂
Kelsey @ CleanTeenKelsey says
Homemade pizza seriously makes THE best leftovers. I could eat them again and again and again. 🙂
Katie @ peacebeme says
I am really hungry right now and that pizza looks delicious! When I was a kid, my mom used to make us little english muffin pizzas for dinner sometimes that were so good.
Lauren says
I love your adult version on “Bagel Bites!” I actually think healthy homemade pizza makes a perfect lunch and I foresee me using this as a mom many times.
haley says
YUM! Looks so delicious! I love how you found a quick and simple way to put together things that needed to be eaten =)
Stacey says
I had grilled eggplant for the first time the other day and surprisingly loved it! Pizza is the best meal ever. I’ll never get tired of it 🙂 Enjoy your dinner out! Yay!
Sabina says
Twice a week? Wow! We’re at once a week; any more than that, and it gets pricey. Enjoy! 🙂
Jil @ Peace, Love & Munchies says
Ohhh – that just looks amazing! I’m a fan of anything with warm, gooey cheese on it. 🙂
Morgan @ Healthy Happy Place says
I agree that limiting how often you dine out makes it that much more enjoyable. We allow ourselves to eat out once every 2-3 weeks. When the time rolls around to go to a restaurant, we soak up every minute!!
Kris says
When we were young :), we used to eat out twice a week. Now it’s more like once every two weeks, although we did go out all three nights of the holiday weekend as a mini vacation (but we did it in a very frugal way). I find it easier to maintain healthy eating by eating most meals at home.
Sarah (Running to Slow Things Down) says
The pizzas look ah-mazing! 😀 I could literally eat pizza every day. So yummy. 😀
Oh, and just as a word of caution, be sure to stretch those calves out if you’re increasing your hill running! I know you do plenty of yoga which is great, but I figured I’d throw this little tip out there anyways. I got achilles tendonitis a couple years back when I too quickly increased my hill workouts without stretching my calves out. Not pretty. 😉
Cara Craves... says
I think it’s good to set “going out for dinner” guidelines!
That way it’s easier to stick to a budget and you probably are eating
healthier food at home anyways.
Sarah @ Sarah's Shaping Up says
I absolutely LOVE eggplant. The pizza looks delicious!
Sarah K. @ The Pajama Chef says
