It was packed again!
Most of our friends all had to cancel on us for the symphony tonight 😥 Two of the husband’s friends did make it, so that was fun 🙂
Of course I started the night with a glass of wine . This wine is awesome – inexpensive, complex and light for summer, cool bottle from South Africa:

It went down like water so I had a second (each about 3 oz?). Check out these awesome wine holder stakes from Crate + Barrel. SO handy at grassy picnics.
Greek Quinoa Salad
- 60 frozen shrimp, thawed
- 1 cup dry quinoa, prepared as directed
- 1 bunch asparagus
- 1/2 a pint cherry tomatoes
- 1 zucchini, chopped into 1 in pieces
- 1 cucumber, chopped
- 1/4 cup chopped mixed olives
- 2 tbsp capers
- 1 lemon + its zest
- 2 tsp olive oil
- 1 block Fat-Free Presidential Feta Cheese (or your own favorite)
- Fresh or dried oregano to taste
Cook shrimp, quinoa, asparagus, cherry tomatoes, zucchini in your method of choice. Toss together with cucumber, olives and capers. Drizzle with lemon juice, lemon zest and olive oil dressing.
Makes about 14 cups. Each cup is approximately 125 calories, 3 grams of fiber and 5 grams of protein.
We’ve got leftovers!
My dinner plate, along with some Triscuits and jack cheese that our friends brought and fruit salad . Last week’s coconut fruit salad was so good we did it again with different fruits: honeydew and fresh blackberries.
Seconds!! I like quinoa a lot, but it’s like eating air. It never fills me up and had pretty much no chew. I wish I liked it more for being such a great grain, but sadly I prefer chewy things like wheatberries and pasta.
Dessert pour – another 2 oz?

I am guilty of running out of sunscreen today. I have a beautiful fingerprint tatoo on my shoulder from where I tried to rub in the last drop. We need to buy some more pronto! Luckily my face isn’t burned – that’s blush 😳
(I didn’t know you could see my face in this so sorry I’m so serious!)
I’ve got FOUR tests this week. It’s going to be a long one. But luckily I don’t have Food Comp on Tuesday or Sports Nutrition on Thursday, so that leaves a little more flexibility. Definitely time I can use!

No, it’s just blush. But it was 90* or so out there! But the husband gets really bad flush sometimes. Like realllllly bad. He has trouble breathing. Seems to be tied with liquor but doesn’t always happen. He can’t seem to find a link.

That salad looks really good – I might have to try making it. But with all that shrimp and quinoa, which is pretty high protein for a grain, is there really only 5 grams of protein per cup? Good luck on the tests this week! Looks like you have some lunches ready with all those leftovers.

I travelled in South Africa for 3 + weeks before I graduated college and it was the most amazing place I’ve ever seen! While there, I saw the entire country but we ended the journey in Cape Town and went to the first vineyard/winery there ever… It was amazing! Their wine will always hold a special place in my heart… I haven’t seen this brand yet, so Thanks for the picture because I will most certainly obtain some to try!

I’m sad I made the oatmeal bars but I didn’t like the way they turned out. I used almonds instead of walnuts but everything else was the same. i’m bummed.

I am so glad to see you enjoyed your bottle of South African wine. I live in SA and we drink nothing but local wine. The quality and choice is incredible, and cheap!
That quinoa salad looks incredibly appetizing – I may just have to give it a try
