I am so filled with excitement right now!!!
I just got back from a 3 hour meeting/lunch with Mary Brown, MS, RD of Nutrition Specialists, where I’ll be interning this summer. I cannot believe I found the PERFECT internship! Mary is awesome, and I am going to be doing so many cool things – from counseling sessions to learning all about the business side of owning a private practice. (Can I just put in a few more !!!!!!)
But here’s the coolest part: I asked if Mary would be open to doing any online counseling of blog readers who have expressed interest to me, and she thought it was a great idea! All of you who have emailed me for personal nutrition advice – now’s your chance! Mary and I are considering working together on this, and I wanted to gauge interest. So if you think you might be interested in an individualized nutrition evaluation and consultation (or a series of them), please shoot me an email to [email protected]. I’m not going to respond to your emails – I just want to see who might be interested to see if it’s worth opening the doors. This would be great experience for me before I start my internship next spring and hopefully a practice of my own in the coming years.
After we gabbed for a while, we walked to lunch in the neighborhood – to a Charlotte landmark: The Phat Burrito.
I have heard about the restaurant for ages but have never had the chance to go.
Boy was I ever impressed!!!
I ordered a Fish Salad – not really knowing what to expect.
It was DEEEElicious!
A tortilla, baked, stuffed with red beans + rice, lettuce, grilled white fish, cheese and cabbage. Served with spicy salsa! I ended up eating about half and brought the rest home.
Because they are “that good” we also got a kids’ size veggie quesadilla and some chips with queso. The quesadilla was stuffed with portabello mushrooms and zucchini. It was awesome. I had one of the triangles and a handful of chips –
What a yummy lunch.
And here’s the other fantastic news: grades just went up and I couldn’t have been more pleased with how I did 😉 A semester of hard work paid off!
And more excitement: I got an email from an Oprah.com producer (), who reads KERF and saw that I went to see Oprah at Duke, and she wanted to share that Oprah’s Duke Commencement Speech is now online. I’m going to go watch it again! Let me also add that I think Oprah should do a show on internet trends + food blogs, and I would be more than honored to come to Chicago and share my story
I’m going to go answer> comments + emails and then relax a little before I turn around and go back uptown for the Charlotte Dietetics Association meeting at a restaurant tonight. It’s a big nutrition day!

I need your (and everybody else who reads the comments) help! I’m running my first ever race in a month (it’s a 10 km too) and it’s the “Underwear Affair”. I think it might be a Western Canada race (the website always seems to just have a couple of Canadian cities listed) but it’s for all cancers below the waist. You can run in your underwear-though I don’t think I will. All in all, a super fun race.
However, I’ve decided to get a big group together to run it-and I have both accountants (where I work full time) and servers/bartenders (where I work part time) who have signed up to run it with me. The problem is-I need a team name! I have absolutely zero creativity and I want my team to have a great name! Anyone out there super creative and can come up with something interesting??

I went to Phat Burrito last month for the first time and (sadly) wasn’t that impressed. Maybe it was what I ordered? But I got the veggie stuffed burrito, and was dissapointed to see that it was mostly stuffed with rice and beans 🙁

Another example of how popular blogs, especially food blogs, have become is the Julie & Julia Project starring Meryl Streep and Amy Adams. Julie Powell’s personal experiment blog has now turned into a major movie set to release this summer! I thought it was pretty cool that she turned her blog into a book deal, but to have Meryl star in her movie…wow!

Your lunch looks absolutely delicious. I always get uncomfortable/self-conscious about eating with people like future bosses/supervisors. Do you struggle with this? Was it at all uncomfortable to eat with Mary?

Man, sounds like you had an exciting day! I think it’s a great idea that your internship leader wants to help out as well. I would love the opportunity to have a personalized nutrition plan. I just hired a trainer to hopefully kick start my weight lifting program and the nurtition part would be an added bonus.
