Oh. My. Gosh. My Danish Pancakes held me with ZERO hunger (or interest in food) from 8 a.m. until 3 p.m.!! And I wasn’t even that hungry when I did sit down to lunch. I cannot believe it – maybe it was a fluke? That also includes a hard workout! I did have a coffee sample at Fresh Market, but I don’t think a touch of soy creamer would make a difference. These pancakes must have some kind of miracle blend of nutrients. Have those of you who have tried them had similar experiences?
Workout
We made it home from our workout JUST in time for a big downpour. We were planning to have friends over for a cookout tonight, but we decided to postpone it to next weekend when hopefully the weather will stay at Sunny and 80*!
Outing to TJ’s + Fresh Market
Trader Joe’s was a madhouse as usual, but there are SO many things I had to inspect there! I actually ran into one of my friends from high school there. Abby Riley! She doesn’t even live in Charlotte, so it was totally random. But I came home with some cool new things – the whole wheat pizza dough (see below!), my favorite raspberry jam, macadamia-cashew nut butter (it was only $4.99 compared to $12 at other stores!), cheap tofu, sliced almonds (cheap-o!), cheap greek yogurt, Nuts for Raspberries trail mix, eggs, Kashi crackers, 3 kinds of cereal and a few other misc. things, including vanilla meringues!
Of course I had to try the pizza dough for lunch 🙂 I took out 1/4 of the ball and made a petite pizza. It was the perfect balance between volume and thickness. The dough was GREAT! Much stretchier than our homemade dough. I topped the pizza with tomato paste, zucchini, green pepper, spinach, oregano and reduced-fat Mexican blend cheese.
I baked the pizza for about 5 minutes first to get the crust crisp and put my zucchini in with it to take the “raw” out of ’em.
The big pizza came out to about 400 kcal, which I thought was great considering the amount I got!
I also had some greek yogurt with jam and flax
And a meringue for dessert! I have two words to describe these: Lucky Charms.
This lunch was about 540 kcal, 12 grams fiber and 34 grams protein.
I can’t believe it’s 4:00 and I’m just now posting lunch! The husband is busy making crackers and I am enjoying my relaxing Saturday! I have another movie to watch (Tara Road) so I might make that next on my list. For dinner we’re planning to go out and get small plates somewhere. Just appetizers and salads – something smallish but fun to make up for this rainy weather!

Glad those pancakes work so well for ya! TJ’s pizza dough is awesome and only $1! Excellent looking pizza, I actually have some dough in the freezer, I really need to make it.
What I love to put on pizza is fat free ricotta, fat free cheddar (pre-shredded from Kraft), red onions, mushrooms, peppers and BBQ chicken, which is just canned white chicken mixed with hot sauce. Delicious!

I have to try whole wheat pizza dough the next time we make homemade pizza, which probably won’t be for a while since we just ordered pizza last night..Sounds like a scrumptious combo 😛

Love the Poland Spring Raspberry-Lime water. I don’t buy it often, but it is my favorite drink.
I like using a mandoline to make super thin slices of zucchini, yellow squash, and eggplant to layer over sauce on homemade pizza, topped with a little bit of fresh mozzarella.

Wow – amazing you felt full for so long! The happens to me sometimes and I am glad, but a part of me also feels paranoid that somehow my last meal was way more calories than I thought 😛 Do you ever get that concern? I wish there was some way to know for sure for sure, haha.

That pizza looks so good. I always have a hard time stretching the crust out, whether I make it or buy the dough. And it rarely comes out as a circle. What was the brand?

Kath – this is in regard to a a few posts ago, but be sure to check out Home Depot’s patio sets – hubby and I recently bought one (large table + 6 chairs) and have already gotten lots of compliments on it! It is high quality and while def. not cheap, it was reasonable compared to a lot of places we looked. We then ended up buying the umbrella and stand at Costco after comparison shopping and they are REALLY nice, esp. for the $!

I used the whole wheat pizza from Trader Joe’s once but my picky family hated it. So now I make my own that is half whole wheat half bread flour. I was okay with 100% whole wheat but sometimes you have to compromise when you cook for others too! 🙂

ooh, i was just thinking about trying TJ’s pizza dough. i bought some from whole foods and didn’t do any kneading of the dough before rolling it out — our pizza puffed up like a giant mutant version of a pizza — oops. i love the idea of making multiple smaller pizzas — i will definitely try that!
did you knead the dough or do any pre-treatment of it to keep it in shape? and how long / hot did you bake it total? just looking for tips to not end up with a mutant next time!!
ps: i love either spinach/ricotta/sundried tomato/pine nuts, or mushrooms, gouda, and caramelized onions on pizza – but i know the onions wouldn’t fly in your house!

I love cottage cheese pancakes. They are really yummy and alway hold me for ages. I’ve been known to make a crepe type dessert out of the leftover batter with some nice sliced strawberries and honey.

On a sidenote…Is that Raspberry-Lime Seltzer? I tried that flavor for the first time yesterday and it is DEFINITELY my new favorite.

I try not to go to TJ on the weekend. All the items I go to buy are sold out and plus the lines are horrible.
I wish there was a vegan version of your magical pancakes, i’m usually go 7 am to 1 pm and not by choice. I’m usually hungry by 12 pm.

I love trader joes so much. they make meals faster and healthier- it’s a double bonus. Last time I was there I got pizza dough too but one with herbs in it… I didn’t make pizza, they made great bread sticks!

respectfully, is it wise to go for 7 hours and not eat. is that a healthy, balanced life-style choice. I thought, from reading other blogs etc, that it’s best to have balanced meals more frequently. thank you for all you do/this nice blog.

Curious, (this is just my opinion) I think it’s much more wise to listen to our bodies and eat when we’re hungry…not when the clock says it’s time too.

Trader Joe’s brand – I said it in the post. The package says to let it warm up to get it to stretch. We let it sit on the counter for a while.

I didn’t do any kneading – just worked it into a circle. Then let it sit for about 10 minutes. Then worked it more to stretch it out. Then baked at 350* for 5 minutes, added toppings and baked for 5 minutes more. The inner crust was still a little doughy, but the outside was perfect. Perhaps a little longer without the toppings to fix that?

Good question. I do think 7 hours was a very long time, but I honestly felt full for a large portion of that and didn’t start to get hungry until the last hour. I think what’s most important is to listen to your body. I wasn’t hungry, so my body didn’t seem to be signaling that it needed fuel/glucose. The morning combo provided a steady stream. I think eating the 5-6 mini-meals is a huge trend right now and it’s not for me. I don’t like having to think about food every 2-3 hours and having to plan snacks in such small portions, so I like having bigger meals that keep me full a long time. That’s something I never would have predicted I would like (I used to eat 6 times a day) but I really benefit from it.

Yes, the movie was based on the book. I’ve read Circle of Friends and someone recommend this to me. I cheated when I saw the movie 🙂 If you liked the book, I bet you’ll like the movie.

While your water isn’t unhealthy, it does have artificial sweeteners in it (aspartame). I wouldn’t make this your primary hydration, but if you don’t mind having artificial sweeteners, then there’s nothing wrong with this water. I drink flavored waters and diet sodas like this on occasion (today’s lunch!), but I avoid having them as a daily staple.
