Lunch today was easy to pack…. and I’m sure it will be fun to eat!
No, it’s not dog food. It’s leftover sweet potato lentils!
Served with a handful of CINNAMON Food Should Taste Good chips!! I had a couple of these while I packed my lunch. They’re light and airy and are a perfect hybrid between a corn chip and a graham cracker. <3
I’m hoping to use them to scoop up my lentils!
Lastly, a family of strawberries 🙂
And for dessert, nothing goes better than chocolate and mint! (Except cheddar + jam!)
Tonight I am accompanying my dear husband to the Charlotte Homebrew Club monthly meeting! Since the meeting is at a restaurant right near my hospital, and the uptown YMCA is on the same block, my plan is to head to the gym from 4:30-6 and get in a workout, shower and then meet Matt and Diana + Dan at the restaurant for a quick dinner before the meeting.
To get myself ready for the workout part, I plan to eat this when I leave work!
Love the Fruition bars!! They are packed with chia seeds.
Happy Hump Day to you!
Samantha @ Food Edu says
I too am loving strawberry season! Never heard of the Fruitition bars–where might I find them?
Freya @ Brit Chick Runs says

Homebrewing sounds like so much fun, although I would probably only brew ciders since I’m not a big beer fan. Isn’t it wonderful that more fruit is coming into season? I can’t wait for summer to arrive!
Beth @ Beth's Journey to Thin says
That event sounds so fun tonight! Great that its so convenient to work and the gym!

Your pictures in the mint are so pretty!
What are some things you do with your mint? I’m gardening this week, and so far, I have chives and dill in my herb box. Your pix make me want to add some mint, but I’m not sure I would use it. 🙂
Kath says
Mostly make mint juleps 🙂
And put it on peas and lamb.
brandi says
Sounds like a fun night!
I haven’t seen the cinnamon flavor of the chips! Yum. They sound great. We LOVE the multigrain, olive, and sweet potato ones, but that’s all they carry here.

Lentils are my “go-to” food. They’re so easy to prepare and taste good with just about anything. 😀
Have fun tonight! 😀

Ha, “No, it’s not dog food” That cracked me up! It does look a bit like dog food, but i find that a lot of delicious foods look a lot grosser than they taste. (Indian, for example!)
Whitney says
oooo dark chocolate is my favorite right now! Such a healthy and indulgent dessert! Enjoy your workout! 🙂
polwig says
Looks like a great lunch. Lentils sound amazing. The nutty flavor of lentils with sweet potatoes and cinammon. Defiantely worth a try honestly it does remind me of some of the baby food I used to make my kids about a year ago. Everyone in the family would eat it though.
jen trinque @ recipes for creativity says
I can’t get over how beautiful those strawberries are! Our farmer’s market starts up next weekend, so I hope to get something as fresh and delicious looking as what you have.

It seems like everyone I read has been eating chia seeds lately. I must have missed something. I remember when flaxseed was all anyone talked about, now it is chia seeds! I’ll have to look into them, there must be some reason everyone likes them!
