Birch isn’t the only one playing this game!
Spring is around the corner. Last week we had two days above 60 degrees that were GLORIOUS!
I think we can all admit this was one of the harshest winters on record – because the combo of the pandemic, gray cloudy days, canceled school and snow has been a lot at once! That one warm, sunny spring-like day boosted my mood so much!
It was so lovely out, we walked downtown and grabbed a beer outside at Champion.
Entire buildings have been built since the last time I was downtown. Crazytown!
Summery Popsicles
We also pretended it was summer and made smoothie popsicles : ) These are my favorite homemade pop holders because there is no wrestling the pop out of a mold and no drips on the floor! The lids are great during the freezing process, and they go right in the dishwasher.

Brunch Bowls from Mahana Fresh
Mahana Fresh treated us to brunch to try out their new bowls. Here’s what we shared:
- Mahalo Morning – cauliflower rice, spinach, scrambled eggs, citrus ginger sauce, sriracha drizzle?
- Hang Ten Scramble – coconut rice, sautéed peppers and onions, roasted sweet potato, steak, scrambled eggs, avocado smash, creamy wasabi sauce (SO GOOD!)?
- Shaka Sunrise – basmati rice, roasted mushrooms, Mediterranean tomatoes, scrambled eggs, avocado smash, fresh cilantro, cilantro vinaigrette?
I was all over those sauces!!
Egg Salad, “Chips” and Saltines
Tastefully Simple Si Si Cilantro Dip
I did a giveaway with Tastefully Simple on Instagram and made this dip to showcase their Si Si Cilantro Seasoning.
The simple recipe: 1/2 cup Greek yogurt, 1/4 cup sour cream, 1/4 cup mayo, lots of fresh lime zest, and 2 tablespoons of Si Si Cilantro. It’s got a little heat from jalapeños.
Homemade Chili
We made chili with another Tastefully Simple spice the next night and ate it all week!
Blue Apron Panko Curry Chicken
I am all over the Blue Apron panko recipes! We’ve tried three lately and they all have been big winners.
One reason why I love Blue Apron is that I would not put meals like this on my meal plan otherwise. Call it lack of creativity or just the default to simplicity. My meal plan stays jazzed and I don’t even have to think about it.
PS. That is coconut rice!!

I’ve lived with n Charlottesville for 20 years and this isn’t even close to the harshest winter. Remember 2014? It was constant snow storms until late March.
