I’ve got a lot on my mind right now and didn’t sleep all that well. I was wide awake at 6:30.
I managed to sort through my thoughts and found a craving for french toast deep in there!
On Great Harvest Apple Walnut Bread!
1 egg + cinnamon + vanilla + 1 tbsp milk
+ bread soaked for 2 minutes per side
+ coconut
+ a hot skillet
This was the best french toast I’ve made in ages and I think it was because the skillet was nice and hot when I plopped it on. It got crispy on the outside but was still chewy-dough-wet on the inside. So delish!
Topped with banana, coconut and Barney Butter
A cuppa tea. Yogi Tahitian Vanilla.
"Our intuition lies in our innocence"
Can’t get over my jasmine bloom everytime I go out there!
One of the most calming activities for me is cleaning. I’m going to tackle the floors and laundry. Then perhaps head to the gym in a while for a swim.
runnerforever says
Yum, I think french toast is a comfort food. For some reason cleaning is really soothing for me too. I think it is because then I feel like everything is where it belongs even if my life is totally scattered.
Freya @ Brit Chick Runs says
Oh I’m sorry you slept badly 🙁 at least your calming activity is productive!! Have a great day 🙂

Ugh…I hate bad nights of sleep!! The good news is that you’ll probably wake up super refreshed tomorrow. And I’ll bet staying active with cleaning and a swim will waken you right up too. 😀
Your French toast looks absolutely perfect! 😀

Your breakfast looks delicious and I am so jealous of the cup of tea! I love Yogi tea and I am all out. I am thinking about you and hope you have a good day!

I love how the bananas are sprawled all across the plate – it looks so… relaxed, somehow! Which is funny, given that you were feeling a bit anxious. Hope the cleaning helps, and you feel more at peace soon!

I have to say that french toast looks really amazing. I love having french toast with a little Udi’s granola on top. For whatever reason, it really hits the spot.

The other night I had a dream I found Great Harvest bread; this proves I spend too much time blogging.

Sorry you have so much on your mind…I hope the delicious French Toast helped!

Said a prayer for you, Kath.
Cleaning helps calm me, too. I had an interview yesterday, but it wasn’t until 3:30 pm. I was starting to drive myself crazy with anticipation, so I did some cleaning to get rid of nervous energy – did the trick! (I would have worked out, too, but it was a rest day.)
That Apple Walnut bread looks dangerous! (As in, I’d have trouble not eating the whole loaf.) 😉
Michelle @ Give Me the Almond Butter says
That is really impressive french toast 🙂 Cleaning really calms me too. I just like how it gives me something to do and when it’s done I suddenly feel at peace.
Jessica @ The Process of Healing says

K, I sure hope your day goes well after the bad nights sleep. I’m SO bothered how so many people were so nasty to you last night. I hope it all just rolls off your back! Too bad your grandma didn’t got to see that bruise:) Best wishes! XO

Annie@stronghealthyfit says
Looks like a delicious breakfast.
Do you keep a journal? Other than your blog? 😉 That helps me to calm my mind and sort out my thoughts, but cleaning might do the same thing for you!
Kath says
I’ve never been a journaler – but this blog sure does help!
Allie (Live Laugh Eat) says
I wish I were the same way. Cleaning=stress and anxiety for me! Hope your mind starts to chill out.
Laura says
…and candles? They often help calm me. I used to go to a local cathedral (St. Paul’s) after my Grandmother passed away back in the days when I lived in London- I found great peace there, although I am an atheist through and through.. Your jasmine looks lovely, as does the rest of your garden- you obviously have green fingers! Silly question but do you get bluebells in the U.S.? Have peaceful day with people who really appreciate you 🙂
Kath says
Matt’s got the green thumb! I just look at it 🙂 I don’t know if we have bluebells!?
Wei-Wei says
Beautiful breakfast! I hope it made you feel better. Do some yoga! 🙂 Don’t stress too much. 😀

I don’t know how you count your laps, but I have to keep my numbers in my head the entire time to keep track so swimming helps me to meditate more than any other activity I’ve found. Hope it helps you get some piece of mind!

I’m another person that finds cleaning to be calming. A house that sparkles makes everything else seem less chaotic for sure. Enjoy your day fueled by that yummy French toast!

I find that swimming always helps me clear my head. Something about the repetitive motion – it’s just me and the water, no distractions. Anyway, hope it does the same for you today!
