Hey there gawgeous!
Karen gave us some flowers!
I made smoothies for breakfast!
And while it looks like I went CRA-RAZY with the peanut butter, that is actually a peanut flour sauce I made with my last little bit of peanut flour!
Berry Smoothies
Serves TWO
- 1 banana
- 1/3 cup raw oats
- 2 tbsp chia seeds
- 1.5 cups milk
- 3/4 cup yogurt
- 1 cup frozen berries
KERF Toppings:
- Cooked wheatberries
- Toasted buckwheat groats
- Peanut flour sauce (2 tbsp PF, 2-3 tbsp milk, 1 tsp maple, 2 pinches salt)
Peppermint –
Going on a walk. Then going to eat some oysters at Devil’s Backbone Brewery! Hoping the clouds blow through and our high of 77* comes FAST!
J3nn (Jenn's Menu and Lifestyle Blog) says
So pretty!! That smoothie looks delicious.
It’s cold and rainy here. Hope your 77 degrees comes soon! 🙂 Enjoy the day, Kath!
Natalia - a side of simple says
Loving the pretty purple pastels for Easter 🙂 So pretty, especially since its a gloomy, rainy day here. Hopefully we get a few rays of sun for tomorrow!
Freya (Brit Chick Runs) says
I loove the colours at the start of this post 🙂 Beautiful!

Stacy @ Every Little Thing says
Pretty flowers! I miss the sun haha. It’s rained here for days and won’t stop til Wednesday. We had massive tornadoes here last night and there’s a lot of destruction actually, around St. Louis. The airport is closed indefinitely. Happy spring?
KathEats says
Oh no…hope everything is oK 🙁
Emily says
This post put me in a very spring-y mood which is hard to get in currently with the gloomy weather I’ve been having so thanks for the boost! And I just discovered peanut flour…amazing stuff isn’t it? I can’t believe it took me so long
Emily @ One Sweet Vegan says

McKayla (green groats) says
Love the colors! Do you use maple extract or maple syrup in your peanut butter sauce? It looks so good!!
KathEats says
Syrup!
Holly says
Hi Kath! I love your blog and always want to make peanut flour sauce, but when I went to Trader Joe’s last, they had already discontinued it! 🙁 The guy suggested almond flour instead, do you think I could make it the same way?
L.G. says
I was wondering the same thing. Where can you get peanut flour now that TJs doesn’t carry it?
KathEats says
Mine is leftover – I don’t use it much. I don’t think almond flour would work quite as well…but maybe!?
Sonia says
I’ve ordered pb2 from www.bell plantation.com. I have never had the pb flour from trader joe’s but think it’s about the same thing.
Kate (What Kate is Cooking) says
Yum, I love peanut flour 🙂 I have it at least once a day!
Chelsea says
Love all the spring colors! I feel like spring will never bloom here in Montana 🙁 I might have to rush out today and pick up some flowers to brighten my day!

Hey Kath! My family’s spending the weekend in Wintergreen (close to Cville) and are thinking about having an Easter brunch in Charlottesville on our way back to DC. Any suggestions?
KathEats says
I’m not really sure what is open or closed on Sunday restaurant-wise, but you could start on my Cville page and see if any of those places (they are all good!) have specials?
Susan (Oliepants) says
What a pretty breakfast and a setting! I love the vase!!
Caitlyn (The Spoonful of Life) says
It looks just like spring! I love the pastel colors.
Camille says
So many pretty Spring colors 🙂
I am jealous of your 77! Oregon is supposed to get mid-60s today and I swear it is the most exciting thing ever 🙂

I think your SIAB looks prettier than the flowers. Just sayin’. 😉
Khushboo says
Loving the shades of pink and purple- just screams spring!
Kay @ ditch lazy; get crazy! says
The vase! It is awesome!
Aimee says
Sort of confused by your pb comment. Seems to suggest those of us who eat the full two tablespoon serving are crazy. Intentional?
KathEats says
For me, two to three tablespoons is “going crazy.” My caloric needs are not that high!
But if yours are, then that sounds like a great way to enjoy PB
Ally (Girl V Food) says
One of the reasons I love PB flour…you can dump a whole ton on oatmeal/smoothies LOL
Lauren says
gorgeous flowers and colors… it’s raining here!!! boo 🙁
lynn @ the actor's diet says

Chelsea @ One Healthy Munchkin says
Gorgeous flowers!
I get so confused every time you mention the temperature because we tend to use celsius here. I’m guessing 77 is nice though, so enjoy the good weather! 😀
Angel7 says
I am not a big fan of carnations, but I love the shade of pink they are.
I need to find some chia seeds. I have never tried them before.
I wish we were going to have weather in the 70’s, but it will come soon enough.

Kath, I have been looking everywhere for peanut flour and remembered that you mentioned in a post a sauce you made with it. Where did you find it???! Also, do you think a similar sauce could be made with coconut flour?
KathEats says
Trader Joe’s – but they no longer make it.
