I think I’ve given up on these Cheese Danish Pancakes. They turned out perfect here and on the recipe page. I’m not sure why they don’t work for me anymore, but I have been using real egg white instead of from a carton, so perhaps that’s the difference. I’ve turned them into soup twice before! This recipe is so sensitive that a single ingredient change can screw them up. I’m not trying it again!
But the batter is delicious and does make a wonderful oatmeal.
In my bowl:
- 1/2 of 3/4 a cup of oats
- 1/2 of 3/4 a cup of cottage cheese
- 1/8 cup milk
- 1/8 cup egg whites
- 1/3 cup water (added during soup conversion)
- Vanilla
- 1/2 small banana
- 1/2 cup mixed berries
- Tbsp flax
- Spoonful Naturally More (I think it’s time for another jar bowl!)

I tried making the cheese danish pancakes once and got the same result. They never solidified and were just a soupy mess. I left them on the grill forever hoping they would come together and then they just burnt and stuck to the pan. Maybe they need some baking powder? I used real egg whites when I made them and I know you used the one from the bottle, maybe that was the difference?

Oh you said that in the entry, sorry I didn’t read it carefully enough. So yeah it must be the egg whites then. I am going to try again using the one from the carton. I wonder why it makes such a huge difference.

Hey Kath, have you ever tried adding more egg whites to the recipe? I make a similar batter with 1/2 cup rolled oats, 1/2 cup cottage cheese, 1/2 cup egg whites and 1/8 tsp baking powder (blended) and they hold up just like a pancake. Sometimes I add a little additional liquid if i feel like having them really flat and crispy. You should try it out! 🙂

Aw i’m sorry they didn’t work out! When I first started making them they never worked out but then started blending all the ingredients in the food processor and they come out perfect everytime!

I have a question for everyone about weight-bearing exercises vs. isometric/ body weight exercises. Are the latter a waste of time? Should I be doing both?
For instance…are weighted lunges and squats just more effective (in the sense that results are quicker) than things like leg lifts and scissor kicks?

Do you keep your naturaly more in the fridge? I don’t, and mine is a lot runnier than yours. Maybe I should keep it cold? I just hate hard PB tearing bread though.

In spite of the failures you’ve experience I’m really wanting to give these a try. I am a huge fan of the Oatmeal Pancakes (and pancakes in general), which I’ve been making with banana lately rather than pumpkin. Great way to use those over-ripe bananas that I would never eat.
I am just using a whole egg in the recipe. Where do you find the egg whites in a carton? I’ve only looked in the supermarket, so I might just not be looking in the right place.

Hey Kath-
I make these, but I never add milk. This recipe, which is good for 2 people (makes about 7 pancakes), works for me every time:
1/4 cup oatmeal
1/4 cup egg whites (carton is fine)
1/4 cup cottage cheese
cinnamon, nutmeg to flavor
Blend ingredients in blender. They won’t be perfectly smooth due to the oats.
I love them with jelly. Even my husband eats them!

Hi! Long time reader – 1st time poster – but I just had to chime in about the pancakes. I’ve been making a variation on these for the longest time and I LOVE them – they always turn out great and the only real difference between my recipe and yours is that I never put in any milk. I do think the added liquid would make them too soupy. Just a thought – and as everyone else probably mentions – I LOVE YOUR BLOG and you and your hubby are too cute for words!

I’m not a physiologist, so I don’t really know, but I wouldn’t think any exercise is a waste of time. But I think to truly gain muscle and strength you want to use heavier weights over time.

The problem is cutting back way too much on the egg whites from the original recipe. There’s nothing else in there to hold this stuff together. Some recipes, especially baked goods, can’t be played with, especially the main ingredients.

I’ve made these pancakes before from your recipe but I modify it for one person. I always use 1 real egg white in the recipe. I just mix the batter by hand. I have made it with the milk and w/o (by accident). I added baking powder: my recipe for 1
• ¼ cup oats
• ¼ cup lowfat cottage cheese
• 1 egg white
• 2 Tbsp skim milk
• 1 tsp vanilla extract
• ¼ tsp baking powder
• ½ small banana pureed in batter
• ½ small banana, sliced.
I think the key is to cook them on a pretty low heat and be patient so they cook for a long time (like long)
