Good morning! As I am writing this post there is a man banging things around in my attic. The gas furnace leaked into the office, and while the leak was not a bad one, I am kind of scared to know what this is going to cost to fix. He has been up there a while!
My latest breakfast obsession is a cross between chia pudding and overnight oats. Are you even surprised?! Basically I make classic yogurt/milk/oat overnight oats and add a bunch of extra chia seeds and a little extra milk. The result is a thick oaty yogurty breakfast with a pudding-like texture.
Some of you are excited. Some of you are probably rolling your eyes at that description. But if you’re a texture person like I am, you’ll love this!
Peanut butter and banana on top keep it simple while adding fruit and flavor. Those of you with more of a sweet tooth might want to add a little maple syrup or a honey drizzle.
It’s not a brand new smashing recipe, but it’s a solid one!!
Overnight Everything
Ingredients
- 1/3 cup rolled oats
- 1/3 cup plain Greek yogurt
- 2/3 cup milk
- 2-3 tbsp chia seeds
- Pinch kosher salt
- Sprinkle cinnamon
- Splash vanilla extract
Instructions
- Mix everything together in a jar or bowl.
- Set in fridge and chill overnight, or for 2-3 hours.
- Get carried away with toppings and enjoy chilled.

Matt doesn’t like the texture of overnight oats. He says they are too doughy. No such thing! I just had overnight oats in a nearly empty local honey jar this morning. 🙂 I’ll add chia seeds to my next one!

This is exactly what I have been eating for the last 6+ months! I love it even more doughy so I cook the oats & chai seeds (in water) then once its cool I add the yogurt and put in the fridge overnight..yumm! (I usually make a big batch for 3-4 days ‘cuz im kinda lazy!)
