Morning! Hope you have a sunny Saturday ahead of you. We are off to a slow start – I have a little cold and woke up at 6am wide awake yet still tired. I watched an episode of Survivor Australia in bed and finally came down for a big french press of coffee.

Mazen and I celebrated a slow Saturday morning with banana pancakes! I missed making breakfast while we were on our trip.
Simple with salted butter –
Rewinding to yesterday, we did stuff around the house all morning and went for a walk to the park before lunch.
I heated up leftover quiche for lunch and had that with grilled asparagus, carrots and red peppers served with Cava hummus.
I worked on a recipe in the afternoon and had one of the bites for a snack!
As much as I wanted to go to my first Fridays After Five of the season, we opted to go to ACAC’s social hour instead. The theme: Open Barre!
I ran there with the stroller and then we started the workout with a 2 mile run. I thought it was going to be a chill group jog, but it ended up being a race of sorts! I started off slow and sped up and up ending the 2 miles in 16:22. Matt apparently won the race at 12 minutes something!
Afterwards we headed to the roof deck for a barre class led by my ray-of-sunshine friend Lauren! After some pliés and leg lifts, we spent the last bit of the evening eating Great Harvest sandwiches (I had 2 pimento cheese quarters!) and sipping wine.
And the final happy surprise: Sweethaus mini cupcakes!! I opted for the cookie dough – the best!

Did you use blackened bananas to make your pancakes or regular yellow? I ask because usually in baking the bakened ones are sweeter and better.

Pancakes and pimento cheese sandwiches both sound so good to me right now! I wish that Colorado would get on board with pimento cheese. Oh–if you’re ever in Philly, you must eat at the Fat Ham. It’s like “upscale” Southern dining but it had the most incredible food. I don’t eat meat so I had some of their veggie options which included the best pimento cheese I’ve ever had, the best cornbread and molasses butter, amazing mac and cheese, and this awesome fudge pie thing for dessert. I will admit the fried chicken and ribs smelled delicious too…
