Am I allowed to say YUM-O!?!? This bowl of noodles was so delicious. It has been ages since I have had regular pasta, but we were given a package of angel hair as a gift and considering the fact that I’ve had 47 grams of fiber today, I didn’t think the extra boost of fiber from whole wheat would be missed
I prepared Eat, Drink & Be Vegan’s Peanut Passion Sauce to go on top. It was great! Think peanut butter, lime, cilantro, Asian flavors, all thinned with hemp milk.
On the side I sauteed trumpet mushrooms and snap peas and topped the bowl with 1/2 an ounce of raw cashews!
Now that’s a bowl of pasta! This is one serving (2 oz dry) – angel hair goes a long way!
The angel hair was the perfect texture. Would have been great with soba noodles too!
This noodley bowl was about 450 kcal, 6 grams fiber and 18 grams protein. The peanut sauce contributed 100 kcal and the cashews about 80, so you could ease up on both of those to lighten the dish.
My fiberific lunch kept hunger at bay all afternoon until about 5:30 when I snacked on a little trail mix to tide my hunger. I didn’t want anything more, but nothing takes away hunger quietly in the background better than nuts 🙂
I accomplished a lot today, but I still have TONS to memorize before I’m ready for this test. See you guys in the AM!

Oh wow, angel hair is my absolute fave! I’m drooling even as I sit here eating my own dinner 😛 That sauce sounds delicious too, I wish I could find that cookbook around here (I don’t order online)

That dinner looks amazing! I had chocolate chips for dinner and my mid afternoon snack. UGH! Pretty disgusting. I had been doing really well with healthy meals for a few weeks and then the past few days have been BAD! Not sure what happened:( Hope to get back on track tomorrow!

i was wondering if you have ever tried tofu shirataki noodles? as a volume eater, i think you might enjoy them since you get a lot of “bang for your (caloric) buck.” (although admittedly, regular pasta is a bit cheaper — these sell for about $1.50/package). the texture is a bit different, but personally, i like it.
i live in chicago, so i’m not sure about availability in your part of the country– i buy a brand called “house foods tofu shirataki” which is found in the refrigerated tofu section of my local grocery store. i’ve also seen it at wild oats/whole foods, although i don’t know whether the product is carried in mid-atlantic/southern state stores.
i continue to enjoy reading the blog with all the innovative recipes and helpful nutrition&exercise advice!

When you do the treadmill – what is your speed and incline? How about the elliptical? It seems like you usually do between 30 min – 45 min?
I know everyone is on a different level – but I am just curious to see what you do to maintain your weight (I am trying to lose a few pounds).
By the way, I just received my Crate and Barrel order today – I ordered those adorable porcelain spoons you have (in white and blue) after seeing them on your blog. Unfortunately, they’re too tiny – I wanted to use them to eat my cereal in the morning. Ah well! I’ll find a use for them – they’re just too cute!

Have you had Gado Gado? If not you must, it’s amazing. I like the Moosewood version as it doesn’t have coconut milk (which I dislike), but you might like it with that!

I have read all about the shirataki noodles and actually bought a package once only to find out they were past the expiration date so I had to throw them away. I have yet to buy another bag! I have to admit that I’m almost 100% sure I’d prefer spaghetti squash so I haven’t really thought to try them again…but someday!

I’d say on average is takes me/us 30-45 minutes to cook and 20-30 minutes to eat. Another 15 to clean up. This dinner came together in a flash – probably only took me 20 minutes. And it always helps when you can clean while dinner is cooking.

I don’t really run on the treadmill much, but on the ET I usually do incline 8-10 and resistance 13-14 for 30-45 minutes. On the stairmaster I do level 12 for 30 minutes.
The spoons are best for smoothe things like yogurt and pumpkin – they don’t “scoop” well. I bet you could find more scoopable ones though!
