The first spring in a new house is always fun – you never know what is going to pop up where!
I worked while Matt had tons of appointments this morning. I can tell the bakery to-do list is growing exponentially! [I just realized when I spelled it wrong that I say that word “Expo-den-tially” D’oh!]
But I waited for him to get home so we could run together. We often have business meetings on runs! It makes for a good time to catch up on details, but it also means we’re out of breath much faster. I nearly died on a hill today and had to stop and walk I was so out of breath. But then I realized it was because not only were were talking a lot, but we were also running fast. WITH the walking we still managed to keep that mile at 8:59. We did 4 miles in 35 minutes – not bad for this out-of-shaper!
For lunch I just HAD to repeat that killer burger from earlier this week. These Mole burgers were supposed to be a slight fail but I will now be making them again! With the avocado and coconut and the almost-gooey texture, this is the best burger I have ever had. It would even work for breakfast if you could stomach the thought of refried black beans in there!
But clearly the coconut makes the sandwich!
On the side:
Salad with honey, lavender salt, blue cheese, red pepper
And crinkle Terra chips (need to get more of those too!!!)
Faaaaaabulous lunch!!
We have a conference call in 6 minutes…then who knows what else needs to be done.
Valerie @ City|Life|Eats says
That sandwich looks fabulous!
Freya (Brit Chick Runs) says
Awesome run – I find it sooo hard to talk and run, it does make you tired 10 x faster! Maybe that or I’m just way out of practice – I’m a Lone Runner …
sweeter salt says
love me a bean burger! not sure about the coconut, but i would certainly give it a try 🙂

Christine says
Wow, 4 in 35 and you think you’re an “out-of-shaper?” Yikes!
KathEats says
Compared to how I used to be, yes. And it was really hard.
Christine says
But still good!
Susan (Oliepants) says
You always make the most delicious salads! So happy for you two and the business! Busy now will be totally worth it in the near future! 🙂
Stacey (The Home-Cooked Vegan) says
I love sweet potato chips! They are sinfully delicious 🙂 Glad you had a good run! Last week I ran that same mileage in 35 minutes too, except I was speed training, haha 😀 Maybe if I keep it up, I can run that fast without trying that hard!
britt will be fit says
the lunch looks really good
Averie (LoveVeggiesAndYoga) says
The fact that it’s the best burger you’ve EVER had??! THAT is a big sentence. I need to make them if that’s the case!
The cleaning post, a Misto. Also that you’ll never go back to cooking spray makes me wanna pick up a Misto. I will use a handy BB&Beyond 20% off coupon (they never expire so I save my stash from the mail when they send them) and pick one up!
Allison @ Happy Tales says
I am SO impressed that y’all can have “business meetings” while out on a run. I’m always that girl with a pad of paper and pen in hands, taking notes on everything! I’d have to bring along some form of portable notebook for the meeting to be even close to effective for me 🙂
Holly @ Couch Potato Athlete says
Even when I was in good running shape I couldn’t do 4 in 35! Well, I probably COULD I just didn’t push it enough.
Cindy says
I appreciate seeing you repeat meals sometimes too. Sometimes I get so excited about a food I have it for several meals before I move on to something else. I’m totally on a pesto kick right now!

How creative of you to put avocado and coconut in a sandwich! Must try that- I never use coconut in savory way, other than coconut milk, so i’m sure this combo tastes awesome! Enjoy your day 🙂

What a delicious lunch! I love avocado in a sandwich! Avocado makes everything taste amazing. 🙂 I really like those Terra Sweet Potato chips! I just tried them for the first time yesterday at my mom’s house and I have been craving them ever since! So good.

Christie {Nourishing Eats} says
I actually really like bean burgers topped with a sunny side up egg for breakfast 😀
Laura @ Sprint 2 the Table says
After reading about your burgers, I had to make my own last night. Mine was a more spiced version using panko and topped with a fried egg (definitely b’fast worthy, sans the glass ‘o wine:) ). http://bit.ly/ewR775
Next time I’m all over the mole version!
Jennifer says
Tried the burger this weekend, it was soo good!
It looks like you guys balance being married and owning a business together so well. Any tips would be appreciated on your work/life balance!

Wow, it seriously looks so bright where you live! It seems as if it would still be snowing like crazy and all. Seems so exciting for you and matt to have such an incredible opportunity! For reals, everyday is another one to be thankful for something huh? Even the ability to breathe 😀
Emma (Namaste Everyday) says
how do you buys your coconut? already shredded? how do you store it? I love coconut but rarely use it due to those questions. thanks!
KathEats says
I just buy the sweetened flake kind used for baking in most grocery stores. I don’t use much of it, so I don’t care that it’s sweetened.
J3nn (Jenn's Menu and Lifestyle Blog) says
I want to try Terra chips, never had them before! They look delish. As does the rest of your lunch. 🙂

Alaina says
Fabulous meal indeed! That burger looks gooood. 🙂
Kelsey @ Clean Teen Kelsey says
I will need to make those bean burgers! Just curious, what took them from so-so the other day to the best bean burgers you’ve ever had?? Was it pretty much just the avocado and coconut?
KathEats says
Well they were really hard to make! Actually the first round I did I didn’t add the flour. The second round I did, which is the recipe I posted. So I nearly lost them! I think I might recommend baking them next time since they were so sticky. But once shaped and cooked to form, they tasted amazing.
JenATX says
girl I could have refried black beans @ every meal. in fact, i mix ’em into my scrambled eggs sometimes.. mmmm
Katherine says
Wow, I absolutely love mole sauce! How did you make that burger? It looks fantastic!
KathEats says

That killer burger does look killer, Kath and amazing….wow! I seriously want a bite right now…hehe…beautiful, clear photos and a lovely Spring post.
Beautiful!
Kristi (Hiding in Honduras) says
LOL at the thought of “stomaching” refried beans for breakfast….when we first arrived in Honduras we could hardly stand it. Now we think of beans as a totally natural partner to eggs..breakfast, lunch or dinner…or all three sometimes if we are staying with locals!
