I really can’t believe how many animals we have lived with…
In the two houses we’ve lived in while I’ve been blogging, we’ve experienced:
Zucchini-eating deer
Cicada killer wasps [ <— those of you who left comments, that’s exactly what he is!!!]
Foxy the Fox
And 1,000,000 bugs.
[Awww look at these photos of our Charlotte house I just found!]
Maybe we just need to get a pet!!
Hilarious Tig was outside perched on the porch for a while – all I could see was his tailless bum!
I went to cycle this morning – and totally could have cycled there! The rain held off. But I drove instead. It was a great class (she played “You And I” <– my favorite song!!) and Sara, my new friend who is moving into our house, was there for some excitement!)
Lunch today was nice and easy – and totally flavorful!
I sautéed some leftover zucchini and tomatoes along with tempeh and red pepper in a skillet and then added some Dr. Pete’s Praline Mustard Glaze and bleu d’auvergne.
Unbelievably delicious!! The Dr. Pete’s gave it all a slight toffee flavor that went perfectly with the blue cheese.
A bed of spinach on the bottom –
Plus a hunk of Dakota on the side
With some vanilla almond butter
Tea has more flavor than water
Have a great afternoon!! Just saw the sun for 60 seconds!
Allie@LiveLaughEat says
You’ve got a KERF zoo over there! I wonder if you’ll have as many visitors at your new place.
Alyse says
I’m sure Tig will miss you.
I hope your new house doesn’t have so many camel crickets.
Ashley @ Coffee Cake and Cardio says
Y’all should start charging to have people come a visit your zoo animals 🙂
I’m happy a sandwich like your salad tonight for dinner…. yummy!
Johanna B says
I’ll send you my sun if you’ll send me your rain.
Brittany @ Itty Bits of Balance says
You should get a pet! I vote that you & Matt adopt a cat of your own 😀
KathEats says
Matt is extremely allergic to cats!!!!!
Dogs too although he won’t admit it because his symptoms are milder.
So pets…probably not.
Kristin @ STUFT Mama says
All your animals make me smile! 🙂 Love that salad too. I just bought tempeh for the first time last week and don’t know what to do with it. Your salad came at just the right time! I may have to copy you for lunch. Now if I only had that bread and vanilla almond butter………. 🙂
Laura @ Backstage Balance says
You’ve gotta love all of those animals who graced you with their presence. This spring / summer at our house, a family of bunnies has grown up alongside our puppy, meaning that each and every morning they are chased from their hiding spots and into neighboring yards / bushes. We also have a bird that sounds like a dying cat, a lone chipmunk, and two squirrels who have taken to hiding nuts in my flower pots on the front porch!
Cathy says
I went to WF to get coconut oil. Kath which one do you use? You mention putting in your salad and oatmeal both, right? I saw 365 Organic Unrefined Coconut oil. I was expecting it to be more liquidy. HELP!! I desperately want to try it.
Krissy @ Shiawase Life says
The coconut oil will get more liquidy at room temp in your pantry! I use the Spectrum brand and was thinking the same thing when I first got it 🙂
Cathy says
awesome! Thanks Krissy. I will defintely take a road trip to WF this week. 🙂
Krissy @ Shiawase Life says
Sure thing!
KathEats says
Mine is some Tropical brand, but Spectrum is also very good. It will turn liquid at home – but in the winter it goes solid again!
lynn @ the actor's diet says
i live with my doggie julius – you’d think he’d chase away the occasional mouse but he has no clue
Amanda @ AmandaRunsNY says
haha, thats a lot of creatures! i miss seeing animals in nyc. all we’ve got are squirrels and tourists!
Annette @ EnjoyYourHealthyLife says
Wow, that IS a lot of animals! I don’t think I would’ve survived… hah.
I am a huge fan of that bowl (and the delicious spread of veggies inside too)–I love boxy things like that 😉
Krissy @ Shiawase Life says
UGH I need to get to GH soon! It’s been too long since we have had some delish breads!
Lara @ TresLaLa says
Love all those kitty pics! And the elephant – that was unexpected! 🙂
Ashley says
We used to have tons of camel crickets in our old house in Kansas. We called them ‘spider crickets’ cause they looked like spiders, but jumped around like crickets. Ewww, I’m getting chills just thinking about them! Later on, we adopted two cats, and the took care of quite a few of them for us. 🙂
Alana says
I will miss Tig when you move-he is so cute!
Khushboo says
So many pets! As a non-pet fan, I would have had no choice but to move!
Kathryn @ Flopoodle says
OMG deer are the worst pests! My parents have all of their bushes in wire cages to stop them from getting munched on. That being said, there’s nothing sweeter than a doe with her babies 🙂
Holly @ The Runny Egg says
You should check out Mama Pea’s post today — maybe you and Matt should get a Go Go Walking Pup!
KathEats says
Hahaha!!!
Gena says
Kath, I’m looking for 2000 and 2200 calorie meal plans. I think I like balance (lately I’ve been doing the grain-veggie-fruit-dairy-protein at each meal and it seems to work to balance things out that way). Maybe a zone type of plan (30-40-30)? If you can suggest some books and websites that would very helpful for me. Thanks!
Gena
KathEats says
Hey Gena,
I actually don’t know of any meal plan sites….I tend to eat close to 1800 so add a few snacks to KERF and you’d have one? Sorry I’m not more helpful
kathleen @ the daily crumb says
you could have your own zoo with all those creatures!
so fun that you’re friends with the new house renter… always so helpful for the new owner/lessee to hear tips and tricks from the outgoing peeps. happy hump day, kath!
Mom says
What about the bears, who by the way, are returning to you in the LARBSMATTMOBILE…
Betty says
Mom – how could she have not included the bears?!?! Maybe she doesn’t deserve to have them return to Va? They seem to have thrived with you all.
Geesh
Mom says
They have thrived with me (and you are kind to say so) but… I must admit, they’ve been asking for their mom and dad.
KathEats says
Well I mentioned them with the elephant!
Mom says
Oh I’m sorry! Reading fast–at work.
They can’t wait to help at the bakery!
Betty says
Ah – I saw the beer and thought you were making a play on that word -oy – they will be surprised to come home to a new home – I’m thinking they aren’t good packers
Shaya (Eye Girl Eats) says
It’s a veritable zoo over there!! But holy hell I would spray the ish out of that mailbox wasp, especially since you’re suspecting he might be building some sort of permanent fortress in there?? I’m talking long hose with high water pressure from about 20 feet away.
PS, I was stung viciously by wasps growing up– you can probably tell it was horribly scarring haha.
sarah@spinach and spice says
Delicious looking salad 🙂
You guys have quite the zoo at your home!
Stephanie @ StephSnacks says
Vanilla almond butter? Sign me up!
Estela @ Weekly Bite says
That’s a lot of cats! They are cute though 🙂
Katie @ Peace Love and Oats says
haha, it’s practically a zoo over there! and i’m glad you figured out what the “creature” in your mailbox is!
Patty @ Foodie and the Beats says
All your posts with blue cheese make me salivate. Delicious lunch! I have to try the bleu cheese and honey combo, sounds like a winner to me.
Christine @ Merf In Progress says
Those cicada killers are CRAZY. There was one flying all around my mom’s head last Saturday and it was hilarious! (glad it wasn’t me)
Angela @ Eat Spin Run Repeat says
Are you going to bring Tig to your new house? I feel like he (or she?) is part of the KERF family now!
KathEats says
I think his real mom would miss him :()
Allison @ Happy Tales says
Aw, turtles! I used to LOVE turtles when I was a little kid.
Ellie@fitforthesoul says
haha wowww I guess living in a nature-filled side would attract lots of cute creatures~awww! poor tailless bum 🙁
Angel7 says
You both should open up a zoo 🙂
Who sings the song “You and I” that you love?
http://faithfulsolutions.blogspot.com/
KathEats says
Lady gaga!! http://grooveshark.com/s/Yo+And+I/3Q6jGz?src=5
claire says

Averie @ Love Veggies and Yoga says
Dr. Pete’s Praline Mustard Glaze & the slight toffee flavor..that sounds soo good!
Lovin the animal pics. The kitty cats are so adorable!
Lauren @ What Lauren Likes says
Sigh I wish the sun would shine abit here!! Awesome looking lunch though 🙂
Emily says
You guys do seem to have a lot of animals over there! Maybe some will follow you to your new home… What kind of tempeh did you have on your salad?? I am trying to get back into it again.
KathEats says
Lightlife 3 grain
Halley (Blunder Construction) says
HA! Tig looks like he has a kitty butt crack exposed, funny!
Sarah@The Flying ONION says
Aww…look at all those fur-babies! I’m obsessed with dogs but I don’t currently have any in my life. Just the neighbor’s black cat to keep me company. 😀
Rosa - Fitness, Food, Fulfilled says
Is Tig a manx? I used to have a manx named Tigger and he was the best cat. His personality was much more like a dog than a cat though.
KathEats says
I have no idea..
Laura G says
How do you prepare your tempeh? I just bought some and I want some healthy ideas on how to prepare it quickly.
Anyone have some ideas?
KathEats says
I just put it in a skillet with some saucy flavor. You can eat it raw so there’s no risk of undercooking
Kate (What Kate is Cooking) says
There are no animals in California, I swear! The only animal I’ve seen in my backyard is a bunny, but I’m convinced my brother bought it and put it there 🙂
Sarah @ Sarah's Modern Bites says
You guys DO need a pet! haha I just read your response saying Matt is allergic to cats and dogs. My Father is highly allergic to cats and dogs and he and his wife have a Labradoodle. It is a hypo-allergenic doc (hair not fur) and is a cross between a Lab and a Poodle. His name is Fynn and he is the cutest, sweetest, smartest dog ever. My Dad has had zero problems with allergies around Fynn.
Praline mustard glaze??? Sounds like another awesome combo with that blue cheese. YUM as always 🙂
KathEats says
I love Labradoodles 🙂
Liz says
Yeah, maybe a hypoallergenic breed is in order! Yorkies are also hypoallergenic.
Mary @ Bites and Bliss says
The bears must have invited them. 😉
Elisabeth says
Too bad Matt is allergic to cats/dogs (Me, too…even though I had shots/drops to desensitize as a kid) – maybe a nice fish aquarium? I, for one, will miss pics of Tig when you move!
Kelly says
Abita beer! :] I live 10 minutes from that brewery in LA! so cool!
Hillary says
I was just thinking the other day about how many cats you guys seem to attract! How funny.
J3nn (Jenn's Menu and Lifestyle Blog) says
Animals brings so much joy to our lives. I highly recommend adopting a pet. It will be great practice for your expanding family. 🙂
Gina @ Running to the Kitchen says
That’s a lot of animals for having no pets! I’m scared to even click the link on flying roaches. I hate, hate, hate roaches!
Molly @ RDexposed says
Want my fox and baby raccoons? I’ll have them hitch rides on the backs of the geese when they fly off to the south.
Molly @ RDexposed says
Oh and “You and I”…by Jason Mraz? Because after reading that I had to put that song on.
Joanne says
So many critters, they keep the scenery interesting.
The lunch looks great. So healthy and clean.
Jil @ Big City, Lil' Kitchen says
Lots of critters – some lovable…some not-so-much. Creepy crawlies – eeep.
Julie H. of Spinach and Sprinkles says
Hope the new place is missing some of those creatures! ….Maybe some can stick around though or you find a new animal to love on that is sweet! (not the creepy ones!)
Stephanie @cookinfanatic says
Had to share this recipe I came across today, I thought of you immediately when I saw it!

Mmm!
Anna says
I loooove that little elephant… is it a bottle opener?
KathEats says
Yep!
Anna says
Where did you get it?
KathEats says
Africa!
Anna says
Oh wow! That makes it harder for me to get one for my friend who loves elephants 🙂
Anna says
(sorry about the double comment- feel free to delete)
Anna says
Oh wow! That makes it harder for me to get one for my friend who loves elephants 🙂 (and beer)
dawn says
See, you get a cat, which then means that bugs become free, readily available, edible, and fun cat toys. Not pests – free cat toys. That’s what I tell myself, at least… (by the way, I adore Tig – he looks a lot like a cat I used to have, missing tail and all)
JenATX says
Kath, what do you think is the easiest way to search for your lunch menus when you used to pack your lunches everyday? (you were still in school) My problem is that I’m such a temperature snob & I don’t have a fridge at school. I like my sandwiches very cold as well as my yogurt, hummus, and dipping veggies. Salads don’t have to be super cold I guess… idk nothing seems appealing to me at room temp!
KathEats says
Hmmm. I’d go back to the archives from March to July of 2010 and look for lunches. They were nearly all packed. Or go back even farther to semesters like Sept – Dec 2008 or the summer of 2008 when I packed dinner’s too. I’m sorry I don’t have a better way – perhaps a post on that soon!
JenATX says
thanks!
Hannah says
Praline mustard glaze OMG.
robin says
awww Tig….
Jenny says
WOOOOO “You and I” !!!!!
KathEats says
You inspired me!!
Cait's Plate says
HAHA! This whole post cracked me up because I remember so many of these instances when they happened. You really HAVE lived with far too many animals/insects/bugs, etc. There must be something warm and inviting about you that just makes them follow you guys wherever you go 🙂
stacey says

Casey says
You had to post a picture of Abits Strawberry when I won’t be able to have one for six months. Sad day. 🙂
