Today has been quite crazy!!
We started accepting applications for the bakery this morning!!! If you know of anyone who would be perfect for the job, please have them apply on our website!
After working on that all morning, I went out for a great run.
But it wasn’t all that great! Only great because it was hot out and I loved that.
But bad because I ran too far away from home and got too thirsty and tired in the middle! I covered a total of 6.6 miles, and stopped to do some sightseeing walking in the middle when I arrived at my destination neighborhood. I ended up walk-running all the way home – walking up hills and running on the flats and downs. It is CAMBELBAK SEASON and someone was irresponsible!!
Back to the greats – I had a great lunch!!
An amazing sandwich – hummus, sun-dried tomatoes, and cucumbers on High Five bread
Plus a side of carrot + apple drizzled in sunflower butter
And a tiny spinach salad drizzled in honey, EVOO and salt
So many bloopers on these windy days!
My fabric now has sunflower butter on it!
After lunch I got dressed up – cute new shoes I bought at Loehmann’s in Towson with my grandmother – and went to a meeting.
After my meeting, I drove straight to the bakery to greet the equipment guy and say hi to Matt. I was so dehydrated from my run and getting hungry by 4PM that I did something I rarely do – I got a smoothie for a snack while out! Made me feel so cosmo to be getting a snack out : )
This guy was from Cville Coffee and was made with TOFU and yogurt plus berries and banana!! I don’t like smoothies made with protein powders and I don’t like them when they’re all fruit, so this guy was a great option made with real food!
Matt was at the bakery unloading equipment for hours. I came home and worked at my computer for a while.
And waited. And waited. And waited.
I considered calling him and telling him to meet me somewhere for dinner out. But then I realized how easy it would be for me to just grill myself.
I prepped our veggies – smothered in Garlic Gold oil and smoked paprika
We had portabellos, cremini skewers and zucchini
Matt is so much more of the household cook. I’m just the sous chef! But tonight it was all me – even lighting the grill
15 minutes of char-grilling later, we had veggies and 2 fat organic chicken sausages to eat
Me, myself and I had a great dinner together. But we did miss Matt.
Matt eventually came home and was very excited to have his dinner waiting for him.
Bleu Cheese + portabello!
And man oh man was this guy delicious!
I’ve had a bad headache all evening from that killer run 🙁
In other news, you have 13 hours to buy Table In A Bag if you would like one from OpenSky! Just in time for summah.
Also, I am really enjoying my book Resistance by Anita Shreve. It’s very scary though. Very.
Goodnight!
Kristen says
I tend to get headaches after a long run (I live in Florida so it’s usually pretty hot). I am always hydrarting but can’t figure out how to prevent my headaches. Does this happen to you? Any ideas?
Sarah says
Electrolyte enhanced beverages are the only way to go. I was having that headache problem too until I figured this trick out. don’t LIKE Gatorade, so I usually get Smart Water or the lemonade flavor of Vitamin Water Zero. Take it from this Florida girl–some electrolyte enhanced water before, during, and after your run will make a big difference on those hot summer (and spring…and fall…) days!
Kristen says
Thanks for your help. I will try that or maybe some coconut water. I love to run but don’t love headaches. Now that’s to so hot, I’m trying to do my runs before the sun comes up so it’s really early!
Holly @ The Runny Egg says
Even in the best weather I need water for anything over 4 miles! A headache is no fun — I hope it goes away soon!
Your dinner looks fabulous — bleu cheese on a portabello sounds amazing. OK bleu cheese on anything is amazing.
Lauren says
Ohhh those grilled veggies look awesome. That’s so exciting that you’re accepting applications, if only I lived a couple hours to the west…I would have TOTALLY applied. I miss my bakery work, especially because of the delicious free food!
kaila @ healthy helper! says
I looooove grilled dinners….there is nothing like a good char on food!
Meg says
If only I lived in VA 😉 Good luck finding the perfect candidates 😀
Miranda @ Working Mom Works Out says
Aww, you did a great job! Looks delicious!
caitlin says
Yum! I have been on a smoothie kick lately. My favorite are raspberries, almond milk, and arbonne vanilla protein powder. So simple and SO good!
Cait @ Beyond Bananas says
Lunch and dinner.. both look amazing! I am going to have to try carrots and sunflower butter though.. never tried that combo! good luck finding the perfect people to work in your perfect lil place!
Morgan @ moments of mmm says
I made that mistake when I first moved to Arizona. I was about 3 miles away from home when my mouth dried up to dust and my body screamed, “WATER!” Too bad I didn’t realize running in the desert was A LOT different than running back in the humid Midwest BEFORE my run.
Funny part is I had NO money to buy a drink + no phone to call the boyfriend for a ride! So, I ended up going into a gas station to guzzle sink water. Not something I want to remember, but that’s life!
Ash @ Good Taste. Healthy Me says
I have shoes like that too! I recently bought them and I loooove them. Peek-a-boo flats! Hollah!!!
Andrea @ a farmer in the dell says
You are very brave!!! nice work on the grill! I am jealous of your warm weather. It is cold and wet here in MA. I am ready for some much needed vitamin D!
Nicole says
I’m such a goofy, running nerd. I always wear a water belt with at least 16 oz of water when running outside because I have this fear that I’ll be really, really thirsty and there won’t be any water around for miles. I even take water when it’s cold outside (like below freezing). I’m weird that way. Sorry about your headache : (
Diana says
That dinner looks fantastic! Great job with the grilling – I would probably burn my house down if I ever tried operating one on my own.
By the way, I think you mean “sous-chef”, not “soux chef” 🙂
KathEats says
Ah geez, yes I did!! Going to change it – thanks!
Becky says
I was gonna say that too- it’s one of my favorite French phrases that we use in English– “under chef” hah, it’s so cute!
Molly says
I thought your shirt said “Rum For Life”…shows you where my heads at.
Michelle (The Runner's Plate) says
That’s cool the smoothie had tofu in it!
I don’t often buy lunch/snacks mid-week, but when I do, it is extra special.
Kate says
Haha, nice title! I expected Angela to pop up at any moment in your post:)
I was going to apply at my Great Harvest store but have reservations about waking up at 2 AM for work. It sure seems like a fun job though!
The only time I felt dehydrated in running was when I ran a half-marathon. The water stations were spread out too far for me and when I got there people kept handing me disgusting lemon powerade – yuck! But I was desperate so I drank it…next time, I am going to be a smart runner and have that mini water bottle belt/fannypack where you can store snacks.
JenATX says
ditto! i thought maybe the recipe for dinner was inspired by her or something
And I had no idea that Matt was more of the main chef.. interesting!
Rachel says
I get bad exercise induced migraines that can last for days after the workout so I definitely feel your pain 🙁 Hopefully they don’t become a regular thing for you!
Katie @ Nourishing Flourishing says
Whee! Grilling season = sum-sum-summahtime soon!
Namaste Gurl says
Yum– all your meals look delicious and oh- so pretty, if I might add! I wish I had the drizzling skills as you do, I can never drizzle my nut or seed butter with etiquette 🙂
I had a single- lady bbq by myself the other day, too! Sad, but sometimes that’s what a girl’s gotta do alone, huh? 🙂
Baking Books says
Oh my that looks fabulous! I love grilling…on my George Foreman 😉 I think I would burn a house down if I tried an ACTUAL grill!
I wish I lived in C-Ville – I’d love to bake and serve bread all day 🙂
Jil @ Big City, Lil Kitchen says
All those grilled veggies look phenomenal!
Heather @ Health, Happiness, and Hope says
I love all this grilling food! Perfect sign of summer! Great job on your own!
Hope that headache clears up for you ASAP!
staceyhealthylife says
Wow what a day. The grill is not my specialty either. Tofu in a smoothie, sounds interesting.
Robyn says
Hi Kath!
I have been meaning to email you because I just found out that I was matched to the UVA Health System Dietetic Internship program and was ecstatic! More importantly though, the second I found out I knew I would need a job (although I know the internship is a lot of work, the director said students have been able to manage part time work quite well) and then FIRST thing I thought of was “I have to get a job at Great Harvest.” I am just like you and want to become an RD but also LOVE to bake, and hope to one day open up my own vegan bakery 🙂 Anyways, I am totally applying and hoping you will hire me to work weekends and every time else I can!
Any tips on apartment hunting for a 22 year old IU grad would be much appreciated 🙂
P.S. I get so excited when I read your blog after all this time because now I will get to experience Charlottesville just as you do, true foodie paradise!
KathEats says
Congrats!!! Look forward to your application!
lauri (RedHeadRecipes.com) says
Grilled dinners are SO easy, but I always think its ‘Ben job’ to grill! I really should do it myself more often!
Courtney says
L-O-V-E your shoes!!
Allie (Live Laugh Eat) says
That silky smooth sunflower seed butter is tempting me! Love the new(?) fabric.
Molly says
I am not the griller! I mean, the first time I lit a match was at the age of 19 only because I could not wait any longer for my GA to light my bunsen burner in chem lab!
Emily @ Savory and Savage says
Getting overheated and dehydrated on a run? Recipe for a migraine for me.
Your grilled dinner looked delicious! I agree, lighting the grill can be a scary prospect 🙂
Averie (LoveVeggiesAndYoga) says
apple drizzled in sunflower butter = oh yes! love SFSB!!!
and those grilled veggies are calling my name. Way to go being the grillmaster out back! That, and blogger, photographer, business owner, caretaker for your MIL, etc etc 🙂
Annette @ EnjoyYourHealthyLife says
i LOVE grilled veggies-but my hubby has to do the grilling. Nice job lady 🙂
Alaina says
I cannot wait for the chance to grill outside. That’s what starts summer for me. 🙂
Lorin says
I’m just curious as to why you don’t like all-fruit smoothies, is it just a texture thing?
KathEats says
Because I think there should be fat or protein with every meal/snack, and all fruit is just a lot of eggs in one basket on the fruit category. That said, I dont’ think there’s anything WRONG with an all-fruit smoothie, and I’d drink one if I was given one
Angel7 says
I have never heard of tofu in a smoothie, but it must be good.
Love the smoked paprika!
I am looking forward to my husband cooking on the grill again in the nice weather!

Adina says
Pictures of your bread always makes me drool…
Kate (What Kate is Cooking) says
I would totally apply at your bakery if I lived in Virginia 🙂
Khushboo says
That looks like the perfect summery meal, all it’s missing is some watermelon or vanilla ice cream to round it up!
Kaitlyn @ 7 Plates says
That food on the grill is making me hungry! I am about to buy a small grill & I am so excited!! I hope I can use it 😉
Ariffa says
I want to work at your bakery! Is it a problem that I live in another country?
Marina says
Good job on grilling that awesome dinner! I think I wouldn’t be brave enough to handle a grill all alone :))
Hannah says
Tofu in a smoothie! That’s a brilliant idea, as here in Australia it’s really hard to find a protein powder that doesn’t taste like bottom.
Jumanah @ Healthy Living in the Middle East says
Grilled dinners are the best! Those mushrooms with blue cheese look so delicious!
lynn @ the actor's diet says
wow time to start hiring already! i’m sure you won’t have a problem finding good help!
Ellie@fitforthesoul says
I hope you find the best people for the job! I’m sure they’ll just come in like a flood 🙂 and I love the shoes!! very pretty indeed.
Erin says
Do you peel carrots or just wash them?
KathEats says
Just wash
J3nn (Jenn's Menu and Lifestyle Blog) says
I always regret not bringing hydration when I walk too far away from home! I need to get a camelbak. 🙂
Your dinner looks delish! I love grilling just about everything.
Jun says
Are you eating 100% organic at home? And when you’re sick, do you still workout?
KathEats says
No, but I make a good effort.
And definitely not!
Margaret says
That grilled dinner looks sooooo appetizing.
I can tell you the large mushrooms are GREAT with a spread of Pesto and then topped with crumbled cheese, then bake or grill.
Christine @ Burning It Off says
I’m generally not a fan of store bought smoothies… they’re so expensive and full of sugar and you can make way better ones at home. But when I’m on the run, sometimes I’ll have one for a snack to tide me over. Good for you for getting that grill going on your own 🙂
Lauren says
I would LOVE to work in your store. Wish I lived in C-Ville because I would definitely be submitting my application. 🙂 Lunch looks so good. I’ve been wanting a hummus sandwich especially with sun dried tomatoes. I need to get some!
Char says
Looks yummy! Wish it was grilling season where I live!
Lauren at Keep It Sweet says
Dinner is so good when it is cooked on the grill! That is definitely something I miss in NYC!
Chelsea @ One Healthy Munchkin says
Be careful! If you keep on making fantastic dinners like that, Matt might give up his head chef role and make you do most of the cooking from now on! 😉
Jess (Sweet Potato) says
Those shoes are so cute! Also, grilled vegetables are one of the things I am most excited for this summer!
Hilary says
Mmmm yummy! I heart grilling and grilled veggies! 🙂
Samantha Angela @ Bikini Birthday says
If I lived in Charlottesville I’d be first in line to apply for a job at your GH. I love baking bread and I’ve been thinking of working in a bakery for a while now.
stacey (the home-cooked vegan) says
I know how you feel! I keep forgetting to take water on my runs too, my mind hasn’t quite grasped the fact that it’s a new season 😉
I’m the main cook in our house, but ask me to grill and I have no idea what to do! I leave that to the boyfriend, though it does look fun! I’d like to learn one day!
I’m sure Matt was glad to have a plate in front of him when he came home 🙂
Kat @ Big Apple Little Kitchen says
I love love love grilling. Too bad I live in an apartment that has no garden access! I guess I’ll just have to make due with my grill pan for now!
Angela @ Eat Spin Run Repeat says
Grilled veggies are one of my favourite things about summer. You’ve just reminded me that I need to refill my propane tank!
Kori says
Adorable shoes, and great job on the delicious grilled dinner!!! 🙂
Sara says
I am not anywhere near you, but I highly recommend reaching out to a local program that provides employment support to people with intellectual disabilities. The advantages are that your interviewees are highly motivated, pre-screened and generally come with a job coach who will assist with the orientation period. I don’t know your area that well, but here is a list of agencies. If you send a form email and a link to the ones near you it will pay off. Its like having your own recruiter. Also, its likely that employing someone with a disability will get a tax break.

Good luck opening the store!
KathEats says
Thanks Sara
Joanne says
Congrats on a good run. You’re so lucky to enjoy running in the heat. I hate it. All the water / electrolyte drinks in the world can’t make me appreciate hot weather running. I always get out there before the sun comes up.
Great eat – as always, my mouth is watering. Good luck on the interview process. I imagine that’s going to be a long, tough process.
faith @ lovelyascharged says
Grilled veggies have the best flavor ever! A little liquid smoke brushed across the top before throwing em on is just absolutely unbelievable!
Allison @ Happy Tales says
Aw, sorry to hear you had a headache… but it looked like you ROCKED dinner! Ryan is also the main-chef in our little household, ha! BTW, love your RFYL shirt, way to represent your old city!
Candice says
Good work on the grill! I’m always scared to light ours, but I do enjoy grilling!
Allison K. says
Good luck with the hiring process! I am currently hiring a bunch of people for seasonal jobs, and I’ve had an overwhelming number of applicants, and I am sure you will too!
natalie (the sweets life) says
Your dinner looks HEAVENLY! I’m impressed by how grill-savvy you are…something I need to learn 🙂
I love Anita Shreve books usually, I’ll have to check that out! If you need a book to read next, I recommend The 19th Wife…it is SO fascinating, I can hardly put it down!
Katherine: Unemployed says
how do you get the nut butter drizzle like that? it’s so smooth
KathEats says
That’s the beauty of sunflower butter!
Rachel says
Hey Kath – how soon will the catering side of GH C’ville be up and running? I do a lot of events where we do boxed lunches and would love to try you guys out!
KathEats says
Hey Rachel!
I’d say we’ll be ready for catering pretty soon after our opening – within a week or two. Our sandwiches are fabbbbulous so I hope you’ll give them a try!!
K says
I looked over the application and I’m pretty sure it’s illegal to ask someone their age on an application. I think you can ask them if they are over 18, but flat out asking age is illegal (unless the law changed). Just didn’t want you to get in trouble.
P.S. It may not be illegal, but def. frowned upon. He is the EEOC that answers the question.
K says

Elyse says
For headaches due to dehydration from exercise, drink coconut water! Before and after a run, it should help quite a bit. I do bikram and if I don’t chug coconut water (or Emergen-C packets) before and after, I will get insane headaches for hours after.
It’s all about electrolytes! Just water alone won’t always help; I can drink water for hours before and after a super sweat workout, but if I don’t drink things that will balance my electrolyte loss, it’s headache-town.
Been reading your blog for a while now and love it 🙂 I read about it in Marie Claire, came to check it out for myself, and now I read this instead of Marie Claire! It doesn’t sound like you normally have issues with headaches and exercise, but a few people above asked about it so I figured I would pipe up.
KathEats says
If I’d had a coco water I would have drank it!! I agree – it’s great for days when you feel like you can’t catch up with hydration.
thanks for reading!
Lindsay says
That meal looks delicious!
Angela (Oh She Glows) says
Your pictures are stunning!! I love the apple with sunbutter shot…crisp like I’m sure the apple was. I wish I could find sunbutter around here!
Oh She Grills!! heh
KathEats says
🙂 You need to track some down! Once we get a TJs I’ll send you some 🙂
Becky O'Brien says
Hey Kath. So sorry to hear you got dehydrated. Been there. Done that. I found that the Performance hydrating drink from Shakee is awesome for avoiding that. Not like Gatorade with dyes, etc. Performance was actually made for a Greek athelete who foot-pedaled the Daedulus plane across a sea that was 72 miles long!! He drank Performance the whole way. Olympian athletes love it. Shaklee also makes a drink for astronauts called Astroade. So, safely hydrated in the air, space, or on land!! (I figure it’s also great “for the rest of us”) Getting ready to talk a walk with my husband, right now, as a matter of fact. : 0 )
K says
yeah, you’re welcome.
Emily @ Comfortable Home Life says
Those shoes are so.freaking.adorable. I love flats! Super cute! I got dehydrated on a run a few weeks ago. 85 degrees + 5 miles + no water = no bueno
