Whole lotta workin’ going on over hea-ya.
First in the form of muscles. A hard-core, heavy Body Pump class. Mondays are always the hardest because Chris likes to really challenge us and strays from the normal routine. So many long holds and pulses!! I’m feeling a bit jellyfish at the moment.
My bike ride to the gym and back was INcredible because of this gorgeous wonderful sunny warm weather!! I can’t believe I biked all winter in weather it was so cold I had icicles on my face. Never take spring for granted!
Lunch was awesome. I love salads, and I love sandwiches!
I made a burger with a leftover veggie burger on Great Harvest Spinach Feta. Delicious!! That bread is so soft!
Plus an apple – a tiny Virginia apple from the farmer’s market
And a honkin’ salad – local organic greens, baby spinach, carrot, pepper, Bleu D’Auvergne, sunflower seeds, olive oil, honey, lavender salt.
I like my salads extra large!
I am so thankful that my office has open windows, Brendan James, a fridge and a husband in it!
Back to work we go!
Valerie @ City|Life|Eats says
Yum. Great looking lunch!
Estela @ Weekly Bite says

Jen says

Angela @ Eat Spin Run Repeat says
As soon as I read that post title I could hear Brendan James in my head! I agree, spring should not be taken for granted. 🙂
Samantha Angela @ Bikini Birthday says
I love that sore feeling after weight lifting. It lets you know you really worked hard!
Dee says
ahh – that salad looks amaze!
Kate @ NaturaStride says
Looks like a perfect lunch to me! I’ve been biking to work everyday and am also enjoying the lovely weather!
Crystal says
Your salads always look so delicious! I’m moving to Charlotte in a couple months and am thrilled to be a frequent customer at Great Harvest – their breads really are the best!
Holly @ The Runny Egg says
Your lunch looks delicious — and I am super jealous that you have your windows open! I’m almost to that point!
Rachel R. says
Looks awesome! Question: do you ever get sick of salads? I guess I feel like I always fall back and make the same one, so I get sick of eating them. But I just read the book you reccomended on another website (Superfood RX) and am determined to eat more spinach or romaine! I just wish I didn’t get so bored.
Also, what about the toppings (like the oil and honey, which are both superfoods). Does that go with just about any salad? And the lavendar salt? Sounds great.
I guess I think you should do a post just on salads!!
KathEats says
This salad is my very favorite and I have YET to get sick of it! I’m sure I will sometime. Switching from gross bottled salad dressings to my honey/olive oil combo was a huge key for me. It made me love salads so much more. And lettuce is so SWEET!
Baking Books says
I think a key is thinking outside the (lettuce) box. Their great but I usually fill mine with any kind of vegetable with or without lettuces! Adding squash and hummus, salsa and/or goat cheese really makes it more too….and GH bread on the side of course! 🙂
Caitlyn (The Spoonful of Life) says
Oh! You’re making me jealous with your bread. We don’t have a GH around here, so I came back from my Colorado vacation with 2 loaves of GH in my carry-on! My stock needs replenished, though. I’m asking my uncle to bring some when he flies in for my graduation next week! I will take GH as a graduation gift any day! 🙂
I just remembered I have 1/2 a loaf of Kansas Krunch in the freezer (excitement over here)!
KathEats says
🙂 It freezes so well!
jenn says
Kath- I had my first and most certainly not last GH experience Went to GH Albquerque and had some Green Chile Cheese Bread (Wow!) and Nine Grain Whole Wheat. I have been pretty much living on this stuff since Saturday.
KathEats says
Awesome!
Karen says
An extra large salad is the only size I know…looks lovely!
I was so pleased and surprised that my attempt at making Emily’s bean burger this weekend was successful. These were the first veggie burgers I’ve made that didn’t crumble on me. And, they were super simple and a big hit too!
Freya (Brit Chick Runs) says
Man you have the most epic-ly awesome salads ever! They *almost* rival the size of my roast veggie salads 😛
Jenny @ Fitness Health and Food says
see now I’m craving a veggie burger and we don’t have any! sighhh we foodie blogger live a tough life don’t we 😉
Good luck with all of your work! I love seeing all the sunshine in VA we’re missing it here!
Beth @ DiningAndDishing says
Yes I must say I’m pretty jealous of your office set up today Kath! It’s so gorgeous out and I’m stuck inside. We’ve got lots of windows in my office but they don’t open :(. At least I got to go for a stroll at lunch – I’ll be out this afternoon after work for sure!
L.G. says
I apologize if you have answered this question before, but you drink a lot of sparkling water! Does sparkling water hydrate as well as plain old tap water? (Does it count toward the recommended eight 8oz glasses per day?)
KathEats says
I think so..
Pat Kilmain says
Not Kath, but the answer to your question is yes! The sparkling water has no additives other than the carbonation. It really is just tap water with with carbon dioxide in it to bubble. I drink it all the time too, it seems more refreshing with bubbles. 🙂
Miranda @ Working Mom Works Out says
The salad and BREAD looks amazing! And yes, Spring weather is a wonderful change.
Lea @ Healthy Coconut says
I had a tasting of that bread during my trip to Great Harvest bakery, it really was delicious and chewy.
But I held off on buying a whole loaf because I already picked up the Cinnamon loaf and Dakota loaf. Still tasting great after a week in the freezer
Colleen says
I wish my office had all of those things in it!!! As usual, your salad looks delish.
Sarena (The Non-Dairy Queen) says
Lunch looks delicious! Enjoy your afternoon!
Diana @ frontyardfoodie says
What a gorgeous meal for a gorgeous day.
I have been feeling how important it is to not take anything for granted because we might not always have it and enjoying it for what it is makes it all the better anyway!
Katie @ Nourishing Flourishing says
I always miss my Hugh Jass salads when I travel 🙂 All the more when it’s warm and Springish outside!

Bike rides always feel better when it’s a little on the wamr side over being cooler. That wind REALLY makes a difference with being comfortable or completely miserable!

I know what you mean about not taking nice weather for granted. It is still on the cool side (40* in the AM) here, but I am still so thankful that winter is over and I don’t have to deal with single digits and temps in the teens!!
D & A @ Two Baklavas Story says
That salad looks absolutely delicious and nutritious! You always eat such interesting bread! Have a lovely rest of the day!! 🙂
Caitlin says

Once again you have discombobulated and redefined altogether my brain’s perception of salad.
Chelsea @ One Healthy Munchkin says
I was debating whether or not to get Bleu D’Auvergne at the store today! The only other blue cheese I’ve ever had is Roquefort. How would you say it tastes compared to Roquefort?
KathEats says
I’m not all that sure what Roquefort is like, but the BD’A is creamy, slightly sweet and slightly sour. Ask your cheesery for a taste!
Caitlin @ Southern Curls & Pearls says
I love that you featured Brendan James in this post! I go to UNC Chapel Hill, and he was a Clef Hanger (Acapella singing group) here.I have followed him ever since.. I just love his voice. He’s not very well known so I was really excited to see his name! Oh and the food looks delicious! 🙂
KathEats says
I loooooooove BJ! I saw him in concert this past fall!!
Angel7 says
The Great Harvest Spinach Feta bread sounds really good! Maybe the moist spinach makes the bread so soft.

what’s the hardest workout you do? also, how would you advise a college student who loves sweets (as in can and will eat 4 sundaes every sundae bar) but also loves to be in shape/work out?
KathEats says
Hardest workouts are running!
And I’d tell you to just be mindful of portions
Hanna says
