Afternoon dance!! I had so much fun today. We’re building on our routine and I love it when multiple people know the same phrase – we can do it over and over and over – so fun!
I also have SHOES! Thank you to Brandy who sent me a pair from the back of her closet. They fit!
I biked on home and got started on dinner….which was interesting
I had hoped to make a Mexican feast, but too many things were off!
We’re having sliders with beef tomorrow, so I was going to do black beans and then I saw some tempeh in the fridge and thought I’d try that. NOT a fan of tempeh as “ground beef” – even with all the other fixins. These was also a new kind of tempeh (from Twin Oaks) and I didn’t really care for the flavor. It was almost sour?
I also didn’t have real tortilla chips and thought I’d use the Chocolate flavor. I really love this flavor and they did taste good – sort of molé! I love these chips, but they did not taste good by the end.
On top were bell peppers (cooked in chili powder with the tempeh), tomatoes, cheese, yogurt and pomegranate salsa that Sarah brought me from Texas! It was delicious by itself, but I didn’t think it went with all the other flavors
At least Matt loved the dinner!!
Normally my food philosophy is “If you like it by itself you’ll like it combined with other things” but this one just didn’t do it for me. Sort of like when I made avocado chocolate pudding. Blech! I still have nightmares about the stomachache that one gave me.
I had a handful of cherries as an appetizer and a handful of blueberries for dessert!

I like the chocolate chips too, but I don’t like them with Mexican flavors – I’m not really sure what I like them with, but they’re good plain!
I don’t mind plain tempeh cooked like ground beef, but it has to be really crumbly – and then it’s okay with pasta or on nachos or something… Sorry your dinner wasn’t what you were imagining!

Oh what a bummer it wasn’t good. It looks DELICIOUS! I had a chicken sausage tonight that just didn’t do it for me so I feel ya – it’s always so disappointing when food looks good but just doesn’t taste quite right….

What a relief to find that all of your meals don’t turn out perfectly. I hate it when I try something new and it just doesn’t hit the spot or have the taste I expected at all. When you get through with all of the preparation and anticipation of dinner and are left disappointed it seems you never quite feel satisfied.

Overly fermented. That’s what can be tricky about tempeh. Or any fermented medium. You go a little too far and you get vinegar in the case of kombucha or kefir, and with tempeh…well..you get sourness.
The pomegranate salsa..I’d just eat that with a spoon!
And your backlink to the chocolate avo pudding. I made avocado chocolate mousse I call it. No banana. TONS of agave and cocoa powder and vanilla. As much as your food proc or Vita can handle. That’s when you know it’s sweet and chocolatey enough 🙂

Oh girl I do that all the time! I really try to be creative but a lot of times my flavors are off. I need more practice I think. You must have read the same magazine that I did for the chocolate avocado pudding. It was one of the most disgusting things I’ve ever made. SO disappointing! 🙁

I think there has been too much of an effort to infuse chocolate into everything these days – in my book, it belongs in pudding, ice cream, cookies, brownies, and cake…and that is about it. Not so much with avocado and tortilla chips. Pretzels is about as exotic as I get with the chocolate.

I had Not Nachos for dinner tonight too, although I think they were a bit more tame than yours. I only had stale tortilla chips, and decided to top them with snobby joe mix, tomato, onion, and cheese. Actually turned out pretty good!

I wish I loved tempeh! I tried it the other day for the first time and can’t decide whether or not I’m a fan. Have you tried quark? That’s another great sour cream substitution…or cottage cheese even!

Hahaha this post made me laugh because this has totally happened to me before! Where you envision dinner one way and because of unforeseen factors it turns out to be something completely random and not necessarily in a good way. Props though for using what you had on hand in such a creative way. I am TERRIBLE about using up stuff we have in the fridge. I’m trying to learn to be less wasteful… you’re certainly a good role model for that! Too bad to hear about the avocado chocolate pudding! That was something I had on the back burner to make sometime soon. I hope that I like it!
