I was a nibbler this morning!
First when packing up the Girls on the Run trail mix snacks. I had a few small handfuls. The “M&M” pieces were so good!
Then I made my dinner for tonight – more nibbles as the crackers got packed!
Then the husband arrived home with this doughy loaf of Harvest White that I had to immediately try. Not whole wheat but oh-so-good!
Then we made lunch. We don’t have salad ingredients, I’m having salmon salad for dinner, and sandwich options are slim (I’d love to have some deli turkey right now!) but we did have some leftover black-eyed peas. So I turned them into a burger!
For 2 servings:
- 3/4 cup black eyed peas
- 2.5 tbsp whole wheat flour
- 3 shakes garlic powder
- 1 tbsp BBQ sauce (Bone Suckin’!)
Mash all together, form into 2 patties, cook on skillet for 5 minutes, flip and cook other side.
With ketchup and mustard it made a delightfully delicious burger! Would have been better with cheese, but we’re out of that too. You guys might think our pantry is bursting at the seams, but we missing out on lots of fresh lunch things!
Plus grapes (I nibbled on about 5 more than photographed!) –
And 1/2 a cup of TJ’s greek with pom seeds and granola plank –
And one final nibble – a big bite of M&M cookie fresh from the GH oven!
Guest Lunch Post!
Here’s Melissa P’s yummy packed lunch for today
I am a huge fan of wraps for lunch because of their portability, bulk, and the low-calorie yet fiber rich nature of the wrap itself. Today’s wrap was Italian herb flavor and started with a 2 T. spread of spicy three pepper hummus. That was topped with spinach, tomato slices, an assortment of sliced bell peppers, mushrooms and pepperchinis. Yummy, yummy! On the side, I am having some chicken noodle soup, strawberry banana yogurt and a peanut butter cookie Larabar (dessert!). I spread these ‘snacks’ out over the course of the day rather than eating everything in one sitting. This makes me feel like I am eating all day long, which works wonderfully when you are as big a food lover as I am. Having a job that is as fast paced as mine means that I need to bring foods that are quick to make, easy to transport, energy boosting and most of all delicious (so I have things to look forward to throughout the day ). This combination is perfect for me!
I am off to study, study, study until GOTR and lab!

Great idea for leftover blackeyes! And vegan friendly too 🙂 I got some in the fridge right now ! Im thinking I will use some cooked whole grain instead of bread.. I have that in there too. Experiment time! Thanks for some inspo- never lets me down!

That sure looks like a good makeshift burger too. I’m impressed. Totally understand about the lack of food options though, sometimes pantry items just don’t cut it! They can only get you so far.

The lunches look fantastic today! I haven’t had a wrap in ages, I think I may try that for lunches once and a while.

Anyway, your burger sounds interesting! I would never think to make my own burger with beans. I guess that’s why I’m still in the beginning stages of my diet 🙂

You said you’re low on Pumpkin Butter; here’s a super simple recipe I use that turns out great:
-Very scant 1/4 cup brown sugar
– 1/4 cup water
– 1/2 teaspoon allspice
– 1/4 teaspoon ginger
– 1/4 teaspoon clove
– 1/4 teaspoon nutmeg
– 1/2 teaspoon cinnamon
– 1 1/2 cups (15 oz) canned pumpkin (NOT pumpkin pie filling mix)
** The above measurements are approximations. I usually just eye-ball everything according to my tastes.
-Combine everything except pumpkin in microwave-safe bowl. Mix well, and microwave on high for three minutes.
-Remove from microwave (Carefully!) and stir really well.
-Stir in pumpkin well, and microwave on high 5 minutes.
-Remove from microwave (Even more carefully!), stir, and let cool.
It’s so simple and so easy, and I think it’s delicious. I’ve never had store-bought pumpkin butter, so I can’t really compare it, but I really like this.

My pantry is well stocked too, but that fresh stuff always sends me running to the store.
You may want to incorporate eggs into your food experiment. They’re quite inexpensive.
