Life feels so different now.
I’ve spent the past 9 months doing mostly desk work related to blogging and getting the business started. Now I’m doing most of my work outside of the house, and most if it is not related to the internet! I’ve had to put some of my blogging duties to the side for a while (freelance work, more time-intensive recipe posts) but they will be back when we are over the hump of opening.
It’s going to be a tight squeeze to get everything together in the next 7 days, but we’re still hoping for a June 3 opening!
Overnight oats – 100% delicious.
My bowl was filled last night with a combo of:
- 1/3 cup dry rolled oats
- 1/2 cup greek yogurt (I’ve been eating Whole Foods low-fat organic regular yogurt for a while because it’s less expensive but just picked up some greek – MAN I forgot how good it is!!)
- 1/2 cup milk
- 1/2 banana
- 1 tbsp chia seeds
- Pinch salt
- Sprinkle cinnamon
**In the fridge while I dreamed of sugarplums**
This morning’s toppings:
No She Di’ENT!
Hot coffeeeeee! Stolen from Matt’s pot. It’s been really cold this week so my taste for coffee is back. I think after a month off it’s safe to say I’m un-addicted to caffeine, so I’m adding it back just in small amounts a few days a week. I do love coffee, so I wouldn’t want to live life totally without it!
Have a fabuloso day!
Grace says
Good luck starting the business by June 3rd! That’s so exciting for the both of you 🙂
I always LOVE the dishes you plate your food in! Have a great weekend!
Meaghan O'Connor says
Hey there! My mother and I love waking up to your gorgeous photography every morning and are wishing you a smooth opening! The bakery looks great- IKEA is where a lot of my dorm furniture came from (how great is it?). Happy Friday!
Sarah says
This morning was my first morning making your banana whipped oats for breakfast and I have a question. When do you add the chai seeds? At the end or while cooking? Thanks much! And thanks for introducing me to new kinds of breakfast food.
KathEats says
I add them in the beginning! The only things I stir in the end are cottage cheese, pumpkin and vanilla 🙂
Holly @ The Runny Egg says
Ooh you open in less than a month — that must be so stressful but so exciting! Soon your hard work will all pay off. It is amazing how much can change in a short amount of time!
Cait's Plate says
YUM. Those really do look 100% delicious. I have to get my hands on some of this honey crunch PB. Looks too good to be true.
Fingers crossed that all goes well and you open your doors on June 3rd! I’m sure it will all fall into place as those things often do 🙂
Love, love, LOVE that cloth under the oats. I adore all your homewares and decorations – they’re so perfect for where you live!
Sarena (The Non-Dairy Queen) says
I’m with you on the coffee. I’ve been having an extra cup in the afternoon since it’s been chillier here. I hope you have a great day and things go smoothly!
Miranda @ Working Mom Works Out says
I love the combo of cold oats and warm coffee!
Angie @ Musings of a Violet Monkey says
The title made me laugh out loud and allllmost snort MY coffee out of my nose. Ouch!
The oats look delicious as usual. Wishing I had made overnight oats last night for breakfast. However, it’s chilly here this morning, so I opted for hot brown rice farina cereal.

Estela @ Weekly Bite says
I don’t even see myself giving up coffee… I love it too much 🙂
Laura Jane says
Wow, opening in less than a month!! Should be exciting! I’m not a coffee drinker, but I do love Diet Pepsi. I gave it up at the beginning of this year, and have maybe one a week. It is nice to have something like that once in a while.
Lauren at Keep It Sweet says
Wow, less than a month until opening! So excting!
Lisa Fine says
I did the same thing with yogurt. All winter when I ate it, I stuck with plain Stonyfield Yogurt, or a local, organic yogurt that is delicious [Hawthorne Valley Farm] that’s often cheaper.
For some reason though, when the weather warms up, and I can find it on sale, I buy Greek yogurt. There’s something really satisfying about the tang in the warmer weather. Delicious!
Brittany (A Healthy Slice of Life) says
I can’t believe you’ll (hopefully) be open in less than a month! I’m sure things are busy right now, but what an exciting time 🙂
Angela @ Eat Spin Run Repeat says
Yummy breakfast!! I love how creamy Greek yogurt is too, especially after I haven’t had it in a while! I think there’s nothing wrong with small amounts of coffee – glad you enjoyed your morning cup! 🙂
Laura @ Sprint 2 the Table says
Friday morning coffee-laced cheers to you making the June 3rd opening goal! It’s looking really great from the pics you’ve shared. You totally deserved that coffee. 🙂
Kelly @ Laughter, Strength, and Food says
Good luck with the June 3 opening! You guys are working so hard and it’s definitely going to pay off! 🙂
Jenny @ Fitness Health and Food says
I think a little coffee during a tough week is totally warranted!
Also I think we all understand that you’re busy, I’m sure your readers will still be here even with shorter posts! 🙂
Hannah says
So, I totally just read “9 months” and thought KATH DIDN’T TELL US SHE’S BEEN PREGNANT.
And then I realised I was being a bit ridonkulous…
KathEats says
Haha yeah, I don’t think my belly is that big…and I sure have been drinking beer + wine for 9 mos! But I actually also noted in my head when I typed 9 months – “Hey, that’s how long it takes to grow a human!”
Hannah says
Great minds think alike 😉
Katie says
I love your post title-gave me a giggle! 🙂
Lauren says
So, one of my friends and I had an “oatmeal night” a couple of days ago, during which I made her your banana whipped oats topped with peanut butter and a tsp of crofter’s. She’s in love. Just thought you should know you gave us the means for a fun, delicious night 🙂
KathEats says
Oatmeal night – how fun!
Lauren @ Lettuce Eat Cake says
For the record, I think you’ve done an AMAZING job keeping up the blog with everything else going on in your life right now. I don’t understand how you still manage three posts every single day. I’m new to the blogging world, and I’m afraid my posting is still somewhat inconsistent. However, in a little over a week I’m transitioning to working from home full time, which I hope will give me the flexibility to step up the blogging a notch!
KathEats says
Thanks Lauren!
Anastasia says
I’ve picked up coffee again because of the cold weather as well. It’s so nice to have a hot cup of coffee on a cold day.
Cait @ Beyond Bananas says
Crossing my fingers you will be ready to go by June 3! I have no doubt you can do it.. and all of your hard work will finally pay off!
lynn @ the actor's diet says
wow so soon! exciting times, kath!
Ash @ Good Taste Healthy Me says
I want to try overnight oats. But I need it to be a tad warmer outside before I do. Mornings in the 40’s have me craving hot things still!
Baking 'n' Books says
Congrats on everything so far.
Do you miss not being at your “regular” duties and blogging?? Or do you feel like being “away” from it and starting a new ‘journey’ has changed your interests/mind-set towards it in any way?
I’d love to know!
Kathleen @ KatsHealthCorner says
Your oats are always the BEST! 🙂
Heather says
I give up tea every once in a while – but I always come back to it.
I love it too much.
Anna says
Coffee is totally not the devil. A cup a day is totally okay in my book. Think of the antioxidants! 😉
KathEats says
I totally agree – a cup a day is great. But not when I get dependent and headachy if I don’t have it.
Dmarie says
may your business opening go smoothly and be the beginning of a wonderful phase in life!
Michelle (your girlfriend for fitness) says
Overnight oats has got to be one of the best things since sliced bread 🙂 I almost tried to give up coffee too, but then I realized how much I really love it and the experience of it (is that too much, lol) so know I just try and not go overboard, but I really never want to have to give it up unless it is for health reasons.
Alaina says
Another delicious dish!
I’ll have to make a trip to VA this summer. 😉
Paige @Running Around Normal says
I bet life sure is different right now. June 3rd opening?! So exciting:) Good luck!
Anne @ Baking Me says
I don’t think I could completely give up coffee, but I have switched my usual afternoon cup to tea 🙂
Halley (Blunder Construction) says
Addiction to caffeine is a funny thing. Sometimes I can’t function without it, sometimes I don’t miss it. It’s totally impossible to cut it out completely, if you ask me, so your approach to coffee is good enough! Drink it when you really want it!
AShley says
Love that half mug!! haha 🙂
Susan (Oliepants) says
Overnight oats is my summer-time breakfast friend!! So delicious and refreshing in the morning. 🙂
Justeen @ Blissful Baking says
Greek Yogurt is the best!! I can’t go back to regular yogurt now, after eating Greek for so long!
J3nn (Jenn's Menu and Lifestyle Blog) says
Good luck meeting the June 3rd deadline! I’m sure everything will turn out better than expected. 🙂
Jane says
Question for you about getting ready to open your Great Harvest Bread Co.:
Do you work for three weeks training your employees on how to make/bake bread, create certain recipes, and stocking shelves, etc. (I believe you said the owners come and work with you for the three weeks prior to your actual opening date)?
What will you do with all of the practice loaves of bread that you will be making prior to opening your door to the public?
The bakery looks amazing. This has been really interesting to go through this journey with you and I am wishing you all the very best.
KathEats says
There’s really more like 1 big week of bread baking training, and I honestly don’t know how much bread we will produce. We will be giving out 40-50 gift baskets of bread to the community, so I’m guessing that’s where most of it goes. And we feed the employees sandwiches!
Heather @ Health, Happiness, and Hope says
Love the toppings! And so exciting that the opening is getting so close! Can’t wait to see all your effort pay off! 🙂
Jessica @ Dishin' About Nutrition says
haha I love it – 100% delicious and 100% nutritious!
Allison @ Happy Tales says
So exciting that y’all seem to be on track for your opening 🙂 I bet you’re enjoying being out and about so much for work.
Morgan says
Sometimes a great cup of coffee is just what the day calls for 🙂 Goodluck for June 3rd!!
Hope says
I love the shape of your bowl! It’s so cool looking! These oats look fantastic! I am totally going to make overnight oats for breakfast tomorrow. 🙂
Natalia - a side of simple says
I was looking through some of your first posts and it’s just incredible how much life has changed and developed for you and Matt! SO looking forward to the bakery opening despite being GF and the fact that I’m not exactly local 🙂 Still, I’m thinking it’s going to be quite the occasion!
Namaste Gurl says
Sending good thoughts your way that you and Matt will accomplish what you need to! I have no doubt that you will 😉
Khushboo says
Good you have priorities! At the rate you guys are going, I’m certain you’ll meet your deadline!
Koellagirl says
O.K. I have to say it. I don’t like this bowl at all! 🙂
Everytime I see it, my first thought is an athletic cup for males. Maybe it’s from living with 3 males and having grown up with another 3.
The food always looks good. Just not in that bowl. Love your site Kath.
KathEats says
omg…ha. I guess it does look like a cup!
laura says
hahah i thought the same thing!
The Healthy Engineer says
I can’t wait until I go home and try out overnight oats…every time a blogger posts it, I get all hungry even though I just ate breakfast. Sometimes my usual breakfast of oatmeal, eggs and fruit can get a little blah. 🙁
Hilary says
You are SUCH a trooper…I still think KERF is great, even amidst all your busy-ness. And overnight oats are so perfect for busy mornings!
kaila @ healthy helper! says
Opening is so close! I’m so happy for you guys! Can’t wait to see the finished product…
Kate (What Kate is Cooking) says
I can’t wait to see what the store looks like next month!
Elena @ GagaForGrapefruit says
overnight oats may be one of the greatest breakfasts ever invented! LOVE!
Jen says
Those look like the best overnight oats ever! I have yet to perfect the overnight oats recipe, but one day I’ll get it 😉
Jess @ NZ Girl Runs says
If there is any leftover bread that is just going to be thrown out please consider giving it to the local homeless shelter! The bakery next to my work does it, everynight someone comes in to collect anything that can’t be sold the next day. A great way to give back to the community, and if it was going in the bin/compost anyways then its not a loss, its a ‘warm fuzzies’ gain!
KathEats says
Absolutely!! We would never throw it away. We are 2 blocks from the Thomas Jefferson Food Bank
Jess @ NZ Girl Runs says
Fantastic!
Ellie @ The Mommyist says
I don’t think I could give up coffee. Not because I’m addicted, just because I really enjoy it. Tea just isn’t the same.
Molly says
This title alone cracked me up!! And I love LOVE the bicylce placemat!
Christie says
Its so exciting for you – its been very inspiring following your bakery set-up progress!
And don’t worry, your blog posts are still fabulous. I always look forward to reading your blog every single day!
Chelsea @ One Healthy Munchkin says
I’m so impressed that you’ve managed to blog at all, considering your busy schedule lately. You must have time management down to a science!
Emma (Namaste Everyday) says
I don’t like how the world seems to be divided into coffee junkies and coffee haters. Can’t we have just normal coffee drinkers who have it maybe 4 times a week?
