Paperwhite update!!! I got a bulb kit for Christmas and growing these was effortless! Just put in dirt and watch them grow. So cool! They smell just like my grandmother’s house, as she always has plants all around.
Getting up was easy this morning because it wasn’t freezing cold! We’ve got a moderate 54* and warming as we speak. Unfortunately there is some rain in the forecast, but I’ll take some rain for some 70s.
I had a great well-rounded workout today: 26 minutes on the Stepmill, 20 on the Squirrelliptical and ~15 weight lifting (biceps, shoulders, delts, triceps, abs). Sweet!
Since I’ve been having “no cook” breakfasts on Wednesdays and Fridays, I thought today I’d make a sandwich! The husband brought home a new low-carb bread, although it needs a need name because low-carb is not appealing! I’m going to call it French Toast Bread because it is made with egg and tofu and has a mild french toast eggy taste.
So I made a Barney Butter + Banana Sandwich!
~1.5 tbsp BB and 1/2 a banana
Plus oranges. You guys have asked me if the blog influences what I eat? Not really, but today I decided to add a few orange slices for no reason other than their bright color would look good in the photos!
And lastly I had a bowl of yogurt with blueberries, walnuts and almonds. This was the last of my TJ’s Euro yogurt (~1/3 cup).
+ Butterscotch Toffee.
Test time!! It’s hard to know if I am ready. Food Science and nutrition are “my subjects” so I can’t tell if I really know this stuff or not. When studying something like Organic chem, I know I don’t know any of it and must memorize it all, but I know so many bits and pieces about nutrition and cooking that it’s hard to tell if I really know this stuff. Guess I’ll just have to go with my gut, which is full of nutritious food at the moment!

Oh, and I meant to add that this breakfast took me LONGER to assemble than it takes for me to make a small pot of oatmeal!! Too many components, plus coffee. Oatmeal is more hands-off!

i eat banana & almond butter (my love) almost every day in some form or another… in oatmeal, as a sandwich, as a banana-sandwich (no bread), or my favorite, open-faced atop an ezekiel 4:9 english muffin. in fact, i just finished that 15 minutes ago for my breakfast… pictures posted on my blog!

Lovely photos! I find myself adding certain foods to images to pump up the color too…I think its good not only for the photos but also to ensure I’m getting as many nutrients as possible! 🙂

But butter and banana sandwiches are amazing. If you have a foreman grill or paninni press I highly suggest you try warming up the sandwich in it, it’s so good.

I force-bloom paper whites yearly and they look and smell awesome.
I get a flat dish and layer it with marbles. add paper white bulbs on top and they bloom making a beautiful centerpiece.

Hey Kath, I asked this question on a couple other blogs, but due to your knowledge from studying to be an RD, I wanted to get your thoughts on this.
I exercise first thing in the morning Mon-Fri. Typically I have a half of a banana w/pb and then eat breakfast later, but I’ve been wondering if on days my workouts are somewhat shorter, I can skip the pre-workout snack or if it’s bad for my metabolism. So, say maybe I wake up at 6:45, go on a 45 minute run, get ready for work and have breakfast by 8:45. So about two hours. On days I don’t wake up hungry and am out the door running right away, is this ok to do or is waiting two hours to eat breakfast harmful to my metabolism?

This post produced a growl from my tummy. Must be time for lunch! I did a no-cook breakfast myself this morning. Decided to do an experiment and make a breakfast ‘pie’ with a quinoa ‘crust’ and a pumpkin-protein powder ‘filling.’ It turned out so awesome! I will dream of it…until I heat up lunch.

I’d estimate about 500-550 for this breakfast. Might seem high, but that’s 1/3 of my day and will keep me running for 5 hours, so it’s cool. If you’re not familiar with portion sizes and calories you probably do want to spend some time measuring things so you know what the portion looks like in your own dishes. Food scales are the most accurate, but you don’t have to use one; they are just easier IMO because they don’t require cleaning like measuring cups do. Once you get an idea of portion sizes and calorie counts, then you can just eyeball the amount and do a calorie estimate instead of being more specific.

That’s exactly what I do. Not eating a snack before a workout won’t harm your metabolism – if you notice anything at all, you might have a little less energy on your run. But, unless an empty stomach is going to make you feel sick, there’s no reason that you need to have a snack before you workout if your workouts are less than 60-90 minutes, as you likely have enough stored glycogen to get you through those two hours. Just be sure to refuel afterwards with breakfast.
