Matt outdid himself!!! Our Monday pancake tradition is just getting underway and whadda know, this is the last Monday at our house!!
Today’s featured flavors were: Butterscotch chips, chia seeds, pecans, and raisins!
All gussied up
Maranatha choco melt!
A little coconut butter, banana and Biscoff. I need to be at work super early this week and needed a breakfast to last me from 6-12:30! I ended up eating 3.6/4 today
With a cup of awakening juice:
This is how things were left last night:
[Apparently I’m in trouble for having so many clothes!]
His Goodwill pile
The house is in shambles but I don’t care! 5 days till D-day.

Freya @ Brit Chick Runs says
Amazing breakfast!! I have a pancake craving now 😛 Have a fab day!
Marilou @ Mostly Healthy says
Husband of the year! Wow!
I’m SO with you with the clothing thing! Me too I had to sort through it all before moving and it’s always the worst! You never know when you’ll need that shirt (that you never wore and probably never will) but YOU KNOW! 🙂 Good luck!
Anna @ Newlywed, Newly Veg says
Awww…moving is always so bittersweet! (and HECTIC!!!!) Good luck with the move!
On a (weird) sidenote– I was watching a youtube clip of the California Dreams reunion (!!!!!!!!) on Jimmy Fallon, and I’m not sure if you watched that show growing up (I was obsessed with it…along with my Nickelodeon faves), but the guy who played Matt on the show now looks like YOUR Matt in real life! Y’all need to check it out, ha!
Kath says
I don’t know that show or that guy!
Laura @ youngDCliving says
Yummmm…I need me some Kodiak mix. Hope you enjoy your last few days in the house! Can’t wait to see pictures of your new place later.
And..wow! You have so many clothes! Haha
Cara says
That’s a lovely Monday tradition. A great way to start the week, especially when it’s made for you!
Simply Life says
yummy breakfast!
Sarah (Running to Slow Things Down) says
The pancakes look superb!! I love that you have a pancake tradition going. What a great (tasty) idea. 😀
The house will be cleared out before you know it. I can’t believe how much work you guys have gotten done in such a short amount of time!
Lindsay @ Summit Sandwiches says
You’re so close to moving! Crazy how the time is almost here….and that marantha choco spread looks so flipping good. I need some more chocolate-y spreads in my life. 🙂
Samantha Angela @ Bikini Birthday says
Pancake Monday is an awesome tradition. I wish I could get up early enough to make pancakes in the morning.
Mary @ Bites and Bliss says
Awesome way to get the Monday going! The house is in shambles right now but in no time it’ll be like a brand new house on the market- so neat and tidy.
Stacey@http://stacey-healthylife.blogspot.com/ says
Why how time fly’s. Those pancakes are amazing. I have a Monday pancake tradition also, it’s a good way to start the week.
Sarena (The Non-Dairy Queen) says
I love the pancake variety! That is awesome! Nothing like having such tasty options for breakfast. Have a great Monday!
Brittany says
Wow Matt’s pancakes look amazing! I can’t believe this is the last Monday in your house – for some reason I thought you all were moving in August. Was the date moved up?
Veggielady4life says
What a WONDERFUL Monday morning breakfast! Now worries about the messy house! At least you sold it! Hope you have a great Monday!
Veggielady4life says
**No worries… 🙂
Ellie says
Love the crazy pancake game! Good luck with the moving- I know it can really be stressful
RhodeyGirl Tests says
Not sure how much of those clothes are going into the Pod, but whatever doesn’t has a very easy packing solution- buy some BIG garbage bags, poke a hole in the bottom and use like a drycleaning bag. Keep like items together and then just label with a quick tag or post it!
Kath says
Brilliant, you are!
Cassie @ A Very Busy Mind says
GEEZ! Pancake Heaven right there, Kath.
Aaahhh moving so soon! So exciting!
Chelsea @ One Healthy Munchkin says
That looks like the BEST way to start a Monday! I love how he does them all in different flavours. 😀
Kristin (Salty Tooth) says
Yum! Could Matt come to my house and cook for me? 🙂
Daniel says
Another fantastic pancake display! Too bad pancakes never quite fill me up. :\
Also, I think I’m getting hooked on fancy dinnerware because of blogs and I even asked my parents to help me find a “place that sellls fancy spoons,” and then I showed them some of the awesome longer ones you have.
Is that normal for a 19-year-old kid? 😛
Jessica @ The Process of Healing says
Those pancakes look SERIOUSLY amazing!!!!!
Marissa says
Wow, amazing pancakes! Matt gets a lot of credit; I barely have the patience to make one serving of plain pancakes–much less make two servings with 4 different kinds! And that’s a great attitude to have about the house! Sadly, I am not moving and my house is in shambles as well because for some reason I didn’t clean very much this weekend and I have to go get a jump on that now…
Hannah says
Obviously you weren’t in *too* much trouble – check out those pancakes! My heavens, I’ve never been interested in pancakes, but those look too good to be true!
Marla says
How does Matt make all the diff type pancakes-does her keep the made ones in oven to stay heated? Looks complicated and would love to knwo how he manages all those diff flavours!!!
Matt says
I just make up one batch of Great Harvest pancake mix (makes 8 cakes), and then as I plop each cake on the griddle I top it with fun stuff. Then you flip and it all gets mixed in nicely.
Marla says
Thanks! (but still impressed!) 😉
The Robertsons of Mumbai says
Hi Kath! I am new to your blog, and just love the pancake photos! Yum! I had to laugh at the piles of clothes – my husband and I just moved last week, and I can SOOOOOO relate! The clothes are such a pain to purge and deal with. Ug. So many good and bad feelings associated with women toward their clothes…
Kath says
Welcome!!
Gavi @ GaviGetsGoing! says
How lovely to have such a variety of flavors! Chia seed pancakes sound very interesting, and I may need to give them a whirl. Hope the pancakes tide you over!
Melissa @ For the Love of Health says
OMG! Those pancakes look like Heaven!!
Good luck packing!!
Chelsey says
Those pancakes look awesome! I think maybe pancakes are in my near future…
Wei-Wei says
Wow. Butterscotch chips?! That sounds like absolute heaven to me! I can’t believe it’s the last (pancake) monday in your house! Best of luck with the move, again 🙂 I hope you have a great Monday!
Wei-Wei
Brittany @ A Healthy Slice of Life says
Moving can be such a pain (I’ve done it twice in the past year :P), but it’s all worth it once you settle in to your new home! Good luck! 🙂
Stacie @ Imperfectly Healthy says
We move in a few weeks to a new place with just two small closets. I am so nervous about how we’re possibly going to make it work! I have almost as much clothing as you do and that’s not counting the husband’s stuff! Eeek!
Jess @ MTL Veggie says
Wow, you’re so much more organized with moving than I ever will be.. I’ve moved about 8 or 9 times in the past 8 years and it usually involves me pulling an all nighter the night before, chucking stuff in bins and boxes and hoping for the best. Your pancakes look awesome- hope they tide you over till lunch time 🙂
Lauren (Clean Eats in the Dirty South) says
just want to say that those butterscotch pancakes look AMAZING. and now i’m inspired!
Amanda @ Cakes and Ale says
I donated so many clothes to Salvation Army when we moved last month… it felt so good to purge! I had so much stuff I never wore anymore, and I hated the idea of packing up things I never used. I’d much rather have someone else benefit from them!
Kathleen says
All I can say is YUM!!
sweetersalt says
Yum – I love small pancakes because you can eat each one a different way. Super fun.
Heather (Heather's Dish) says
that’s so crazy it’s y’alls last monday! those pancakes look killer 🙂
The Wife of a Dairyman says
Butterscotch chips in your pancakes look delicious! I must try:) As always, thanks for the great recipe tips!
Amber K says
Breakfasts never last me that long! Holy cow. Usually, it isn’t my stomach that needs the food first, it is the lightheaded fog I can get.
Kath says
I bet they would if you packed in like 500+ calories 🙂
maxinthegym says
Enjoy your last Monday! The pancakes look amayze! I hope my future husband can cook and bake like yours 😀
Sydney says
Those sure are some beautiful, thick, luscious looking pancakes! I always think it’s cute when the husband is the breakfast-maker of the house 🙂 Maybe it’s just because my daddy was always the one who made breakfast. (Mostly because Mom always slept in late on weekends!)
Callie says
Those pancakes look so good. 🙂
Have a great last Monday.
Melissa @ HerGreenLife says
We made a big batch of pancakes last weekend and threw some in the freezer to enjoy throughout the week — just had one with homemade blueberry sauce 🙂
For a great homemade “real food” pancake mix, check out the Quick Mix recipe in Francis Moore Lappe’s book/cookbook, “Diet for a Small Planet.” It works for pancakes, waffles, and even coffeecake. We mix up a big batch to have on hand for breakfasts — fast, delicious, healthy, and more affordable than buying premixed. I play around and substitute ground flax, almond meal, corn meal, and other flours to add variety to the Quick Mix.
Diana @ frontyardfoodie says
Whoa! That’s an intense breakfast! So adorable that he makes breakfast. I love it! I’m more of the morning person in my marriage and find it perfectly delightful to make breakfast for my sleepy hubby and I think I’d have a heart attack if he got up and made breakfast!
Laura says
Eeeeeek, time has gone so fast regarding this count down to move out day!! MADNESS!! I hope you enjoyed the last Monday in your house! i’m sure those delicious looking pancakes made your day a hell of a lot more enjoyable!!
hahaha i laughed at your clothes pictures!! my drawers arel ike that! i have WAY too many clothes yet i seem to wear the same 3/4 outfits and combos all the time!! i just can’t be bothered to sort my clothes out! xx
Meagan says
Where is your Goodwill pile? HAHA!
Kath says
Haha – already neatly put into the trunk!! My pile was 10x as large
Samantha says
Golly I’m excited for you! Is Matt all done with work?????
HeatherBakes says
Looks like you’ve made a big dent in the packing!! I can’t believe y’all are moving so soon.
I’ve gotta get some of that Biscoff spread. Yummmm.
Camille says
Fabulous looking pancakes!
Cleaning out clothes is so nice! It is always amazing to see how much stuff you don’t need!
Kelly says
I get in “trouble” periodically for having too many clothes. Guys don’t understand that a girl needs some variety. 🙂 Every time I move Goodwill makes out like a bandit.
Kerri says
I hate packing, but it looks like you are making progress.
Courtney @ Sweet Tooth, Sweet Life says
Awwww MAN! Now I’m totally craving pancakes!! 😉
Love the variety!
Rachel @ Fit Fun and Fabulous says
And now I need some pancakes!
Allie says
A whole pancake shmorgishborg! Matt is the best 🙂
Allison K says
Moving is so great for consolidating and cleaning out!
This weekend we are moving my in-laws across town. THey haven’t moved in 27 years….
so.much.stuff.
Beth @ DiningAndDishing says
Pancake Monday is such a wonderful idea! I usually reserve pancakes for the weekend but what better way to kick off the week than with the most delicious breakfast food?? Love the flavor varieties you guys did 🙂
jassy says
pancakes…banana…oh i love them 🙂
lynn (The Actors Diet) says
yay matt! just catching up on all your posts – your life seems as bananas as mine is (and yours doesn’t seem to stop!) looks like you’re balancing it all out lovely!
Michelle @ Give Me the Almond Butter says
Ahhh I love all of the nut butters on those pancakes! Absolute divine 🙂
Susan says
I was in trouble for having too many shoes!
Cynthia (It All Changes) says
I’d be extremely worried if you could keep your house in order while moving. Pulling everything out to see what goes and stays is the best part. It will serve you well.
And new traditions are great. Making things that are part of your family life are fun.
Helen says
Loving the pancakes, that sounds like a great tradition! You do have a lot of clothes…..but I think I do too and I always say I have nothing to wear!
Heather says
the food looks awesome! I hear ya on too many clothes!
Jessica Gilbert says
Just wanted to note that we are moving on the same day! I know exactly how you feel. Except we have to move in with the inlaws for 2 weeks until we close on our house.
@stampylisa says
mmmmmmmmmmmmmmm where on earth do you purchase Biscoff spread?? that looks scrumptious!!
Caroline says
I’ll take a few of those butterscotch pancakes, please!
Elli D. says
Good luck with the moving! Your house is actually in a pretty good state – it is not that messy considering you are packing. As for the boxes(yes I know, boxes are absolutely everywhere) – try to write down which is in each of them, it will be much easier. Oh, and the pancakes look so tasty, it is making me hungry.
