I am obsessed with the neon/bright colored foods on Instagram. Hot pink (dragon fruit), mermaid blue, neon colored. Accounts like this and this and this. My talents involve stirring seaweed into overnight oats
But I try! Let’s be honest, I bought this blue majik more for the color than the health benefits of spirulina. But it is so pretty! I’m also thinking about ordering a matcha set from this matcha company or from Unicorn Superfoods! Imagine the possibilities. Maybe one day I’ll find some edible flowers or make seashell molds made of coconut butter. (Can someone tell me how to make your frozen berries get that frosted look?! My frozen berries just look soggy…)
This breakfast filled me up easily through lunch. It was made with overnight oats (basic oats/milk/greek yogurt mix) with chia seeds, blue majik stirred in, nectarine, and blueberry.
In other blue news, you might have seen that I bought a second pair of Rothy’s! I LOVE my Rothy’s. They are the only shoes I have ever owned to get compliments at an airport. I’ve had my gray heather rounded toe Rothy’s for over a year, and seriously LIVE in them. I had some trouble with stink over the winter and I did all of the de-stinking tricks I knew: a few days in a bag with baking soda, a good machine wash, dry in the sunshine for a day, a few drops of essential oils, and they’ve been great ever since. The flats are made from recycled water bottles, are totally durable, machine washable, and so far for me – blister proof! Also super comfortable. So a few weeks ago I bought an aqua pair. I wanted the opposite style from my everyday grays – something pointed, dressy, and bright. They have a neon pink too – I almost got them! These flats are not cheap, but I PROMISE you will love them! I’d say that the rounded toe is slightly more comfortable for every day, but I love the points too.
Hope you guys are having a great week full of blue pools, blue oceans, and blueberries!

Do the Rothys run true to size? They look really comfortable.
KathEats says
Yes I’m a solid 8
Ella says
do you find them to be narrow or wide or normal? I have oh so slightly wide feet and it’s always a challenge finding cute but nice flats (and heels).
KathEats says
I would say normal. I have slightly wide feet too and they have molded very well to fit them perfectly.
Tonya says
I, too, am looking for the answer to that frozen berry trick. I’ve never seen them before today, yet now I am obsessed and MUST KNOW!
KathEats says
I think the answer is freeze fresh berries but I’m not sure!
Tonya says
They just don’t look like normal frozen berries. they have that artistic frostiness. Maybe it’s just a filter.
KathEats says
I don’t think a filter – see response below!
KathEats says
“Frosted berries” is what they’re called! http://fruit-fairy.com/2017/12/21/achieve-frosty-berries-look-frozen-berries-tutorial/
KathEats says
Now the debate is do I go out and buy food friendly tweezers
Tonya says
haha! see this is why I’m not on Pinterest. I’d have a million ideas and I would never even execute them.
KathEats says
I just got sucked into watching smoothie bowl you tube videos for 15 minutes!! 🙂
Katherine says
I’ve used them as decoration on Instagram posts before, and you have to work very fast! Also wooden tongs are best for handling the berries. If they start to thaw in different places, before you get a photo, just drop some water on the whole berry with a q-tip. They won’t have the frost anymore, but they will have a very pretty glossy sheen.
KathEats says
Cool!!

I’ve had horrible stink issues with my Rothy’s. I’ve washed them a few times and they always start to smell again on the first wear. Such a disappointment!
KathEats says
I had the same problem. I did a combination of baking soda (2-3 days in a ziplock bag covered in BS), machine wash, essential oils and a 2 day sun soak and mine have been good ever since. I’m not sure which did the trick, but it might have been a combo.
Suzanne says
No show socks help a ton!
Samantha says
Try Gekks – they’re magical and fixed the smell problem with my Rothys. It’s a no-show liner that sticks in the shoe and it’s antimicrobial. I tried washing my Rothys, baking soda and vinegar and nothing really worked until I got a pair of Gekks.
KathEats says
Now those are some good no show socks!
Kate says
Frozen berries: take fresh berries (don’t wash them) and place them in the freezer for 30 minutes. Voila! Frosted berries. Use a tweezers to place them so your fingers don’t unfrost them. 🙂
KathEats says
Thank you!!
Kaci says
Those shoes are adorable!! Also, I love the bottoms of your pants (am I a weirdo for noticing them? yes I’m sure I am ha).
KathEats says
Haha they are Athleta joggers!
Kori says
Kase, you’re always so perceptive, and I love it! I didn’t notice your pants at first, Kath, but they are cute. I LOVE those shoes!! Give me all the blue/teal/turquoise in my life. 🙂
jenny says
Have you seen these? Cville brand looking a lot like Rothy’s. https://www.indiegogo.com/projects/the-dream-flat-by-oesh-shoes-women#/
KathEats says
Oh I haven’t seen those! So cool they’re right here. They do look like Rothy’s with a much more substantial sole. I’m going to have to read more about them.
Jenny says
Can you get us a Rothy’s discount???
KathEats says
Sure this is the $20 off code.
Katherine says
The color of your mermaid oats is so pretty! I’ve used both Blue.Matcha and Unicorn Superfoods and love them. Great companies and very nice people too!
@smoothiebowls does have a gorgeous account, and they’ll sometimes regram your posts. (although they have to be only plant based). They definitely love unicorn and mermaid bowls
And speaking of love… I adore the color and style of your Rothy’s, and they really look great on your feet!
KathEats says
I’m thinking about buying the Unicorn Superfoods! Do you use all the colors?
Katherine says
I already had a bunch of blue colored powders (spirulina, butterfly tea, etc) and the beet powder from two other companies, so I had them send me the Pink Pitaya powder and the Black Goji Powder.
I don’t think comments will allow me to put links in here, or I would send you some to show you how those colors turned out. I color rice, oatmeal, chia pudding, nice cream, smoothies, pancakes, and so many other things with the powders.
You can experiment with different amounts to change the hues, and you can also mix different colored powders to make completely new ones. Also add lemon juice to butterfly tea (blue matcha), and you’ll turn it purple.
Actually if you really want to see some of the different colors, you can click on my website link. Then click on my Instagram link on the right side of the blog. Just choose any of the colored food posts to see what product I used. It’s listed at the top of each in the description. I haven’t been on since last November, but the posts are still up.
KathEats says
Awesome! I’ll check them out!

I love my Rothy’s too! I bought them for a stylish yet comfy shoe to wear on a trip to Italy. I have the red pointy toe ones and they are gorgeous! I walked so many miles in those shoes and never one blister ( they were brand new as well!)

I found this re: the frosty berries!! http://fruit-fairy.com/2017/12/21/achieve-frosty-berries-look-frozen-berries-tutorial/
KathEats says
I read that whole post – giving it a go!

Super late commenting, because I have been TOO BUSY BUYING ROTHYS. Oh my gosh. I’d been looking for a comfy ballet flat (my feet/knees don’t like pointed toe shoes, even though they are darling) and soooo often end up buying pair after pair because they get scuffed, smell, etc. After this post, I bought a pair in black. Week later, cherry red and neon pink. Three weeks later, emerald, navy, lemondrop (I’m done now). Thanks for posting about these. They are amazing, adorable, and hellooooo washable. Thanks again. 🙂 All best wishes!
