I rarely take a bite out of muffins. I just think it’s a waste! Like eating a whole dinner in one bite.
Crumbled on top of something is how I think all muffins should be served : )
After yesterday’s batch of Oat Blueberry Muffins (100% whole wheat!) we had to involve them with breakfast. But we both woke up a little dehydrated, so a yogurt + muffin bowl was more appealing than heavier oats.
The Mix
- 1 cup low-fat plain organic yogurt (I usually get Whole Foods brand, but since I went to Integral Yoga I got the Seven Stars Farm brand. I do not like it at all. WF is thicker and not sour, this one is jiggly like watery jello and very sour.
- 1/2 banana
- Strawberry Jam
- Chia seeds
- A mix of: Puffed quinoa, toasted buckwheat, Hemp Plus granola
- MUFFIN!!
- Sunflower butter drizzle. Best. nutbutter. ever.
Like my Daily Garnish!?
Rooibos. This Whole Foods brand one is too spicy for me.
.
I’m hoping to spend lots of time outside today!! Matt’s doing more test baking this afternoon. I really want to see Water For Elephants but I haven’t been able to find the time! MAYBE today? Any Cvillians want to go?

Happy Sunday Morning….making french toast this morning, after seeing it a few weeks ago on your blog, you inspired me! Thanks so much, enjoy your day outside!
Giving my best to Karen & Matt…..you all are such a pleasure to follow

Thanks Lynda 🙂

I love crumbling muffins on breakfast too…You get to enjoy mini muffins in every bite!!! But I absolutely do love to eat them whole too 😉 Whole Wheat & Bran Strawberry Rhubarb will be my creation today…Can’t wait!
I want to see water for elephants too but there is just no way I can wrangle my hubby into going with me…Perhaps if I told him The Rock or Hulk Hogan was in it? 😉
Nikita says
Muffins definitely make a better topping than breakfast in and of themselves! Where do you find puffed quinoa?
KathEats says
See yesterday’s grocery shopping post!

Just wondering if you have ever thought of rolling your own oats. I attended a presentation at my church on food storage and usage and our speaker was very passionate about freshly ground grains. She grinds all her own grains herself and talked about keeping all the nutrients intact until the last second.
I had her roll me some oats and they were de-licious!!! Very creamy and fresh tasting. I do grind my own whole wheat but had never even heard of rolling your own oats. There is a kitchen aid attachment that is now on my Christmas list.
I of course thought of you since, you know- it’s OATMEAL!!!!
KathEats says
That’s one of those things that I’d rather leave to the professionals..
Marie@feedingfive says
It’s not difficult at all. You just put the oats in and out they come a minute later rolled. I am not so much into the freshness aspect, although that is appealing, but keeping all the nutrients intact until the very end. Since my husband, myself, and my 3 kids eat them quite a bit I would like them as nutrient dense as possible.
I am happy to freshly grind my wheat & flax. I am just excited to learn more and incorporate completely whole grains until I want them ground, into my diet.
KathEats says
Do you need a special roller? That’s one of those things I say “When I have a big kitchen someday…” The freshness would be a perk
Marie@feedingfive says
Yes, it’ one of the many attachments you can buy for a Kitchenaid. They are about $130, and not big at all. I am not into unnecessary kitchen gadgets, but I love grinding my own wheat and hope to incorporate more freshly ground grains. I’ve heard grinding your own corn makes incredible cornmeal. Not for everyone, but I eat very simply and feel I can save money by buying grains in bulk (as I am sure you will get very familiar with having a bakery) and grinding them myself.
If you have a Kitchenaid I am sure the company would love to give you a roller seeing as you represent all things Oatmeal so well. And again, Love, love your blog. So inspiring.
KathEats says
Cool! Thanks so much for the info

I love Muffins crumbled into oats and yogurt! Or anything really. Lately, I’ve been doing it with Carrot Cake. “O’Dough’s” makes a really good frozen one and I just cut it off frozen – so good!
Freya (Brit Chick Runs) says
That bowl is soo gorgeous – where’s it from? It has such rustic charm 😀
I’m the other way with muffins and general stuff on top of oats – I feel the intense flavour gets lost if it gets mixed in, so I’d prefer it in its’ pure strong glory!
KathEats says
Thanks – a family friend made it
Jenny @ Fitness Health and Food says
I haven’t seen WFE but the book was wonderful.
I hope you get outside and get to see it!
Best wishes to Matt for his baking! 🙂

Crumbled muffins are the bomb! My favorite way to crumble them in atop a cold smoothie and drizzled with some coconut butter. Mmmmm… 🙂

Enjoy the movie and any future baking taste testing.

At first I thought that was broccoli in there (I didn’t see the white part). Phew! That would have been a weird combo!
Sara @ myfancytuna.blogspot.com says
Water for Elephants is EXCELLENT! Christoph Waltz is amazing, as always, and Rob Pattinson is surprisingly good, too! It wasn’t my favorite performance of Reese’s, but she certainly looked the part…the movie was such a breath of fresh air from all of the CGI, big explosion mess movies that seem to pervade movie theaters nowadays.
Erin (Travel, Eat, Repeat) says
I love crumbling muffin on yogurt/cereal/oats so that you get a little bit of muffin in every bite. I do the same with sweet breads (pumpkin, banana) too and it’s a fun treat.
Liz @ Tip Top Shape says
You know, I’ve never crumbled a muffin into my yogurt or oatmeal. It never even occurred to me to do that!
Kate (What Kate is Cooking) says
I never thought to crumble muffins into yogurt, but now I make muffins specifically to do that 🙂

Such a good movie! I read the book and then went to watch the movie.

I love spicy food but not spicy tea..it gives me heartburn. I sound old.. lol Not usually a Rooibos fan yet I can drink ridic strong coffee and be fine. Go figure.
Love the muffin crumble and I agree, it’s a better way to stretch out the yumminess.
Khushboo says
I totally agree about muffins! Water for Elephants is a must-see, loved it!

Hope you get to play outside 🙂 Sun finally peaked out here in Colorado, so we are heading on a hike — yay Sunday!

It’s amazing how varied tastebuds are- I like the WF yogurt because I think it’s sour, while the Seven Stars was a little bland for me. Crazy how we’re opposite!
I also now want to make muffins to crumble on my yogurt. It sounds like a nice change from the usual granola.
Jess @ atasteofconfidence says
The movie is pretty good!
kristi (sweet cheeks) says
mmm muffins! I agree with your serving technique. Give me just a muffin and I’ll want something more 5 minutes later.
I hope you get to see Water for Elephants. I have been dieing to see it!
Morgan @ moments of mmm says
Really want to go see that movie as well! I have heard good reviews from both the book readers and non-readers. When it comes to movies though, I usually just wait till it comes to redbox. I just hate the thought of a wasted hour and half of my life and not to mention 10 dollars!
Abby says
Water for Elephants is such a great movie! Enjoy your Sunday! 🙂

I want to see the movie…but I don’t live in Cville. sorry!
But your b-fast looks yumm! I love crumbling stuff on top of my b-fast bowls 🙂

i’m curious to see the movie too. i know someone who worked on it and said they had to airbrush every single scene with a certain leading lady to make her look younger. am wondering what it ended up looking like…
KathEats says
Oh bummer. I love Reese!

Have you seen The Man In the Moon? Reese Witherspoon is in it when she was young. It’s one of my favorite movies.

Happy Sunday!
I ran a 5k yesterday and was so excited that it was just minutes from a Great Harvest Bakery. Cinnamon Chip is A-MAZING! No wonder it is a big hit at your slicing events!
I could not have been more pleased to take home 2 loaves of High Five Fiber and a Multigrain.
Does each Great Harvest get to decide the “menu” and shapes of the loaves?
Wish I could open a Great Harvest, but MN is full!
KathEats says
Wheee!
yes, the menu is up to each store

I like muffins and yogurt, too, but I usually cut my muffin into quarters and put it on a plate, and glop yogurt over the top. I do the same with coffee cake. It all started after I went to South Africa and someone served us this date cake with custard drizzled over the top, and it was so good I like to re-create the sensation!

Hi there Kath!! Firstly, I just wanna mention – I l.o.v.e reading your blog – to be honest, I consider myself hooked 🙂 it’s always entertaining and you always provide me with recipe inspirations when it comes to brekkie and dinners!
I live in South Africa, so the time zones are completely back to front – so i end up catching up on your breakfast posts at my dinner time etc, but it’s quite handy as i can implement your ideas that evening for my morning oats 🙂
I see you often drink Rooibosm but you don’t seem to catch on to the taste? or get hold of a good blend? being from S.Africa and Rooibos originating from here, I would like to send you a few local blends and brands to give you a REAL tasty experience!! I myself love teas , so it would only be my pleasure! 🙂
If you would like a REAL South African Rooibos tea experience please pop me a mail and i will send you a nice variety as a gift – 🙂
Rooibos is such a healthy bev with an abundance of health advantages and has so many uses other than just pleasing the tastebuds!
examples:
beauty tricks…..
revitalise those baggy eyes or dark circles under the eyes after a long night by brewing two tea bags as normal and then cool the tea bags down in the fridge for a few minutes unitl cool and place on your eyes for a few minutes. the antioxidants and Q10 in rooibos instantly revitalises and refreshes the area and reduces the puffiness
you can also empty a few tea bags and mix with brown organic sugar and a splash of rose water for a refreshing facial scrub or even body scrub.
for mummy and baby:
it is also the best tea for babies – if you have a little one with colic , brew them a nice bottle of rooibos tea and let it cool to the right temp for them and let them drink that.
it also aids in a good nights sleep for both adults and children alike – i blend rooibos and chamomile in the evening with a dash of honey
for cooking:
infuse the deeep flavour into your cooking for awesome flavour = particularly good when infused into desserts . goes well with apples, pears, berries… combine it with cinnamon and honey
on the meaty front – use it with the likes of chicken and pork….
anyway, i could go on forever, but enough rambling on for now 🙂
pls send me ur details kath and i will send off a parcel for you…
have an awesome sunday – mine almost done and dusted and bedtime soon for me on this side of the pond…
hope to hear from you !!
KathEats says
Hey Sonnett! I love the Rooibos they have at Starbucks – I think the kind I got is just not my cup of tea! Thanks for the info
Sonnett says
hi Kath…. yeah, it is because SB makes the effort to import high quality tea … no SB over here unfortunately, but i do remember when i lived in the /uk for a few yrs that was the only rooibos i could stomach as the other coffee shops didnt care for quality… there is one particular fave i wanna send to you as i am not sure if starbucks serves it or if u can get hold of it over there…. RedEspresso….it is awesome! it is rooibos but in espresso form – caffeine free and tasty!! btw…. try soaking your oatmeal overnight in a rooibos/chai infusion! very tasty …..

I went wild yesterday and had a green smoothie with a zucchini muffin from GH crumbled on top–sounds wierd, but it worked. Thought of your siab’s though!
Chelsea @ One Healthy Munchkin says
I agree – when I eat muffins just by biting into them, they’re gone way too quickly! But when I crumble them into breakfast they last for a lot longer. 😀
Hannah says
That breakfast looks so pretty!
Katherina @ Zephyr Runs says
Rooibos is the one type of tea I could keep drinking daily and not get sick of it. We have a really good rooibos at the cafe where I work that’s a chai, but it’s not as spicy as a traditional chai. It has ginger, dandelion root, cinnamon, coconut, and black pepper blended with vanilla rooibos. It’s our most popular blend! PS this breakfast looks scrumptious!
Mackenzie @ Eat. Exercise. Evolve says
I love how picky you are about teas yet you still drink them. That’s not a negative comment! I’m glad you do not waste food/drink! One of my proudest moments is eating enchiladas in Mexico and when my mom asked how they were, I said, “Disgusting.” She asked why I ate them, and I said because I didn’t want to waste food. I was 7 (?) years old!
More power to you. I am a tea aficionado. If you like coconut I recommend: http://www.serendipitea.com/Details.aspx?productID=548&CategoryID=5
It’s Zen in a tea cup.

I’ve been wanting to see WFE – it looks fantastic! and that breakfast looks fantastic, and it’s really amazing to me how different dairy products can taste or how different their textures can be from brand to brand.
