I promise I don’t have many more mystery recipes to make!
Today’s was a fabulous bean salad. You can probably guess some of the other ingredients – wish I could share them all!
On the side I had a big plate of kale chips with ketchup!
And a big ol’ plumble jumble!
This morning’s oatmeal kept me from getting hungry all morning. I probably could have gone longer until lunch (which I ate around 2pm) but I was a little hungry and decided to just have it so I could move on with more projects!
Guest Appearance: Anne P.
Here’s an open invite for some of you to be featured on KERF!! If you have any fun lunches or creative designs, email your photos my way along with a description and your location. I can’t make any promises, but I’ll make an effort to include some on a regular basis!
Here is Anne’s lunch from the D.C. area.
- A whole wheat pita stuffed with spinach and tuna salad (tuna, celery, dijon mustard, plain FF yogurt, and some balsamic vinagrette)
- A handful of carrots
- Fage with a cut up peach (amazing!!) and blueberries
Love the Sigg water bottle too!

Hey Kath! This website is going through great transformations. Next step would be a forum. What do you think?
I see people love the mystery part. To tell you the truth, I don’t. Can’t wait for that cook book you’re working on… 😉
Keep up the great work!

Hi another Matt!!
Anne P,
No problemo 🙂
Sidi ,
I have thought about trying to figure out some kind of forum, but I guess I feel like the comments sections are a good place for conversation and I’d hate to lose that for a forum. I know the comments can be hard to follow though, so I won’t rule it out. I just don’t have the technology right now to figure out how to add one.

Hi Dickinson people, Kath never knew her but we had an adorable cousin who graduated from Dickinson in something like 1918. Loved it and talked about it all her life. Somewhere in my house I have her “D” pin. Very tiny little pin. Great school!

Can someone please help!? Okay, so I work out about 6 days a week with three of the days doing a body pump class (weight training) with 30-40 mins cardio and the other three doing around 45 mins or more of cardio! I use my heart rate monitor and seem to burn around 400-600 calories each time i exercise. I am 5’5″ and 117 pounds and would like to lose a pound or two or just maintain, but I am so confused on how much to eat and net calories…I read Kath’s explantion and still have no idea! Help would be appreciated!

Love the look of that bean salad! I really like beans, but find I am not to creative and don’t really know how to make them into meals. I look forward to being able to read all these mystery recipes!
Kath says
chelsea ,
Really the best way to get as accurate of a number of calories to eat each day is to see an R.D. who can do a complete evaluation of your diet and exercise habits. Any chance you could see one? I found it very helpful when I did. If not, a site I like a lot is http://www.Caloriesperhour.com. The BMR/RMR calculators there are the best on the internet (I think) according to the estimates I have experienced and my HRM numbers for calories burned.

I think that bean salad is my favorite lunch food of all time. So yummy! I noticed that you cut your “mystery” ingredients into pretty big chunks…was that by design? I tend to cut my veggies etc. into smaller bites/shreds when I make bean salads so that everything mixes together more evenly. I’m curious if there is an advantage to using bigger chunks?
Kath says
Hil ,
No advantage. Just preference. I like to be able to stab with a fork.
