I was surprise more of you weren’t up at 2:40AM watching the moon!
[Except for Ms Lynn Chen!]
Matt set his alarm and I decided I’d get up or not depending on how much I woke up. Well I was wide awake when he got up and we bundled up and went outside and WOW – it was cool!! Very erie and scary.
While we were out there we found the party responsible for Paws On The Housetop. Two kitties wanted to play!
I went from bed –> shower this morning. Not something I do often since I’m usually exercising or making breakfast! The reason is a hair appt. this morning and then running errands until lunch.
Matt whipped up the oats!
Two special toppings:
A Great Harvest Warrenton pumpkin scone – ohhhhhhhh so goooood!!!!
And Espresso Maple Salted Nuts sent by Lauren! They are perfectly salted and made a great topping! Thanks Lauren : )
The Mix
- 1/3 cup oats
- 1/3 cup milk
- 1/3 cup water
- Half banana
- Pinch salt
- 1/4 cup cottage cheese, stirred in at end
- Crumbled pumpkin scone
- Chopped pecans
I left out the nut butter due to the addition of pecans – I missed it but I didn’t miss it. I think I just missed the habit!
Have a wonderful day!
Tina @ Faith Fitness Fun says
I have a hair appt today too. I’m in need, especially before the baby arrives.
I completely forgot about the lunar eclipse! I was probably up at that time tossing and turning anyways too.
Amalfi Girl (EatRunHaveFun.blogspot) says
That looks insanely delicious. I love ferral kitties! My parents are caring for a whole family of cats right now. My mom is allergic so they leave them outside, but they made igloo houses for them so they can be warm, and my dad feeds them tuna constantly. They are happy kitties!
Jen says
Please tell your dad to stop feeding the kitties tuna! Human-grade tuna has way too much mercury for kitty tummies – they’ll get sick if they keep eating that. He’s better off buying some canned wet food (even the cheapie kinds that are $0.39 a can)…then they will be happy AND healthy kitties!
Whitney says
Agreed!
Jan says
Never being a cat owner, I don’t know much about cat health, but the mercury in the tuna comment intrigues me. How is it that tuna designated for kitties has less mercury?
Samantha Angela @ Bikini Birthday says
No lunar eclipse picture?
Estela @ Weekly Bite says
I totally forgot about the eclipse! Sad part is I was awake tossing and turning 🙁 Thats so cool you got to see it 🙂
chelsey @ clean eating chelsey says
I was sound asleep when the moon was doing crazy things.
Stacy @ Every Little Thing says
Glad you got to see the eclipse! And that scone looks delicious.
I knew we wouldn’t get up to see it, and I need all the sleep I can get so that I have the energy after 8 hours of work to bake cookies and pound cake and pack and clean and khhgkfdhgkhfgkh. 🙂 It’s Christmas!
Gabriela @ Une Vie Saine says
I told my boyfriend to call and wake me up so I could see it but he forgot!! Gahhh it sounds like it was soo cool!
Anna @ Newlywed, Newly Veg says
Ha! How cool that you woke up for it! I was sound asleep in my bed 🙂
Katie (Sweet Tater) says
i missed it!
box those kitties up and send them to the carolinas. i’ll take them. 🙂
Ann @ Day by Day says
My parents have gotten so many pecans this year for Christmas. I need to start putting them on my oats too! I was going to this morning, but my new Trader Joe’s Sunbutter was dying to be opened. I’ll go for pecans tomorrow!
Lee @ College Foodie Finds says
Oh wow. that scone. enough said. Can’t wait until you have daily access to Great Harvest Creations!!!
Averie (LoveVeggiesandYoga) says
I posted about the lunar eclipse last night and 108 sun salutations today in honor of the Winter Solstice! I know you did your 108 last week 🙂
Enjoy your hair appt!
Sarena (The Non-Dairy Queen) says
My boys and husband got up to see it and actually went out driving to see it. Sadly, they did not. It was too cloudy here. We love nuts like that here. We have a version that we call “crack nuts” cause you can’t stop eating them once you start. I am thinking of doing a peanut version today since my grandmother sent us 10 lbs of raw peanuts.
Have a great day Kath!
Erin says
Kath! I saw your article in the Publix Greenwise magazine! I often grab it when I’m shopping When I got home I sat down and opened the first page to be reading about one of my favorite blogger’s oatmeal tips! What a great surprise–congrats to you!
Kath says
Oh fun!!!! The Superfoods one? I haven’t seen it!
Erin says
No I don’t think so. It was all about oatmeal! Topping varieties (definitely mention of whipped banana oats and nut butter), nutrition, etc! I just tried to see if its online, but I guess Publix hasn’t posted their newest issue yet. It looked great and it was the FIRST article in the issue!
Angela @ Eat Spin Run Repeat says
Your oats look amazing this morning!! Especially the nuts – I may have to try to create some of those. Have a great day Kath!
Kris says
I guess I missed the eclipse although I was out w/ the dog shortly after. Similar sched. — hair and errands. Have a great day!
Katie says
I can’t believe I missed the eclipse! 🙁 I had been planning to get up for a week and then totally forgot.

I was too busy sleeping 🙂 It sounds like the eclipse was awesome though!
sweeter salt says

That scone looks delish!
Laura
Lauren at KeepItSweet says
i’d love a piece of that pumpkin scone!
Nicole says
I didn’t know about the eclipse until this morning 🙁 I hate when I don’t read the news for a day a few days and get completely lost.
On another note, that looks like the best school ever!!
Katy (The Singing Runner) says
Wish I had seen the eclipse. I had my alarm set but slept through it.:/
Sarah @ See Sarah Graduate says
I wanted to stay up but alas, I fell asleep. 🙁
leah @ l4l says
I never shower before a hair appointment. My stylist likes my hair dirty. It’s weird. She says it is easier to do my highlights that way I guess.
Kath says
Didn’t wash my hair 🙂
Erin@ Shortcut to Bliss says
Washing the hair strips away its natural oils. When adding color the natural oils in the hair give it better holding properties and make it easier to work with. =)
Heather (Heather's Dish) says
oh, salted pecans sound amazing! what a great oatmeal topper 🙂
A Teenage Gourmet (Sami) says
I didn’t even know there was a lunar eclipse! Rats . . .
Christin@purplebirdblog says
We had horrible cloud cover and the eclipse wasn’t visible! 🙁

Yay for haircuts(and a little bit of relaxation) before Christmas and get-togethers! Have a great day, Kath!
Kate (What Kate is Cooking) says
I missed the eclipse… too much rain!
Meagan says
I probably should have gotten up, since it only happens every 465 years or so..
Angie @ Musings of a Violet Monkey says
I wanted to see the eclipse (first one on the Winter Solstice in 372 years!), but it was insanely cloudy in Charlotte last night. I couldn’t even find the moon earlier in the evening.
Plus, I don’t get enough sleep as it is. 😉
I have to work 10 hours today, and then go home and bake cookies, put homemade gifts together, wrap presents and clean my house!
~
Felicia (a taste of health with balance) says
i was up and watching, it was awesome! such a beautiful and clear view from my bedroom window, also very convenient.. hahah

The weather was too foggy to see the eclipse 🙁 I need to eat breakfast after looking at yours.

Peggy says
Man I wish I had the motivation to get up last night and see the eclipse! Sounds like you had a great start to the morning though!
Allie says
Its awesome you got to see the eclipse! Mmmm salted pecans!!!
Food & Other Things says
I meant to watch the eclipse but I forgot! Your pumpkin scone looks amazing…I wish there was a Great Harvest near me!
Sarah says
Kath-
Any thoughts on why Great Harvest muffins and scones are so big? Will you be offering smaller portion sizes at your bakery?
Just curious!
Kath says
I don’t think the intention is to serve one in one sitting. I always eat them in multiple portions. Smaller sizes would likely require more work for less profit per item – so I bet this is a calculated size. Just eat half!
Amber K says
Nope, not me. Sleep is much too important to me. I feel like sludge if I miss it.
Dee says
I wanted to see it! But I was so tired that when the husband tried to wake me up I knew it wasn’t going to happen! 🙁
suki @ [Super Duper Fantastic] says
I was too tired to go outside. Plus, I saw an Eclipse over a handful of years back in college. 🙂
Chelsea @ One Healthy Munchkin says
I wanted to get up to see it, but I was afraid I would have trouble getting back to sleep once I was up. 😛 That must have been so cool to see it though!
Heather @ Side of Sneakers says
I set my alarm to get up and see it….and didn’t notice my phone was on silent. Needless to say I didn’t magically wake up at 3am.
Alaina says
It was snowing up here in MA so we couldn’t see the eclipse.
Do you like getting food gifts from blog readers?? 😉
Kath says
Yes 🙂
Namaste Gurl says
I want your mug….AND bowl 🙂
Mimi says
I’m the same way with my oats — I just add nut butter, no questions asked. Sometimes I make an exception and it’s still good, but I just feel like I’m missing something!
Kiran says
Perfect oats with yummy toppings!!!!! Looks so delish, I want some of the scones 😉
Michele @ Healthy Cultivations says
I would have loved to see the eclipse, but it was cloudy where I am. Perhaps next time.
Michelle @ Give Me the Almond Butter says
ahhhh your breakfast just looks fantastic. warm, yummy and relaxing.
I totally forgot about the eclipse. I finished the book I was reading last night around 11 and headed to sleep then.
Melissa says
No pics of the eclipse??
Paige @Running Around Normal says
I forgot about it, but would probably choose sleep anyway 😛
LauraJayne says
We woke up for the eclipse – went outside in the freezing Utah weather – but couldn’t see it because of the clouds and snow! Total Bummer!
Heidi - apples under my bed says
Thanks for the link to the pecans, they look delicious!
Heidi xo
Hannah says
I wasn’t – because in Australia it was at the pleasant time of early evening 😉 Love the look of those nuts; checking out the recipe now!
Lauren says
So happy you like the nuts! 🙂
Andy says
We had too much cloud cover in the Mid-West so I didn’t even bother. I really wish it had been clear – I love that stuff!
Justeen @ Blissful Baking says
mm that looks like the best oatmeal ever! you have inspired me to start being more creative with my oatmeal toppings and mix-ins – it’s so much fun!
Lorin says
I wish I could’ve seen the eclipse but , that didn’t happen since it has been raining for the past couple days in southern california.
