My life is crazy busy this week and I’ve decided to just remind myself that all that matters is the moment. My only responsibility is to live minute by minute and not worry about tomorrow or thereafter.
I’m such a planner that I find I do get anxious if I can’t see a break in my future. I’m working today through Saturday and then Sunday morning we’re getting up early to head to Charlottesville for a bakery location scout. We come home late Monday night and I head to work through another Saturday (to make up both days I’ve missed). The weekend after that we’re traveling to Asheville for our wedding anniversary. Not much of a lazy morning in sight, but I’ll make it through – and time will fly!
Last night mom, Larbs and I were picked up at the restaurant at 3PM and transported back to LaGuardia by 5PM. We said farewell to Larbs and mom and I headed inside for a cup of tea while we waited for our flights. I carry teabags with me so I can have a fun flavor when I travel and only ask for hot water. This was a Tazo Green flavor –

After such a heavy, late lunch I really didn’t have an appetite for dinner. But I grabbed a few snacks for my flight – including some COCONUT WATER I found! LGA has tons and tons of healthy options. Chobani too!!
Mid-flight I assembled the yogurt, banana and some trail mix I brought from home into a nice snack. It was the perfect amount.
I had landed by 9:30 and was home by 10:30. Everything went smoothly again, thank goodness. I’m a little on the tired side of chipper this morning, but hopefully breakfast will fix that –
The Mix
- ~1/2 cup sliced strawberries
- ~1 cup Kashi Cinnamon Harvest
- ~1/2 cup Organic Valley Yogurt – Berry
- ~2 tbsp Bob’s Red Mill Muesli
- Chia seeds
- Coconut
- TJ’s Valencia PB
The last of my Gypsy Coconut Chai …double bagged

Off to work.
Jessica @ How Sweet It Is says
That breakfast would wake me right up! I wish you could make me breakfast every morning.
Freya @ Brit Chick Runs says
Ah gosh, that does sound a busy week! Better to have something to do than nothing to do though..that’s what I always tell myself! Have a good day 🙂
Heather @ Health, Happiness, and Hope says
Sorry things feel a little stressful right now… just hang in there in try to enjoy each moment. I promise you’ll make it through! 🙂
Lindsay @ Summit Sandwiches says
You certainly do have a busy week ahead, but it too will pass and you’ll find yourself with more relaxation time. In the meantime, I say revel in the beauty of your breakfast! I love how you always find a way to make cereal/yogurt mixes look beautiful. Mine often look like what they are- messes! 🙂
Laura says
I see a slight opening- driving to+from Charlottesville- could you get Matt to drive, and put the Glee soundtrack on, or listen to fun/relaxing podcasts? I know its not much, but still… and remember how every day at work you are doing amazing things for your patients- really making a difference! I’m trying to live by my own Mum’s sage advice- ‘one day at a time’. I hope the teddybears gave you big hugs last night 😉
Kath says
🙂 Yes, Glee would help
Marisa (Loser for Life) says
Hang in there, Kath! Glad you at least have an anniversary get-away to look forward to 🙂
Samantha Cernock says
Hmmm, coconut water, I bet that was yummy! I wish I could find more stuff like that in Fayetteville.
Sarah (Running to Slow Things Down) says
I love your idea of stashing tea bags with you as you go. Oftentimes I find myself buying an expensive cup of coffee, only to realize that I’d prefer a cup of tea. Why have I never thought of this? 😉
Courtney (Pancakes & Postcards) says
I am just like you with the planning. Days where it all goes out the window tend to stress me out, but I am definitely getting a lot better of going with the flow. 🙂
Beth @ Beth's Journey to Thin says
I’m pretty similar in planning and tend to get anxious when things don’t work out how I planned or if I have to much going on, but you have the perfect attitude about it. Just relax and take it minute by minute!
Joanne says
The next few days are going to absolutely fly for you. Relax when you have a spare minute.
I’m a planner as well and get a bit anxious if there is a break in plans. But that’s life and to be expected just not enjoyed.
Heather (www.runningwithsass.com) says
sounds like you have some busy weeks ahead, but you are right, they will fly!
ari says
it’ll be over before you know it!
Food Makes Fun Fuel says
I love how a blogger will always stop to blog–that’s devotion!
Hannah says
Ah well, at least once you get to Asheville it will eb nothing but fun and relaxation, right? WiIsh I was still in Charlottesville and could meet up with you. Alas, the world and timing never seems to be on my side!
Ann @ Appalachian Appetites says
I think you’re right on…just take it minute by minute 🙂
theemptynutjar says
Kath, I write that on my blog all the time. Live in the moment. Forget yesterday and forget tommorow. After I read “The Power of Now” by Tolle, this helped me put it all in perspective.
Nice oats as usual 🙂
kalli@fitandfortysomething says
sometimes it is so hard to see the whole schedule in front of you….i recommend taking it day by day. check off each day as it comes and do not think about the next day until it comes…..slow and steady wins the race 🙂
Erin (Travel, Eat, Repeat) says
Glad to hear you got home safely and the trip went smoothly. I think most airports have healthy options, it can just be hard to hunt them down. The worst was Sydney where there was a sushi place and a McDonalds. The end. 😕
Sarena (The Non-Dairy Queen) says
Glad you made it back safely. Even with the crazy schedule, I am glad you are looking at the bright side. Your breakfast looks delicious! I hope you have a great day!
Jenny says
It’s so important to take each day and make it count! Very good advice:)
Annie@stronghealthyfit says
I LOVE that Kashi cereal. Good for you for having such a good attitude about being busy nonstop! I get anxious about not having any down time for awhile, because that’s how I recharge.
Heather @ Side of Sneakers says
You certainly do have a busy week! At least you’ve got some fun trips planned though 🙂
Daniel says
Wow, sounds really hectic! I do agree that taking life day-by-day not only helps relieve the stress of being booked heavily, but it does make things more manageable and makes things go by much faster. I hope you experience this and it’s not too hard on you! 😀
Kati @ Living Well says
I like your “minute-by-minute” philosophy. Just what I need to hear this week…It’s so easy to get overwhelmed about things in the future.! You can only control right now, and even then, very little 🙂
Jessica @ The Process of Healing says
That breakfast looks delicious! And I’m glad you made it home safe and sound@ But wow, it does sound like you’re going to be busy! That would stress me out a bit.
Stacey@http://stacey-healthylife.blogspot.com/ says
I’m a planner also and feel a little or a lot anxious sometimes. I know how you feel. I’m operating on the same schedule, busyness and work, and then Memorial weekend I’m vacationing for my anniversary. I can’t wait for that weekend.
Michelle @ Give Me the Almond Butter says
I can’t believe you found coconut water in an airport! That’s fantastic.
lynn (The Actors Diet) says
welcome back. i am having the same issues with trying to remember to stay present. breathe, breathe, breathe!
Heather (Heather's Dish) says
that was SUCH a quick trip! i’m glad you got to go, but i can’t imagine rushing like that. hope work is fun today 🙂
Cynthia (It All Changes) says
I like that teabag trick. I hate the plain stuff so I need to remember this one.
Glad you are home safely.

Kath, Just wanted to say how much I love your blog. I love seeing how well you eat and how enjoyable you make it, even when you’re so busy. You’ve inspired my eating so much! I love SIABs now as well as banana oats and many other things you eat. Thank you for the inspiration and creativity!! Brilliant idea, too, about packing fun teas, trail mix, etc. when you travel. I have a trip coming up and I’m going to do the same. Also, I tried your spiced millet salad last night and it was seriously delicious! We couldn’t stop raving about it. I think I first started using garam masala after reading about it on your blog long ago. Okay, sorry for the long love-fest, but I had to share my gratitude and appreciation. Thank you for a great blog.
Kath says
Thanks meg!

I am also a planner and when things get crazy I just tell myself to accept that it will be crazy for a certain period of time, and then it will be fine. It usually makes it better for me. Good luck with your ventures. At least you know you will have fun along the way.
Camille says
Traveling can be exhausting, but it is also so much fun!
Good luck in Charlottesville!
Andrea (Sweet N Green) says
I hear ya with the busy schedule! Like you said though time will fly! Those oats look SO good.
Anna @ Newlywed, Newly Veg says
Just keep chugging along!! Weeks like that, I just have to remind myself that everything will be over and done with in a blink of an eye– keep on trucking!
Hillary [Nutrition Nut on the Run] says
I know you changed your font a few days ago, but I just wanted to say I think it makes a huge difference. It really adds a lot to the site : )
Kath says
Thank you!

I live 5 minutes from LGA! They do have a good selection.
Here’s hoping you have an easy rest of the week, despite all the craziness!
Ashley says
Mmmmm shredded wheat cereals…love the texture! You are brave…I cannot drink plain coconut water, especially not mixed 50/50 with water. Can’t get over the weird slippery texture! Glad you’re back safe + sound. Good luck with the busy schedule…it will let up soon!!! xo
She-Fit says
WOW! You are so busy, I really hope that you can find some rest during your hectic schedule.
Lisa says
Chobani is my favorite of the Greek yogurts. It’s thick and it tastes so wonderful!
Michele | aka Raw Juice Girl says
That’s a fantabulous attitude to have, Kath! And I love, love, love the picture of you blogging! 😀
Hope you find quiet moments here and there to recharge you and I’ll be praying for you!!!
Hugs,

I totally feel ya on the minute by minute thing. I need to stop, by life just keeps going at warp speed. Seems like everyone is so busy these days…
That’s cool you found coconut water at the airport:)
Jil @ Peace, Love & Munchies says
Logan (well, depending on the terminal you’re in) has horrible options…sometimes if you’re in a good terminal (American Airlines is good I think ) you have a ton of options!! …others are like health-barren wastelands. I agree – it’s so important to appreciate the moment…especially since life flies by so quickly.
wendy @ ABCs and Garden Peas says
Someone wrote, “Nice oats.” I think it’s so cool that there is a community in the world – virtual or not – in which that is a compliment!
Jenn (Jenn's Menu and Lifestyle Blog) says
That bowl looks heavenly! 🙂

I’m the same way with knowing exactly what my future brings me, and I get overloaded with busy weekends. Starting in the middle of April, were away for two long weekends, then away for a week, and away yet again for two more weekends (there may have been weekend at home to recoup in there, but I don’t remember). Crazy busy, but also fun to get away and see family and friends and new places.
Don’t wish time away too much – I turn 31 next month, and can’t believe how especially quickly the last few years have gone by.

Are you talking about Charlottesville VA? I don’t know where you live but I think maybe SC? If this is all true, you could totally stop in Raleigh and see me 🙂
Kath says
I live in Charlotte, NC and am moving to Charlottesville, VA.
Raleigh isn’t on the way, but did you know I grew up in Hillsborough?
Rachel says
Oh Charlotte, ok. And no, I didn’t know that, but I’m not sure where that is… I’m not from here, I moved here a couple years ago. I technically live in Cary. I was in Charlotte a couple of months ago, too bad I JUST started following you!!
