Have extra ground beef on hand? Combine it with red pepper, spinach, herbs, panko, parmesan, and egg and these mini meatloaf muffins come together in a flash.
Mini Meatloaf Muffins
We had a pack of ground beef and nothing on the dinner menu one night and so I went to the KERF archives for some inspo. I made a version of these Herb and Cheese Mini Meatloaf Muffins that turned out so well. The 2020 version had red peppers, fresh chopped spinach, herbs from the garden, parm, breadcrumbs, egg, and one pound of grass-fed beef. You probably have most of the ingredients on hand!
I had the leftovers for lunch the next day as a salad with artichokes, chopped asparagus, greens, and a drizzle of a thick balsamic vinegar.

Thomas’s Aunt Layton is a photographer in Richmond and took some of the sweetest photos of Birch! He is shy and slow to warm up, and she captured his “serious face” so perfectly. But wait for the smiles at the end!!

And here are two of Mazen and Birch together. Mazen loves to climb into B’s crib after nap and help him wake up. Here they were playing “night night” and all giggles.
