Woo hoo – sleeping worked!
I did in fact wake up at 7 per my body clock, but luckily I was so wiped from two nights in a row that I was able to sleep until 9!
Thus, 10am oats:
These were almost TOO sweet!!!! Whipped banana oats topped with crumbled Apple Streusel Muffin, sunflower butter and a taste of the new TJ’s Cookie Butter. There is absolutely nothing at all that isn’t delicious about the cookie butter, buuuuuttttt I will say the texture isn’t quite as good as Biscoff. It’s a little thicker and less melty. Still tastes great – perhaps a hint more gingerbread?
Cookie Mint Crème tea was just what I hoped it would be!
[Karen’s White Chicken Chili recipe posted!!!]
Plans for the day
- Read in bed [which I NEVER do!!!! Forcing myself to right now.]
- Recipe freelance project this afternoon
- Run with Matt
- Grocery shopping?

Khushboo says
Sounds like the perfect day! I love lazy Sundays in bed 🙂
Gina @ Running to the Kitchen says
I just had the TJ’s cookie butter on top of gingerbread pancakes this morning and it melted perfectly! I haven’t tried the biscoff spread though so I can’t compare but I’m in love with the TJ’s one 🙂 Enjoy your lazy Sunday. I slept till 9 and am still in pjs too 🙂
Susan H. @ the food allergy chronicles says
Sounds like you have a great Sunday planned! Enjoy! My boys and I are going to be busy decorating our Dairy,Egg and Peanut/Tree Nut Free Gingerbread Houses. Time to crank the Christmas tunes!
Katie @ Peace Love and Oats says
I’m glad you were able to sleep in! Haha I “slept in” until 7!
Averie @ Love Veggies and Yoga says
glad you slept in and were able to.
the Cookie Mint Crème tea..yum
and nothing is ever too sweet for me..that oatmeal bowl looks perfect 🙂
and i agree, the TJs butter is thicker than Biscoff. Less creamy/spready but still great and at half the price give or take and easy to find (well for me b/c i have a tj’s)…it’s a winner 🙂
jane says
didnt i see a resolution from you on your blog that you were going to be commenting less? 😉 every blog i go on you comment on every singe post!
Stacy @ Say It With Sprinkles says
Sleeping in is the best!!! I usually wake up early because of my school schedule, but I love on weekends when I can actually get myself to sleep in! Ahhh zzzzzz….=)
Meagan says
Sounds like you have fun day planned! I love the purple bowl. How do you get involved in freelance recipe writing? I’ve always wanted to do this myself.
KathEats says
I’ve been luckily to have had companies and editors contact me over the years – I haven’t done much pitching. But if you’re really itching to dig into it, I would work on recipe ideas and send article ideas to editors
Krystina (Organically Me) says
I honestly don’t know how you handle all that sweetness at breakfast! Between the banana, muffin and cookie butter, there’s a lot of added sugar. The cookie butter/Biscoff sounds delicious, but I can’t bring myself to buy it because I’d rather have whole cookies than have them ground up. 😛
Maria @ Sinfully Nutritious says
Is cookie butter really ground up cookies? I thought it was kinda like cookie flavored peanut butter. I never tried it, actually, I have never even seen it at the store. Maybe cause I only shop the natural/organic section of Wegmen’s & TJ’s or Wholefoods for my other stuff. I am now on the lookout for it.
I also can’t eat sweet at breakfast. I eat oats for a snack or treat. I love a spicy breakfast of fried peppers, mushrooms and onions in with potatoes and tofu eggs and salsa on top. I know, I’m crazy!
KathEats says
Yes, it has the consistency of a peanut butter but it’s flavored like cookies
KathEats says
It was too sweet!!
April says
Hi:)
Brekkie looks amazing! Had a quick question, when you use half of a banana is it because of the sweetness or the calories it adds to the oatmeal? Thanks again for the most awesome blog!
Have a great day!
KathEats says
Mostly to conserve bananas and make them last longer! Sometimes I do use a whole one. Also to cut back on the portion size just a bit and leave room for more topping variety
Michelle (Peachy Palate) says
I need to make myself lie…next weekend! I was too busy baking and finishing Christmas shopping. My body clock wakes me up at 5.30am regardless of the day of the week (as does my need to pee unfortunately!)
Blessing @ Working Mom Journal says
Wish I could choose to sleep in, this kiddo keeps me on my toes every morning asking for everything and anything. Have a great day
KathEats says
I’m sure the kiddo is a good reason to get up though 🙂
katie @KatieDid says
Have a super sunday! Sounds like your agenda will be fun and relaxing!
Chelsea @ One Healthy Munchkin says
I wish I could sleep in like that! It’s a miracle if I stay asleep until 7 am!
Enjoy your Sunday! 🙂
eliza says
no broth or water in the recipe?
KathEats says
It calls for water – it was in the instructions but I added it in the ingredients. You simmer the chicken to make the broth
Molly @ RDexposed says
Just bought cookie butter last night! I’m not quite sure what to expect or what to put it on. Oatmeal seems like a good place to start though.
Cait's Plate says
That sounds like the absolute perfect Sunday! I woke up at 7am due to my silly body clock as well but I wasn’t able to make myself go back to sleep! I think I see a nap in my future 🙂
I need to get my butt to Trader Joe’s and pick some of that stuff up – either that or order the Biscoff (I do like a bit more of a melty texture with my nut butters…)
Enjoy your day!
Lauren @ What Lauren Likes says
The cookie mint cream tea sounds great! 😀
J3nn (Jenn's Menu and Lifestyle Blog) says
I haven’t tried TJ’s new cookie butter but it does look a bit drier than Biscoff. I get giddy thinking of the scent of Biscoff. 🙂
Hillary says
I cannot wait until Xmas break so that I can stay in bed and read, too. I’m serious: I have an entire stack of books that I plan on devouring! Cannot wait.
Shelley says
Reading in bed is the best! I can’t wait to try the chicken Chili recipe!
sarena says
I always sleep in late on weekends, I just have to. The cookie butter and flavored teas look great but inaccessible to me since none of my locales carry. Online shopping is defninitely not an option either.
Macrae Carreker says
Hey Kath!
That recipe looks great, but you mention it is “brothy”. Where does the liquid come from?
Thanks- I’ll definitely make this soon!
Macrae
KathEats says
It calls for water in the instructions – I changed the ingredients to include that too
Amanda says
I noticed the texture of the TJ’s cookie butter was a little gritty (from specks of gingerbread, I assume). I’ll have to try the Biscoff since the texture sounds a little better to me. Not that I haven’t been been going to town on the cookie butter…;)
Ellie@fitforthesoul says
I’m still all about trying TJ’s cookie butter and all of their foods! I wish I were friends with Mr. TJ (forgot the name of the exec.) lol. Sounds like a nice, fun day ahead of ya~:)
Mai says
Yummy. I need to get on board with Biscoff or cookie butter!
Angel7 says
Since grocery shopping is on your list… Are you finished Christmas shopping yet? Do you order any Christmas presents online, or purchase them in the stores?
I love shopping! However, I choose not to deal too much with the holiday crowds, which is why I like ordering online, and having it delivered to my door. This way I do not have to deal with the craziness; I do not have to pay for gas to and from the stores; and sometimes I get free shipping–you cannot beat that 🙂
I will admit, though, that I do like shopping the day after Christmas, because that is when stores have awesome sales. But I have not shopped the day after Christmas in quite some time.

I’ve done a lot of it online – I find that it’s just so much easier than going from store to store

I really want to get that cookie butter spread from Trader Joe’s! Sounds like a good, relaxing day for you, enjoy. I’m hoping to make some gingerbread men today.
Kristabel says
I love gingerbread and have been wanting to try cookie butter, so I bet I would love TJ’s.
Morgan says
tj’s actually sells a knock-off biscoff! they’re called bistro cookies and i think they taste nearly identical!
Kristen @ Change of Pace says
Cannot wait to try that chili recipe! I love muffins as oatmeal or yogurt toppings.
Lisa (bakebikeblog) says
Here’s to a restful day!
Kelly @ Foodie Fiasco says

Thank you so much for the Chocolate Mint Creme tea! I have been a on a huge tea kick this year as my alternative to coconut water during the summer months. I can’t wait to put this on my holiday wish list asap!
Lauren says
I made a white chicken chili tonight as well that was quite similar.
(PS- I think you forgot the broth in your ingredient list) 😉
ash says
The chocolate mint creme tea looks amazing! Have a great Sunday!
Jill in Chicago says
Wow, my schedule is so different than yours — I have obligations (shows) that go until midnight on weekends, so I’m fortunate if I get home and to bed before 1 am! So its always funny to me to hear talk about midnight being late 🙂
Anna says
I hate when my oatmeal is too sweet! When that happens I usually just dump milk on top and it helps a lot.
That cookie butter looks like cookie dough! Maybe if you bury it in the oats a little so it melts…
