Who needs potato fries when lettuce makes you feel so good?
I went to early cycle this morning and met my friend Katherine. Fun times! We spun hard, and then finished with the core session the class ends with. And then I was dilly-dallying back downtown to my house, where I promptly got to work on massive loads of laundry. More fun times!
No Bull Burgers have easily become my favorite lunch. A dose of flavor and protein all packed into one nice little patty. 8 minutes in a skillet and I’m ready to go. I served today’s on a Honey Whole Wheat bun along with ketchup and mustard.

Quick question for you! How come you usually only dress your salad greens with olive oil and salt?? Where’s the vinegar or acidity of choice (lemon juice)!? I just always wondered that! 🙂

I think vinegar is too strong for lettuce. And too messy – it splatters on my shirt.
And lemon juice is delicious but also too labor intensive for a quick lunch 🙂

I think Meredith was just offering a solution to the time issue. And this is a food blog – a forum where people should be able to ask basic food questions, i.e., the components in a featured salad dressing, without getting ridiculed.

Are lemons a universal thing to put on salads or something??? I don’t get it. For what it’s worth as well, some people don’t like the acidity and it can hard on stomachs (everyone is different).

Salad dressings are certainly a matter of personal taste. Traditionally, and this is what I think Meredith is referring to, salad dressings (or any sauce) have a fat component like olive oil and an acid component like vinegar or lemon. Then, typically mustard is added to emulsify and other things are added to flavor – shallots, garlic, salt and pepper, chili flakes, whatever you want.

Well, I’d personally like to thank Josie for the recommendation (I hate the word moist, too 😉 – I was gonna chime in yesterday that it bothers me when my lemons/lime dry out, and was going to ask if someone knew what to do about that. My friend always tells me not to put them in the fridge! Like Kath, I don’t like bottled dressings (or onions..eww), and I don’t like vinegar for the same reason she stated, so lemon is always my choice if I add anything besides oil.

I love your statement (paraphrased), Who needs fries when salad makes you feel so good? I used to eat fries ALL the time, just because they were available and “easier”, but ordering / prepping a side salad is just as easy, and honestly, can be just as tasty! okay, just because Kath made a brief mention of choosing a healthier side option doesn’t have anything to do with her being out of touch with the real world. This is not a blog where Kath shares her education about famines in Ethiopia or articles on nutritionally dense foods for developing nations– she shares pictures of her lunches. Just because this is her job, and this lunch with a side salad is what she shared today does not allow anyone to justifiably say she is getting carried away with privilege. The bun was not processed – it was made from scratch the day before with wheat that was milled that day and has 5 ingredients: whole wheat flour, water, salt, honey, yeast.

Congradulations on your cover shot! I converted to glass jars for storage a few years ago…I use them to freeze jam, stock, spaghetti and pizza sauce and for my rice, pasta and quinoa. I love the shelf idea next to your stove…I could so do that! Great project for hubbie!

Great articles, Kath! Just a few questions…do you still use soap nuts in your laundry also or have you gone to all Method? And do all Great Harvest Bakeries carry the buns? The nearest one to me is about an hour away, but those look great and some things are worth a little drive. I keep telling my husband he should think about opening one in our town. I do not understand this. You think no one should ever get criticism in their work? How would anyone ever grow? And I agree, those comments were rude. But many aren’t. Like a suggestion on using lemon quickly!
And you get paid to work in a non=profit. It only means you cannot use extra profit for bonuses, it must got back into the organization. Anyway, yes clients do get to make snarky comments. I think that’s pretty normal. It’s always rude and unappreciated, but it’s certainly not a novel concept. And it’s usually accepted and a business owner would like to keep all clients’ business. I do not understand why people think monetized blogs should have absolutely no standards or criticism.

Your boss is also different from your customers. I’m not saying this is a great way for things to be, but it’s true. Customers get frustrated and rude at times. I’d imagine, almost everyone has gotten frustrated with a business at some point and maybe acted in a way they regret. It’s just not a good business practice to ignore your customers.

Laura: Yes, people who write on the internet for their job, and get paid for it, do open themselves up to criticism, even “snarky, rude, unproductive” criticism. If you look at Slate, The New York Times, or most professional blogs (especially ones that are not in the “healthy living blog” genre) there is a proliferation of nonconstructive criticism posted in article comments that is still perfectly acceptable (albeit undesirable) to those professional writers and the sites they write for. It’s what you are in for when you are a professional writer, no matter your subject matter.

Exactly Katya. By choosing to blog, individuals must realise that with the (many) positive comments, there will also be some that are not to the individuals taste. By deleting comments that may paint the individual in a bad light, or question some of their activities, it dramatically reduces the ability of viewers to voice their opinions.

Don’t sick your family/friends/blog white knighter to fight for. Remember, your readers are your customers. If you don’t have a thick skin, you could shut down your blog… but that also involves shutting down the gravy train.

Late to the game here, but sheesh. Kath is a grown woman with a successful, professional blog and can decide for herself whether the negative comments are valid and/or deserving of her time & energy. Readers getting into spats is totally bizarre, especially when people are taking up for her on the comments she has already addressed. The idea behind blogging is about having a relationship with readers and comments are where the real discussion is supposed to happen! Questions, comments and suggestions (even if straightforward and potentially critical) are typically a sign that people are actually interested in the writer and their content, otherwise they wouldn’t read and certainly wouldn’t take the time to comment. I know I have commented minor complaints/suggestions before and she has always responded graciously. It seems to me like she wants the feedback (as any pro-blogger or writer would) and doesn’t take it personally when it isn’t….why certain readers take any negative comment so personally baffles me. Kath, do you have a comment policy? I looked around but couldn’t find one.

Ooops…the real reason I commented was to say CONGRATS on the magazine cover. That is awesome! I love your home/organization posts and your house is beautifully decorated — it reminds me of Real Simple. You make the No Bull burgers sound so good…I’m dying to try one!

dear kath, i just wanted to commend you on dealing with such rude and hurtful criticism in such a graceful way. i think you look radiant, your home is lovely, and that lunch looks delicious. although my first thought was that the salad could use some vinegar or pre-sliced lemon wedges perhaps 😉

Kath, I was reading through your article and this sentence really confused me:
” Real people have organized homes that are serene, clutter-free and functional”
If someone had a cluttered home, you know, because they’re juggling working 9-11 hours a day, fitting in exercise, cooking, etc. – are they not real people? What makes a person fake vs. real?
If you meant to say real people as in not within the pages of a magazine, it was a really awkward way to put it.

My point here was that organized homes are not limited to fictional magazine pages – real people have them. Real being the opposite of a magazine shoot not “good” or “bad.” I’m sure there are plenty of super super busy people with very neat homes and I’m sure there are plenty of people with less busy schedules that are messy.

Oh my goodness, Kath only shares a small portion of her day-to-day schedule! Just because she doesn’t work traditional hours in an office job does not mean she does not work hard. If I could put money on anything, it would be that she actually spends a lot of early mornings and late nights working because her job(s) is/are so nontraditional. Yes, I agree that some of the way in which the sentences in the article are worded can be interpreted as ‘smug’ but it’s the reader’s choice as to how to interpret them. I choose to give Kath the benefit of the doubt and think ‘oh, she probably didn’t intend to completely offend a ton of people by saying something like that’ and if anyone chooses to take the other road, that is most definitely your problem and has nothing to do with Kath being out of touch with reality.

Just to point out that Kath often says she gets up when it’s daylight to work out – that isn’t early when a lot of people are up before the crack of dawn. And she usually writes before she goes to bed – which isn’t late. I’m not playing devil’s advocate, but just saying that she seems to keep normal hours and isn’t overworked by any means. I have nothing against nor do I care about her schedule! I think people need to put more energy into worrying about themselves…

The No Bull Burgers have onions in them. Do they make it special for you with no onions, or you don’t hate onions that much as long as it’s smooshed with other ingredients? (Just curious, because I personally don’t like raw onions, but in food it adds a lot of flavor.)

The onions are sauteed before they go into the burger, which really reduces their impact. If they were raw in the patty, I wouldn’t be able to eat them.

Kath, I think you do a wonderful job talking about your life through pictures and words on a blog. I read through the argumentative comments and laughed. I do not understand why people feel the need to nit-pick things that are irrelevant in the grand scheme of things.
