Frosty is still holding on! Everyday after school Birch checks on him. We had some 55 degree days last week and he’s not yet a puddle.

Birch The Shark
Karen made this shark hat for Mazen, and it’s perfect for Birch! It’s even more hilarious when you see him running and the fin is slicing through the air

I just discovered that these masks glow in the dark! The pig and mustache are so silly at night!
Meals Lately
We added a big tub of baby spinach to our grocery list and all of a sudden all of our smoothies are green! So far the kids have not noticed…
I’ve bee making semi-hard-boiled eggs to have for breakfast and lunch. I have a new technique that I learned from a Blue Apron recipe.
Soft Boiled Eggs
- Boil water
- Add eggs and set timer for 7 minutes
- Remove eggs with slotted spoon and plop into ice bath!
Look how bright these are!
Here they are for lunch in a big salad. I love that gooey center.
Lunches
I treated myself to some Plenty Cville lunches like this farro and kale salad that I doused in the most delicious maple+mustard dressing!!
And this frittata slice with leftover roasted veggies and more of that dressing!
The dressing made an encore when we used the last of it on some baked Catch Sitka Salmon. This was King salmon which is THE best variety out there! We were a little low on food so we had frozen peas on the side! Both the fish + peas were from the freezer stash. Sometimes you gotta do it!
Salmon leftovers for lunch – plus peas, spinach, truffle almonds, more dressing, and my chocolate container for dessert
Quick lunch of cauliflower soup + leftover pizza.

Mazen’s guitar lessons are coming along – he’s getting good! He serenaded Birch and me with Twinkle Twinkle Little Star after nap one day.
Although he much prefers rock music to match his hair!
My Tree Dashers by Allbirds came! They live up to the hype – like a sporty version of the wool runners I have lived in with extra support and bounce!
That’s all for today folks! I’ve been a little light on my posting schedule since I started on this course creation journey, and I’m hoping there is a break in the clouds after this week and I can devote more time to consistent posts again!

If your spinach is getting a bit witty in the fridge, just throw it in the freezer! Or throw it in the freezer straight from the store. I have cold sensitive teeth and I can’t add a lot of ice to my smoothies, so frozen spinach for the win! And baby kale too!

Haha I have more work to do! It’s the accumulation of all of the emails, files, digital photos, calendar events, to-do lists, budget transactions, Cloud storage, hard-drive storage, popups, alerts, notifications that help us run our lives but can get out of control and overwhelming! I teach people how to simplify all of this and manage it in one simple system that doesn’t take a lot of time each week : )

That’s fascinating. I’ve never thought about eliminating or managing any of these things because honestly I have never thought of them as stressors. To me they are just part of adult life. Due to contract work, I have at times been responsible for checking FOUR email accounts per day and that was a bit much to manage, but generally I’m not working with that pace. I really look forward to reading your marketing materials and problem statements about this and figuring out how great life could be if I actually “managed” instead of just “living with” these things. Or maybe I’m not your target audience if I don’t feel overwhelmed.

Sometimes it’s all overwhelming for people and sometimes it just one category that is totally out of control. You might not be my target if these haven’t ever caused you stress : )
