Happy Fri-yay!!! We have a big weekend ahead filled with family on all sides, so stay tuned for that. Can’t wait to see Miss Emerson again!
Gus got to go to school with Mazen yesterday as part of his “Special Friend” week where Mazen is the star and his classmates get to learn more about his favorite things, friends, family, etc. Mazen was SO PROUD of Gus, and showed the class how he can sit, lay down, and shake for a treat.
We’ve been eating well this week because I finally got some more Great Harvest pancake mix! There is nothing quite as gooooood. These are so hearty!
I get kind of down on green salads when the weather is cold, so I have a lot more tuna and sardine salads. This one was a simple mix of albacore tuna, mayo, mustard, relish, paprika, salt, pepper, chopped pickles, chopped banana peppers, and carrots. Served with chips!
I’ve been Cook Smarting and made this Mojo pork in the crockpot not too long ago. It was a mix of tropical flavors like OJ and lime and spices like jalapenos and smoked paprika. Smelled so good cooking all day!
I served it with collard greens and leftover mashed potatoes. Mazen loved it! He also loved the collards because he thought they were kale 😉
Another huge hit of a Cook Smarts dinner were these Teriyaki meatballs. Both Thomas and Mazen loved them, and the sauce on top was soooo good!
Cook Smarts is having its Spring Sale right now through 3/21, and you can get 20% off with the code TASTESPRING. You save the most if you buy the annual plan (which is $57 marked down $15 with the code). You can get the discount on gift certificates too.
The meatballs were even better the next day!
I promise I have been brushing and flossing like a boss, but I had a cavity on my recent visit to the dentist. But the good news is that those giant metal shots are no more, and the topical lidocaine plus the new injection pumps hurt so much less than anything they’ve used in the past. Say cheese!
And finally, T and I went out for Mexican food, and I had my very first visit to the famous La Michoacana. Three taco thumbs up!!
A friend of mine made this epic video of my favorite gym class – Afterburn. Check it out!! Lots of jumping, and of course, a huge after-burn.
Hope you guys have a wonderful spring weekend!!

Hey, can you please tell your sister that her site is being taken to a prom site… it appears she may have been hacked.

I may need to try CookSmarts. I’ve always loved looking through cookbooks and recipe planning, but lately it hasn’t been happening and we’ve been in a major rut! The recipes you post from there always look so good!

Erg, I want teriyaki meatballs so bad now. And I know I’ve said this a few times already, but you really inspired me to start adding sardines into my salads. They are sooo good.

Do you prefer this company over blue apron?
KathEats says
They are totally different. Cook Smarts is meal plans and Blue Apron is recipes and ingredients
Katie @ Live Half Full says
That class looks like so much fun!
Linda @ The Fitty says
How long was the pork in the crockpot ? 🙂
KathEats says
7-8 hours

Have you ever considered becoming a vegetarian?
KathEats says
I used to be close to one – I rarely ate meat in public and usually chose fish. But pregnancy changed me, and now I crave meat much more than I used to (mostly beef, though, which is interesting). So at this point, no I don’t think I would. I could give up meat, but I could never, ever give up seafood.
