Hi friends! Still thanking you all for your warm wishes as we find our new normal around here. I know the temptation is going to be to speculate whenever I have a meal for two, but I have many friends who have offered to join me for meals (mostly female!) so I’ll leave it at that. And Matt and I still might get together for dinners with Mazen. I have no idea how my cooking style will change living alone, but I hope to be very efficient and cook once, eat twice or morph leftovers into new dinners. I plan to use Cook Smarts more too, so maybe I’ll have a cooking for 1.5 post coming soon : )
We are still under a yard of hay over here. I’m watching some baby grass poke through, so I really hope we can run through it by mid-summer! We had smoothies for breakfast with strawberries, banana, oats, milk and yogurt.
Another day it was two fried eggs, a big grapefruit and a coffee with milk.
And third, yogurt with almond butter and Super Topper plus melon and grapes.
Lunches have been here there and everywhere. I went to Roots one day for their amazing BBQ tofu! Served over the Roots salad with sweet potatoes, mushrooms, spinach and kale.
One day I had half a Great Harvest curried tuna sandwich when I was in a rush and not super hungry. Thanks to Matt for the delivery!
On the dinner front, we had Mona Lisa Lasagna. Best lasagna ever!! Plus some panko green beans on the side.
Next up two Cook Smarts meals – Italian Sausage and Chard White Bean Soup, which was so easy, delicious and nutritious! The best of all three worlds. I want to make this again soon. Vino with my girl Lauren!
And finally, Lemony Chicken with Roasted Potatoes and Spinach Salad. Yum!!
Did you know Stitch Fix now offers SHOES!?! Super exciting!! I love shoes, so I hope I can get some in a future fix.

I love when you post meals that both you and Mazen enjoy together. It gives me new ideas on what to feed my toddlers! So if you ever get low on post ideas…definitely would be interested in more of those sorts of posts, although I know documenting what toddlers eat can sometimes be monotonous 🙂 The Lemony Chicken with Roast Potatoes is making me drool! Sounds like the perfect spring meal.

Cook Smarts is meal planning and very low cost. You might really benefit if you’re feeding that many daily!

Dipped in some Dijon mustard and then rolled in herby panko and baked. They were so good!

I have been doing Blue Apron for nearly a year now to make weeknight cooking easier, and my daughter eats it with me. A good way to avoid getting in the “kid food” trap! I use less spice and oil than called for and if we have dad or a guest, I can easily add ingredients or small servings with a big salad. You are already so good at using leftovers, and there do tend to be more of those with only two.
