LOVE THIS WEATHER!!!!!! I cannot wait for springtime to be here for real!
I went on a glorious walk this morning downtown and then to a coffee shop for an interview. Then to the gym for just a little magazine cardio. It was a great relaxed morning!
On my walk home, I began to think about what to make for lunch. I knew I had one tortilla left and some tomato paste and came up with a tortilla pizza.
But moldy tortilla pizza didn’t sound too good (had to toss the 2 week old tortilla). Phase II: Bread!
It worked like a charm. I toasted up some Whole Grain Goodness and then topped it with some tomato paste, red pepper strips and smoked gouda. Tasted like pizza!
On the side I had a mixed salad with sunflower seeds and dried cherries, olive oil and honey.

Matt got home right when I was getting ready to eat and we got to enjoy our first meal on the new porch!!!!

It’s beautiful. And seriously, this weather? Even in Upstate NY it feels like springtime. I stinkin’ love being able to wear my Sperry’s around in January.
I am partial to tomato sauce. Tomato paste tastes so funny to me! I literally can’t do it. But spending the morning in town (especially to do an interview — both stressful and fun) is a wonderful way to start the day. Especially in C-Ville. Your downtown reminds me of back home!

I’m the same way about tomato paste. I love the sauce but the paste is…bitter or bland? I didn’t want to throw out the can that I opened before though so I mixed it with leftover sauce ,spices – and cheese – and then it was better. Kinda defeated the purpose but whatever works! 🙂

My mom taught me a neat trick for leftover tomato paste…store it in a small container and put it in the freezer. Hope this helps 🙂

Thanks, I thought it would just get freezer burn or defrost weirdly…like pumpkin does, ick 🙁 . What I was getting at though is that I don’t really like the taste of the paste just on its own. But when it’s “doctored” up a little – it works 🙂

Pizza Bread…we used to make that as kids, when my grandmother was making sauce. The porch looks great. I am going to sit outside and enjoy the sunny 60+ degree day and have a cup of coffee on my porch!

english muffin pizzas were one of my absolute favorite foods when i was little. come to think of it, they still would be, if i could keep red sauce and mozzarella cheese around my apartment long enough to think about them.

This weather is incredible! We just enjoyed a 12 mile bike ride along the C&O towpath, with a 3.5 mile hike to Harpers Ferry in between. It was nice to come home and make a big lunch and enjoy it out on the patio in the sunshine. I could get used to this!

Beautiful here in my area of Southern Ontario…just out in my warm sweater and scarf…even saw a guy in shorts! My favourite is toasted tomatoe and cheese when the tomatoes are at their peak…as that would not be now, tomatoe paste and roasted peppers sounds delish!

i love homemade pizza. My current fave is a pita topped with hummus (instead of tomato paste) smoked chicken and feta. Yum yum!
