I headed downtown for a multi-level yoga class this morning to meet my friend Amy, who is expecting! The class was slow-and-steady style, but that’s exactly what I was in the mood for this morning. It was one of those “stretch out between the joints” classes, and I really enjoyed it. It was fun to catch up with Amy too! Afterwards I finished up a Real Simple on the elliptical and walked on home. It’s a gorgeous Saturday here!
Lunch was a mix of foods hidden in our fridge…A cup of Imagine Sweet Potato Soup stirred together with a half cup of leftover lentils and some sharp white cheddar
And a springy salad of green leaf lettuce, honey (love honey as a dressing!), sliced apple and spiced pecans + walnuts.
The spiced nuts made it! Need to find a good recipe for homemade spiced nuts soon – they take salads to a whole new level.
Luscious lemon to sip!
Whoever the kind soul who anonymously sent me this adorable glass storage container is – thank you!! I love it 🙂
Have a great afternoon friends!

I’ve made them as a part of this salad recipe before. It’s from a restaurant that I went to in nova scotia! The walnuts (and the whole salad) is absolutely delicious!! http://www.edining.ca/1175/recipes/Charlotte_Lane’s_Mesclun_Salad_with_Caramelized_Garlic_&_Spicy_Walnuts

So I just tried the Chia Charger Nut Butter that came to my house. It was a little dissapointing because the buffalo dirt doesn’t really taste like it has much coffee in it, just peanut butter really. The Manhattan Mud is a bit better as it tastes how it is advertized; with a hint of chocolate. I like the consistency of the nut butters I just wished the coffee one tasted at least a little bit of coffee. I probably wouldn’t get it again though. I’m off for a hike today, so excited! Have a great weekend 🙂
KathEats says
Thanks for your feedback Lorin. Sorry you didn’t like the buffalo as much, but I’m hooked on the mud!
Lorin says
No worries! In the end, it’s still peanut butter and still tasty. Yes, the Manhattan Mud is definitely my fave! 🙂
Becca says
Did Karen make that placemat? I love it.
KathEats says
Nope, my mom sent it to me!

Cool. I asked if Karen made it because it has the name “Karen” written on it.
KathEats says
Omg really!? I missed that!

I love the Imagine Tomato Soup! So good. I usually chop up vegetables and throw in with it as a side. I’ll have to try the potato and butternut squash kind now.

I love putting apple in my salad too!
That’s what I love about yoga, it’s good for relaxation, deep stretch. Whenever I do it, it calms my mind so much! Well, depending on the class it could be VERY intense too..

As is in life, salads are so much better with fruit and nuts! 🙂

They’re not as sugary sweet, but I have a spiced pecan recipe linked below that I use for my morning breakfast “sundaes” as a topping, as a snack or on salads. If you try them, I hope you like them 🙂
