I am still not feeling that great
Thanks for all of your well wishes at breakfast. I think I have a mild bug in my system. Not enough to make me sick but enough to slow me down. I did manage to knock out a big Foodservice project due this week: a work simplification chart. Ugh, it took forever. I skipped going to the gym today in exchange for a hot shower and comfy jeans. I’m hoping to take a stroll to run a few errands with Matt when he wakes up from his post-work nap.I worked straight from 10a to 2p and didn’t really get hungry. But by 2p I felt weak and knew it was time to eat. Kelsey and I were discussing tuna salad yesterday, which sparked a craving for the kind I used to make in high school and eat on saltines. These days I’ve been souping it up with red curry powder and tons of veggies, but today I just wanted something simple and creamy like the good ole days. And something salty to eat it on!
The Mix:
- 1 can tuna, drained
- 1 tbsp greek yogurt
- 1 tsp olive oil mayo
- 1 tsp mustard
- S+P
- Sprinkle paprika
- 1 chopped stalk celery
Dippers!
These chips were Food Should Taste Good Lime Flavor – OMG!! Like the other brand’s but with so much more flavor and body (and all natural!) I ate about 50% more than you see here as I was making lunch.
And lastly, a small apple with a tsp of Naturally More.

Thanks for the recipe! I loveee tuna salad sandwiches, but I never have them because they typically require tons and tons of mayo. The yogurt idea is great. 🙂

There is nothing better than tuna + saltines! I made a delish salmon salad for lunch and, like you, kept it simple: canned salmon, lemon juice, lemon zest and a bit of mayo. Sometimes I think adding all the veggies makes it less like fish salad and more like REAL salad 😉

The Food Should Taste Good chips are awesome! We currently have open both the Jalapeno and Sweet Potato flavors – so good!
I also like to mix greek yogurt with mayo for tuna/chicken salad 🙂

International travel does a number on your system – my professor went to India last summer and didn’t get sick until she got back to Ohio!
I like your “chip and dip” method for tuna salad. I use mine as salad dressing – I scoop up a little with my fork and stab some lettuce. It works well with a creamy hummus, too.

Yikes, I hope you start feeling better soon! And at the risk of sounding like an alarmist… try to avoid taking any aspirin, just on the really off-chance that this hangs around and turns out to be dengue fever or something. Which is totally curable, and highly unlikely, but starts with fatigue.

Hi Kath! I just have two comments…
1) What nutritional benefits do wheatberries have, or do you eat them purely for the chewy, nutty, goodness? I’ve been thinking about trying them out, but feel weird adding more wheat based stuff to my already carby breakfast of oats? But I guess maybe I’m overthinking once again and should just give it a try. 🙂
2) I’ve been having the same feelings over my usual morning oats lately! I think it’s maybe because its warming up and they’re just not as appealing with spring on the way? Anyways, lately I’ve been indulging my experimental side by trying all kinds of other breakfasts. But I still know oats are the best fill-me-up breakfast, so if you ever get the mood, try some overnight oats! I’ve been having a regular mix of 1/2 c. milk on top of 1/2 c. oats with lots of cinnamon and raisins and a banana, and place that in the fridge overnight. In the morning I just add a container of yogurt, with a few walnuts sprinkled on top. It hits the spot and for some strange reason is 100 times more appealing then hot oats!

I think you are overthinking 😉 Wheatberries are whole grains, so they have all the benefits of whole grain products – B vitamins, fiber, protein, etc. I love them for their flavor and chew, but also because they are good for me.
I eat overnight oats a lot in the summertime – it’s still a little too cold, but they’ll be making an appearance soon!
