Flowers! My favorite kind + color! Thanks Kanz!
Karen came over to deliver a huge beef tenderloin and have Matt butcher it for freezing (we’re having some on Friday night when his brother Andrew comes to town).
Not sure what the conversation was here – probably Karen saying how hot our house is without AC 🙂
Eww. But yum.
After my successful, productive and businesslike morning, the afternoon fell to pieces. I was in one of those fall down into a chair, sigh and whine moods where I didn’t want to do anything! Not even fun things like watch TV. I hate it when that happens. I did NOT want to go to the gym either. Our house was hot and sweaty already.
I decided I was hungry around 4:30 and couldn’t go to the gym at 5 without a snack, so I made one with this Musselman’s Applesauce that arrived for me to try out. I chose the Key Lime flavor –
Continuing the Key Lime Pie theme, I added some malted barley (ok, not pie, but still crunchy!), a crumbled graham cracker (sample leftover!) and a few cinnamon almonds from OhNuts.com.
Hit the spot! I like applesauce and I like that this one is all natural with no added sugar. It tasted pretty good, but nothing spectacular. I was expecting a bit more key lime and a bit less applesauce. But I guess it is applesauce!
I ventured out on my bike after that, despite the looming skies, and decided I would try a group exercise class if there was one to try. Turns out it was CardioFunk night! I used to go to CF on Sundays last fall and then got a little tired of evening exercise. This class was led by a funky woman and I really enjoyed it! I took jazz dance for 11 years and the class was a lot of jazz mixed with some hip hop and just a tiny bit of latin (which I do not like). We also did a few group routines, which I LOVED because it was like dance class 🙂
I almost got struck by lightening on my way home – I pulled into the driveway just as a big storm hit. Whew!
Matt and I got started on dinner. He had a pizza crust brewing all day and I was in charge of the salad.

Topped with a few peppers + zucchini, mozzarella and chipotle cheese from Costco. And oregano and pepper.
Gobble gobble.
On the side I made wimpy salads. Just romaine and Annie’s Woodstock. They were more for diversity than fill.
HIS pizza was bigger and better because he found a tomato after mine was already in the oven
So we exchanged slices 😉
Matt is working at 7 tomorrow instead of 3 so we’re planning a group run at 6AM before he goes. We rarely get to exercise together anymore! But the forecast is rainy, so it might be cancelled. Boo.

What’s with the sudden bursts of romance? Dinner twice in a row? Flowers? And for no reason! I love it when they get spontaneously sweet like this.
Thanks so much for the advice on the salmon burgers. They turned out great and cooked perfect from the frozen state. But you were so right on getting them apart! I must have fought with that frozen block for 20 min and definitely used a little profanity in the process! 😉

Does it cool off at nights, when you hit the hay? I can’t imagine going to sleep in the heat and humidity. We keep the AC on for a few hours before bedtime for the purpose of getting a good nights sleep and not be groggy at the office next day. But beause we like to conserve both energy and money, we always turn it off by the time we go to bed. It’s a compromise that works for us.

The pizzas look fantastic, good work again by Matt!! When I cook pizzas a thome (using homemade dough) I find that the base doesn’t get krispy enough, even though I use a pizza stone. Does Matt have any tips?

Totally random, but I can’t find the info anywhere – hate to bother you, but, you seemed like the best person to ask! Ok- ready? How many calroies are in 1 cup of soft polenta? I am talking about 6 cups water, 1 cup dry polenta (no butter, milk, oil, not baked – just creamy, soft polenta). There is 100 calroeis in 1/4 cup dry – 400 in 1 cup dry… not sure how much it yields when made with 6 cups water. Help! I just started counting calories again – day 2- and I’m trying not to obsess, but, I really want to figure this out. It is has been impossible finding a recipe online that gave calroeis that wasn’t for baked with lots of other ingredients. THANKS SO MUCH!!!!

I took a group ‘dance’ exercise class once and was tripping over myself the whole time. Oh the hilarity for all of the folks walking by the windows! Reason #1 why they should not have GIANT windows in a gym in a major city.

Those pizzas look so delicious. And I love taking classes. It’s like having a trainer but for much less $. It’s embarrassing not to keep up so you push yourself. I don’t mind Latin at all though. I think that’s why I love Zumba so much!

That pizza crust looks so good. We do homemade pizza a lot because my husband is allergic to cheese (poor guy) we do half cheese/half no cheese pizzas. I haven’t found a crust that competes with restaurant crust, but that one looks like it might.
I think I’d like to try it just topped with some pesto and parm cheese. Mmmm.

My house is hot too. We don’t run the A/C during the day. At night we turn it on about 15 minutes before bed (12 midnight) and run it until around 6 when Hunni wakes up. It keeps our energy bills down.
I love the pizzas! That’s one of Hunni’s favorite meals. He likes that we can change it everytime. Sometimes its different cheeses or different veggies or different meats (only occassionally). We love the versitility of pizza.

Me again – my hubby thinks I’m a nut – he says that the calories should be the same for cooked as for dry. I guess I was thinking too hard. Let me know if you think differently! PS It is super hot in Greensboro, too – although, this morning it could be the middle of September, the sky just has that look.

We keep it off to save money and reduce our carbon footprint. It’s really only bad in the afternoon and early evening, but all morning it’s fine and at night it’s fine. We normally turn it on July 1st, but this summer has been strange and we haven’t and now I’m kind of scared to turn it on! It’s such a commitment to close all the windows and do it. We probably will in August though.

We use a pizza stone and have the oven preheated to 450*. The mini pizzas go in for 9 minutes.

You should just measure the cooked amount to figure out the yield. So if 1 cup dry makes 3 cups cooked, then 1/4 cup dry (100 calories) yields 3/4 cup cooked (100 calories). You only have to measure once and then you know.
