Or..
“The Tale of the Missing Husband”
I left Matt at the bakery at 5pm [still working on the oven and cleaning up lots of dust] and headed back home on my bike. He said he’d be home around 6 or 6:30. I piddled around for a bit and then decided to start on dinner so it would be ready when he arrived.
I texted him at 6:45 and said dinner would be ready in 10 minutes, while I grilled up some broc + eggplant doused in olive oil, salt, pepper and smoked paprika.
At 7:00 there was no sign of him.
I worked on our whole wheat spaghetti flavored with Pestos with Panache – Smoked Almond + Prosciutto – and topped with a pretty egg and parmesan
I poured him a beer to make his arrival even more exciting.
No show.
At 7:20 I moved his beer to my side of the table.
At 7:21 I drank it.
I 7:22 I decided to start eating.
At 7:26 I proclaimed [out loud] eggplant as my favorite vegetable. Especially when grilled!
By 7:45, I was all done eating.
At 8:37 I received a text: “On my way”
And at 8:40 he walked in the door.
Guess I need to go pour another beer!
Annette @ EnjoyYourHealthyLife says
Haha. that’d be SO me. Where is he?? Oh well, I’ll eat/drink his! HA. Glad he is home safe. Love grilled eggplant too!
Lisa Fine says
Oh no!
The same kind of thing happened to me tonight too. Steve’s busy with work, and I thought he’d be home around 8pm. No sign of him, but then I got a call just after 8:15pm, saying he’d be home in 15 minutes.
Now we’re home together…but no beer for me tonight. I’m way too tired!
Morgan @ moments of mmm says
This story sounds very familiar to my own experiences! I feel like everytime I put forth A LOT of effort to make a fabulous dinner and atmosphere for my boyfriend, it fails miserably due to scheduling conflicts..
Ugh!
Chelsea says
LOL!! Matt got carried away tinkering!! Sometimes that happens with my husband too. What a yummy looking dinner.
Jenny @ Fitness Health and Food says
haha! When I used to manage a gym it was the same way except my poor husband was at home waiting for me. You two are wonderfully supportive of one another and it’s so great to see how you work together when you’re juggling so many commitments.
Best wishes with all of your prep and I hope that you have a little time to relax! 🙂
Kat @ Cupcake Kat says
Silly Matt! Hopefully it won’t become a habit. Dinner still looks delicious. I love eggplant
Christine says
I have so been there! I love that you drank his beer and ate dinner before he got home. I have a friend that will wait for hours and hours for her husband to come home, get off the phone, or stop playing games, and I always feel like the bad wife for eating if my husband is later than 8:30. My food has to digest, darn it!
Emma (Namaste Everyday) says
that dinner looks fab, especially with the egg on top and the beer! I eat lots of things with eggs on top (and beer) as a college student, you make it look so gourmet!
Abby says
Wow! That dinner looks/sounds yummy! I’ve gotten so used to dinner on my own because I cannot wait until 9 PM to eat dinner every night. So sweet of you have everything set up for him to get home! 🙂 Hope you guys can relax a little bit tonight!
Sarah @ The Strength of Faith says
I’m praying hard for you guys right now! I can’t imagine how crazy this is.
McKayla (green groats) says
Yum! Looks delicious. I’m sorry you had to eat that beautiful meal alone 🙁
I had fried egg on my dinner too!
Summer @ Well-rounde Hippie says
I love eggplant too! That dish looks FABULOUS! Thanks for the great inspiration!
Chelsea says
Wow, that dinner looks amazing! I love a sunny side up on rice, noodles, or bread! 😀
Baking Books says
Do you blog after your meals? Does it take long to do up?
Allie (Live Laugh Eat) says
Eggplant lovers unite! Glad your prince came home 🙂
staceyhealthylife says
I guess it’s good you didn’t wait any longer. What a late night for Matt.
Gina says
That egg looks perfect atop the spaghetti! Never thought to do that.
Cait @ Beyond Bananas says
I love your play-by-play of what happened. Sounds similar to what I would do – when my bf is in busy season, I just give up all together and put his dinner in the fridge and chow down!
Averie (LoveVeggiesAndYoga) says
My husband does that all the time. Except it can be DAYS…sometimes. Like, he is supposed to be on a trip and get home Monday and all of a sudden, 17 meetings later, he’s home Wednesday. Not really a huge deal if I didnt have a FT job, child, and life stuff to juggle 🙂
The egg looks perfect!! As does the beer. Enjoy your weekend, Kath!
J.K. says
MMM your pasta looks so yummy. Question how do you cook your eggs to get them to look so perfect specific oil? specific pan? mine always break and they get tough on one side.
KathEats says
I stick ’em in a Circulon pan with some Misto-sprayed oil and set ’em sit for 3 minutes or so
Jess says
My boyfriend does that sometimes. It both amuses and drives me nuts how he loses track of time when he gets locked into a project. The newest thing involves fruit flies—just so long as he doesn’t bring any home it’s all good. Looks like a great dinner! I love topping a veggie & grain dish with an egg. It feels so…rustic…or something. Haha clearly my brain is fried from this week!
Heather @ Health, Happiness, and Hope says
Aww, sorry work had to get in the way tonight. I know my dad was often late getting home, and I could always tell my mom never liked eating without him. Hopefully once things calm down and get settled with the bakery it will be back to the normal dinners with Matt!
J3nn (Jenn's Menu and Lifestyle Blog) says
Awww, well at least your dinner looks delicious! Expect many nights like this… I grew up in a small business with my parents and now my own. Enjoy the peace and quiet while it lasts! haha
kaila @ healthy helper! says
Aww I’m sorry you had to eat alone! At least you had some yummy food for company….pesto is the best!
Amanda (The Nutritionist Reviews) says
I love eggs for dinner! Have a great weekend.
chelsey @ clean eating chelsey says
I would be M.A.D by the time he got home if it were me! You are far more of a patient wife than me!
Holly @ The Runny Egg says
Well I’m glad he made it home!
Dinner looks fabulous and I hope you enjoyed another beer with Matt!
lynn @ the actor's diet says
that’s me – a lot of the time!
faith says
Yep, get that hard-working man a beer! And a shower….
Amanda says
Ah I know how you feel! I live with my boyfriend and he is a car salesman. The dealership “closes” at 8:30, but it’s always later. I often end up giving in to hunger and eating alone!
Liv @ The Salty n' Sweet says
Lol my boyfriend loses track of time all the time. It takes at least 2 phone calls to remind him 😛
Agreed. Grilled eggplant is awesome!
Emily @ One Sweet Vegan says
I know how you feel being the “lonesome dove”. My hubby usually gets home between 7:30 and 9:00. I hardly ever get to eat dinner with him.
I love that you were sitting by yourself and proclaimed out loud that grilled eggplant is your favorite vegetable. There’s nothing wrong with talking to ourselves, is there? 😉
Lauren at Keep It Sweet says
I always get so worried when that happens! Sounds like a great dinner, though:-)
Kate (What Kate is Cooking) says
Haha, my hunger waits for no one! I would have done the same thing 🙂
Nat says
Love! Something I’d do too. Hello Mr. Beer.
AShley says
Ah! Eggplant is another weird texture thing. I need you to cook it for me! The skin is so rubbery and tough + the inside is so mushy. It’s one veggie I can’t get right! 🙂
kelly says
FYI drank Moose Drool for the first time tonight – after a Guiness – good stuff!!
Hannah says
I’ve been waiting for my missing husband for almost 24 years now…
Khushboo says
haha aww! I remember on days that my dad would say he was on my way but not show up for ages, my mom would end up freaking out- talk about being a major cynic! At least u had a delicious dinner to keep you company!
Heidi - apples under my bed says
Kath, this is one of your most delectable looking meals yet! An egg atop of pasta – fabulous!! & isn’t grilled eggplant the bomb!
Heidi xo
Sarah (Running To Slow Things Down) says
Mmm…I love eggplant! But I’ve never tried it grilled. I can only imagine how delicious it is in that way.
Such a cute post!! 😀
Karen says
Ha…oh the joys of business ownership! Props to Matt for his strong work ethic, and to you for your sense of humor and patience.
Just soak in the entire experience, pesky logistics and all. Just think: your long-awaited aspiration is about to come to fruition in just a few weeks, and you and Matt made it happen for yourselves! Pretty impressive, Ms. 28.5 year old:)
sarah (the SHU box) says
ha, welcome to my life 🙂
Miranda @ Working Mom Works Out says
I love how it took you a minute to decide to drink the beer.:)
Poor Matt – working late!
Laura @FoodSnobSTL says
This used to be a regular occurance with my husband. I finally told him that it realllllly annoys me to make dinner and he come 2 hours late, but I guess he felt bad being late. Now he always gives me a more realistic time of when he will be home. Soooo, much better.
Chelsea @ One Healthy Munchkin says
I think I would have gotten worried that the giant oven gobbled him up! 😛 Your dinner looks amazing – I hope it wasn’t too cold for him when he got home!
Angela (Oh She Glows) says
I laughed out loud at the picture of the table with the FLOWERS in Matt’s usual spot. heh.
Solo dinners happen to me a lot with Eric’s long commute home…it’s never fun! I’m glad you could enjoy his beer though! 😉
Jessica says
That salad looks awesome! Is there anything else in the salad that you didn’t mention?
Ginger&Rice says
Eggplant is the best veggie eva.
When I go to Italian restaurants, I almost always order eggplant parmasean.
Molly says
Sounds like a win-win situation. Each of you got a beer!
michelle says
That looks DELICIOUS!
