Meeting the dietitian this morning was fun – I learned all about the company and will be participating in a health fair, nutrition counseling and a nurses’ workshop three days next week. Her job is more wellness (writing newsletters + materials) than it is one-on-one with clients, but it’s still giving me a good taste of this side of the industry.
I got home around 12 and wanted to make something easy for lunch with minimal clean up – and to also use up what’s in our fridge because I’m headed out of town.
I decided on a PB&J – Eat Like Me-style open faced! I actually really enjoyed eating it this way, so it might be a new addition. We’ll see how long it holds me over because compared to a turkey or bean sandwich, PB&J isn’t that filling for me.
Plus an “everything but the gallon of milk” salad –
Spinach, romaine, zucchini, red pepper, green pepper, carrot + Annie’s Woodstock dressing. By the end I was gagging getting down the raw veggies. The salad needed more fluff but I was too lazy to go add something.
It’s like FALL here!!! Gorgeous out there and cool with no humidity. Couldn’t ask for more perfect weather. I ate out at the little table with a magazine.
I’m leaving for the lake in just a bit and will be home on Sunday. I have a few plans to try to upload my posts, including using the husband’s Blackberry as a modem. We may get to a Wi-Fi location on Saturday. So I hope to send a mid-vacation report, but otherwise will see you all on Sunday.

Uh, I think Eat Like Me just photographs it like that so readers can see how much peanut butter (and jelly) she uses. I’m pretty sure she sticks it back together and eats it like a normal sandwich post-photo….

The key to making a PB&J filling is using 1.5 to 2 TB of PB. The calorie sacrifice is well worth it if that is what anyone is worried about. Also pairing it w/ milk or yogurt usually keeps me full, but I’m also the kind of person who eats every 3 hrs….

BTW…if you are in Columbia on Saturday am you MUST go to the All-Local Organic Farmer’s Market at Rosewood Market on Rosewood Dr. The state-plate breakfast (all organic) is only $4.00 which includes coffee! Get there early! Starts at 8am! Hope to see you there!!!

‘everything but the gallon of milk’ = so cute! i love eating pb&j like that! whenever i eat sammies i take one regular bite then i usually open them up and eat both sides separately…i get a lot of looks but it takes longer to eat and i enjoy it more!

I am a fan of the PB and sliced fruit sandwich myself. It has better flavor, more variety in texture, and has a lot more fiber and bulk and less sugar. I find it much tastier and more filling. Sliced strawberries are my favorite filling. I also love PB and green grapes wrapped in a whole wheat tortilla.

I know Kath’s not here but I’m hoping some of you could give me advice… I’ve always been rather concerned with nutrition and exercising and I think a combination of these two things have made me underweight. I am 5’6″ and 112 pounds. (Just for the record- I have never had an ED)
I would like to gain some weight and I’ve started counting calories to make sure I’m getting enough calories. I get on average 1700 calories a day and I struggle to get more- I’m just not hungry enough! I don’t want to shovel down Krispy Kreme donuts and rocky road ice cream to gain weight- I still want to eat healthy foods. Any advice on good foods to add to my diet?

Whats helped me a LOT is eating a lot of calorie dense foods. Incorporate foods like avacados, peanut butter, nuts, seeds, olive oil, icecream, granola cereals, smoothies as snacks (not meal replacements!), cheese, etc. to help you gain the weight you need. They won’t fill you up, but will help in adding the calories you need to bring you to a healthier weight!
Also, stay away from products claiming they’re “light” and go for 1% or 2% milk, not skim.
My nutritionist recommended going by my internal hunger cues for a couple of weeks, while eating lots of high-calorie foods that didn’t fill me up too much, and watching my veggie intake (I love veggies and could eat so many to the point where I was too full to eat other foods…thats when its no longer healthy!) I was a little worried that I couldn’t rely on that alone, and that I’d keep maintaining, or worse, lose!!
But it worked like a charm, and its nice not having to feel attached to calorie counting. Its been a slow weight gain, but worth it…:)
And, lastly, keep in mind it takes 500 extra calories a day for a week to gain a pound (3500 cal.) If you know for certain you’ve undereaten in a day, and just can’t force down a sandwich, go the easy root and splurge on a nice bowl of icecream, or a bowl of your favorite granola. 🙂

Sarah- Did your dietician mean that it’s no longer healthy to eat a lot of veggies in place of calorie dense foods when gaining weight? I kinda got confused by that.

i think sarah meant that when you eat so much veggies that you are too full to consume other calorie sources such as protein and fats it is not healthy for someone who is already at the right weight. they would become underweight and be deficient in some nutrients

Kath I had a open faced pb & j for lunch today too and my favorite thing to do is to kinda push the sandwich together and then separate so that both sides have a hint of the other sides flavor. YUM! have a fun weekend!

i agree with ash, pairing pb and j with a yogurt or glass of milk always seems to hold me much better than say the sandwich with just a salad. plus, the combo of bread, pb, and milk is a complete protein!! since pb alone is not…
