How is it 5:00 and I’ve barely knocked a thing of my to-do list!?!? Shesh!
Lunch was amazing. I was planning on a mid-afternoon smoothie so I kept it to a one-dish salad.
Chopped Salmon + Wheatberry Salad:
- 1/2 cup cooked wheatberries
- 1/2 can salmon
- 1 carrot, chopped
- 2 stalks celery, chopped
- 2 handfuls baby spinach, chopped
- 2 tbsp capers
- 1 tbsp fresh dill
- 1 tbsp fresh basil
- Dressing: half a lemon, 1 tsp olive oil, 1 tsp dijon, 1/2 tsp brown sugar, S+P

I met my friend Mercedes for a smoothie around 2:30 – I got the Mangosteen from Smoothie King again. I don’t know if I can ever order anything else! It’s just got this strange tropical kick to it. I love the texture too.
HOW DARE THEY SAY THIS!!!!!!! My loyalty is being questioned!!

On my way home I took a trip to the grocery store for some weekend items and saw ice cream was BOGO free . I can bypass that offer in the winter and spring, but in the summertime, isn’t it a requirement to have ice cream in your freezer!? I used to eat all the slow churned loaded kinds, but have recently switched my ice cream philosophy to all-natural. I got the Neopolitian because I couldn’t decide between vanilla and strawberry (I’m not usually a fruited ice cream person but have been craving strawberry ice cream for some reason). And Mint Chocolate Chip is just unbeatable.
Confession : I LOVE it when you bring ice cream home from the store and it’s all melted on the sides. I’m a big fan of slightly melted ice cream. I took a spoon swipe around the vanilla and strawberry before it went into the freezer
While at the grocery store I also participated in 2 wine tastings , 4 kinds each. Probably had about 4 oz of wine? Yum! It’s hard to pass down free wine samples.
I’m going to try to fit in a quick paper in the next hour before the hub comes home. Then I rented the movie Juno to watch tonight for a relaxing evening in <3

Yum – that soupy part of thawing ice cream is definitely my favorite too! I think that’s why I love soft serve so much – it’s all melty… and great on the free wine score!
I wish I had a Smoothie King out on the west coast – the angel food was my fave!

I agree with you…chewing is NOT overrated. I’d much rather eat my calories than drink them.

Juno was a great movie! My boyfriend went in thinking he was gonna hate it (because it involves a pregnant girl so it MUST be a chick flick, right?) and came out saying it was one of the funniest movies he’d seen in a while. Definitely our type of humor. Hope you guys enjoy it, too!

Kath–I was looking at the recipe from the pasta salad you made last weekend…just wondering, why did you cook the vegetables before putting them in the salad? I know my Mom has a great recipe for pasta salad, but she uses raw vegetables in hers. Thanks!

Yes! Ice Cream is a summertime requirement to have in your freezer! Any flavor is good for me! Good for you for having an indulgent treat in the freezer to have on occasion!

FYI: “all natural” doesn’t mean anything. It doesn’t necessarily mean good ingredients, good-for-you, organic, no chemicals, whatever etc… It’s just a marketing phrase. When you say your ice philosophy has changed to all-natural, what exactly is it you’re looking for? And how did you read this label to determine this meets it? Because you can’t just count on the label’s saying “all natural.”

Frozen yogurt usually has just as much sugar, and you might be cutting out some fat, but the Breyers Naturals (and this HT brand I have) are lower in fat because they’re made from milk first, cream second. Plus, if you eat healthy most of the time a little saturated fat in the form of ice cream won’t hurt.
