What last night’s dinner was lacking in the leftover dept., tonight’s made up for!!
I don’t know if it’s our house going on the market this week (and the fear of evening appts. – which we haven’t had!) or just the two giant dishes we made early in the week that produced tons of leftovers, but I scraped our dinner plans for sweet potato fries and bean burgers and had us eat leftovers again!
I had a little sous chef helping me out 🙂
He even did the dishes!
So into my bowl……
- Leftover Bob’s Red Mill Vegi Soup (lentils, barley, peas and mini pasta)
- Chicken broth
- Shredded turkey that fell off the bone when Matt made stock from our frozen Thanksgiving [organic] turkey
- A handful of chopped fresh broccoli
- Parm cheese
- Salt + pepper
- And this Quince + Apple Pear + Honey + Ginger Jam!!!……………………
Strange combo, but as I said at lunch, jam goes with everything!!
I doctored up my soup….
With Dr. Kracker Seeded Spelt. One of you said this was your favorite flavor. Now I know why!! These are lighter and almost buttery from the spelt 🙂
Dessert was licking the spoon when preparing my overnight oats for tomorrow!!! Emily and I are meeting for Y2Yoga after work so I get to sleep in!!! How exciting!!!
Going to watch Twilight in bed!! I hate our couch and the living room is so stiff and not cozy and scary at night, so I came up with the idea to watch in bed on my laptop under the comforter while Matt sleeps! Excitement!
Daniel says
I’m not really a fan of leftovers but you make them look so appetizing!
Where did you learn to take such great quality photos? Or if you just learned on your own, how long did it take you and what kind of tips or websites would you recommend for someone just starting to take food photos?
Kath says
In all seriousness, read your camera manual!! It has all the answers you need. That’s what I did to learn about aperture and ISO and white balance and all that jazz.
Nicole @ Making Good Choices says
Our couch used to not be comfy at all and we had to do away with them! Now my couch is my favorite place to be! Good idea to watch movies in bed, that is the best spot for it, unless you fall asleep 😉
Allie (Live Laugh Eat) says
Haha when you said ‘into my bowl’ I thought you meant the little sous chef went in there 🙂 I love the roach fear and lady bug love.
Lisa @bakebikeblog says
haha I thought the same thing 🙂
Megan says
hehe me too! Did you know that those little buggers actually bite?!
Carolyn says
I could have done without knowing that.
Brooke says
I have to admit, I do the same thing (watching TV in bed on a laptop)! It is a guilty pleasure of mine. There is something about being in bed that is much more relaxing. 😀
Food Makes Fun Fuel says
I have that flavor of Dr Kracker and haven’t tried them yet. I wonder if the spelt will upset my slight gluten intolerance? The way you make it sound though I don’t even care!
Anne says
Ladybugs are good luck! Perhaps that mean’s you’ll sell your house quickly 😀
Ashley says
I love your excitement!! So refreshing 🙂 I missed out on the nut butter…so I think I’m going to MAKE some…muahahah
Anna @ Newlywed, Newly Veg says
Yummmmm….that soup looks good! And I just LOVE Dr. Kracker…I used to eat those crackers all the time four or five years ago, and then I kind of forgot about them. I need to get my hands on some!
Katherine says
I’m also really impressed with your food pictures. Could you do a post about how you get such great shots? My food pics often come out monotone. Thanks!
Kath says
Do you have a DSLR? I’d recommend a new lens first and foremost. And reading the manual! You might have the wrong aperture or white balance settings.
Katherine says
I don’t have a DSLR. I’m hoping if there’s $$ left from our tax refund I can get one – my cheapo digital camera is just not cutting it. Thanks for the tips!
Kristen @ Change of Pace says
Love the idea of jam on everything… I think it’s all about what flavor of jam you use 🙂
Lori (Finding Radiance) says
LOL. Your night of excitement sounds a lot like mine. Flannel jammies, electric blanket, and olympics!
Stacey@http://stacey-healthylife.blogspot.com/ says
We had leftovers tonight to. It’s not very exciting but so nice to not have to make dinner. I like how you re create the leftovers and jazz them up, that’s what I do to so it’s not the exact same leftovers but a variation.
The jams today is making me want to go out and pick up some jam. 🙂
Estela @ Weekly Bite says
Awe…. I love ladybugs!! You’re so good with leftovers.
lynn (The Actors Diet) says
my dinner plans always change last-minute too. usually they involve leftovers!
Gabriela says
Aww…. Loved the ladybug photo! So cute!
And, about your dinner… You make leftovers sound and LOOK so amazing!
How do you do it?
Holy yum. Haha 😉

have fun watching Twlilight. It truly ia a great movie. My husband and I never wanted to watch until a friend lent us her copy. Watch it one evening. Ran to Target the next day to buy a copy for ourselves. Then went to see New Moon in the theaters, twice!
Jessica @ The Process of Healing says
Yummy looking soup!! I love leftovers actually. Especially if it’s a great meal to begin with!

Kath says
Dr. Kracker lasagna and broccoli on the side.
Jessie says
Goodness, how did you get the ladybug picture? They’re so fast!
I’ve always wanted to try quince, but it’s so hard to find. I’ll have to look up that jam 🙂
GurlOnA"Diet" says
haha i thought the ladybug went INTO your bowl! and watching movies in bed is my idea of cozy!
Tara says
Kath how did you freeze that turkey? I only ask because I have two rotisserie chickens that I made this week and then came down with the flu! So I want hubby to shred it and freeze it. Do I freeze it in broth? Or just on its own?
Kath says
He put all the carcass in a big zip lock bag and put the whole thing in the freezer. Then he pulled it out just now to make stock. We have the shreds now in the fridge to eat and the broth in the freezer on a sheet pan to shape into blocks.
Run Sarah says
I love how you reinvent leftovers – so creative!!
Tara says
What a cute friend.

Hillary [Nutrition Nut on the Run] says
Awww…ladybugs. I used to be obsessed with them in elementary school. I once bought an entire box of ’em at the nursery and put them in my yard =]
Jenn (www.j3nn.net) says
Your leftover soup and additions to it look delish! I love chunky soups. 🙂
Jenn
Freya @ foodfitnessandfreya.wordpress.com says
I think that leftover soup (? Stew? What is it lol!?) looks so tasty!!
Oohh I love Twilight!! I’ve only seen the 1st film though…I pod-casted the 2nd book and listened to it while running but I didn’t like it as much, so I didn’t bother with the 2nd film :s
Gotta love R-Patz though 😛
Sleep well!
Stacey says
I think your sous chef’s friends are at my house…can you please tell him to come get them?? 😀 Yay for leftovers..they make dinner so easy. Hardly any cleanup or effort!
christie @ honoring health says
Lady bugs are good luck! Send him my way when you are all done with him 😀
Hannah says
I watch almost everything on my laptop from cozy spots these days – I mean, even when I’m not, as now, currently travelling. It also means that I can check blogs during boring parts of movies, shows… 😛
beth grossman says
What happened at the health dept? I hope you get to go on some good inspections….that is my job. I love it. I am an RD and got into this field
Kath says
I just worked on some projects all afternoon.
Katy ( The Balanced Foodie) says
I think I would be a little nervous to add jam to soup, but it worked! I think I need to start thinking outside of the box a little more. I love watching movies or shows in bed, we don’t have a t.v. in our room so it’s a treat!
LCR says
That was the cutest post I have ever seen. Little sous chef… you are so cute sometimes Kath.
Cassie @ A Very Busy Mind says
MAN! I bet that little guy was TIRED after all that cooking and cleaning…you should give him a raise. 😉
Carolyn says
I know this is going to sound crazy, but don’t you ever wish something magical would happen and that little ladybug had started talking to you? Not in an “I’m tripping out on acid” sort’ve way, LOL. More of a “Bee Movie” kind’ve way.
Tasha - The Clean Eating Mama says
Yay for ladybugs! They are good luck! =)
Kristilyn (My 29th Year) says
Your dinner looks fantastic – who knew that jam went so well with everyone! LOL!
Love the ladybug … for some reason I’ve been finding them in our house, too. Maybe they don’t like the extremely cold weather outside? Although it’s been cold for about 3 months now, so one would think they wouldn’t even be in this climate right now!
That sounds like the best way to watch a movie … though I’m sure I’d probably fall asleep with the laptop on. 🙂
