Sometimes I feel like life is just going on without paying attention. It’s already Thursday, another fantastic bowl of oats in my stomach and I’m headed to work again. I am SO EXCITED about this weekend – 48 whole hours to myself!!! My first weekend in a month to just relax (Casey+Micah’s Wedding –> Race practice –> NYC –> Race –> SCDA). The only thing scheduled is a dog birthday party for Caitlin and Jason’s Kona on Saturday night!
Today’s oats featured coconut flakes, butterscotch chips and a big blog of Nuttzo PF.
The Mix
- 1/2 cup quick oats (I find that quick oats aren’t as sweet as rolled!?)
- 1/2 cup water
- 1/2 cup milk
- 1/2 banana
- 1/2 tbsp chia seeds
- Cinnamon, salt, vanilla
- Coconut flakes (which I got in the bulk bins at Healthy Home Market. They’re unsweet but also full-fat – best blend I’ve found yet!)
- Butterscotch chips (ain’t nothin’ healthy about ’em)
- Nuttzo PF, which should be called Nuttzo Chia Seed Blend because its’ all chia fluff!!!
A spring blend… HAPPY EARTH DAY!!!
I’m wearing red today and I feel wild
!Have a wonderful Thursday!

I woke up stressed out and anxious. I hate it when that happens. I am ready to be able to just breathe for a minute. I am going to do some yoga breaths and try to focus on not letting the stress get the best of me! Have a great day!
Cassie @ A Very Busy Mind says
You sound really stressed, Kath. Don’t blame you, of course – you have zero downtime. Just keep telling yourself you won’t always be this busy, and it will all be worth it…because both are true. 🙂
Caitlin says
I almost threw some peanut butter chips into my oatmeal this morning …. but I opted for an extra lump of brown sugar instead =0) Butterscotch sounds delish!
I love your table by the way… where did you get it?!
Kath says
It was a gift for my mom
Veggielady4life says
I notice you use coconut flakes a good bit. Is that mainly for the taste or nutritional value?
Kath says
Everything I eat is for the taste!!

Haha–“red today and I feel wild” is halarious 🙂 I am wearing bright yellow flats with my plain jeans and white button down to work, and I feel a little rebellious as well. Also, wanted to tell you that orange juice, dijon, and balsamic makes the most perfect salad dressing. thanks for sharing that!!

Claire says
I love how you review the types of oats for us or give us little tips. I had the bobs red mill muesli as a hot cereal the other day and wasn’t a fan, then the next day you said the same thing! Regular rolled oats and some of the other hot cereals are much better than any quick I’ve had.
happy earth day! enjoy the weekend to yourself, you deserve it!
Camille says

I read once that red is the color that men find most alluring on women. Interesting!

Stina says
I missed the Like a Prayer performance because my DVR cut out since American Idol was so darn long! Thankfully Fox is re-airing the episode tonight!
I was a competitive swimmer for a long time. Sometimes I really miss the challenge of it; sometimes I’m greatful I can swim at my own pace. I hate swimming long distances so I always break it up. I usually do something like 10 x 50 yds. on a minute which means I get one minute to swim 50 yards and get my rest in. I don’t swim as fast (or as often) as I used to, but back in the day it was more like 10 x 50 on 45.
I also really like pyramids (or ladders) which are pretty much what they sound like. 25 yards, 50 yards, 75 yards, 100 yards…and then back down again. I usually give myself 10 – 15 seconds of rest between each level. Obviously you can set it up however you’d like: 25 yard intervals, 50 yard intervals, longer rest periods, varying intensities (decreasing intesity as the yardage increases).

haha! I just realized I clicked over from Google reader on the wrong post! This should have been a comment on “The Olympic Athlete” Ooops!
