Smoothie in a bowl –> Lunch in a bowl!
Matt and I plopped around all morning (actually I got some hard work done but relaxed too 🙂 ). In fact, we are STILL in our PJs after lunch for the second day in a row!!!!!!!!! Something about knowing you’re not going to leave the house means you don’t have to waste anytime getting showered + dressed. But I think it also is because we’re going on a walk/run/gym visit soon 🙂
When debating what to have for lunch, I pulled out a leftover sweet potato, spinach and yogurt. I was going to make a spinach salad with yogurt on the side, but thinking about a possible run with a salad in my stomach was NOT appealing!
So I got the bright idea to blend my salad up in an easier-to-digest form.
SO VERY IMPRESSED with the Vita-mix capability! I put ALMONDS in this smoothie and there was not a lump to be found!
In my lunch-in-a-bowl:
- 1/2 a tiny sweet potato (cooked)
- Big handful of spinach
- 2 kale leaves (Vita-mix had no trouble with the kale unlike my blender!)
- 1 tiny banana
- ~1 cup vanilla soy milk
- Sprinkling of chia seeds
- ~1/2 a cup greek yogurt
- 1/2 packet Chocolate Amazing Meal
- ~6 almonds
I felt a little unbalanced eating this for lunch because it would have made such a typical breakfast, but when I considered the ingredients, it was all the workings of a good salad!!
Cinnamon Mix My Granola on top!
Cali bowls are so good for smoothies and soups thanks to that inner lip!
I added a little PB + J because it’s just soooo goooood.
Our gym is open and 2.2. miles away so we’re going to walk there. Or run if the streets are clear enough. Who knows, but as soon as this lunch digests we’re getting outta here!
Runeatrepeat says
That lunch in a bowl looks amazing! I need to work on making mine thicker so the granola doesn’t sink 🙂
Jessica @ The Process of Healing says
Greek yogurt and a banana really help the thickness 🙂
Sarah says
PB&J is the best. I was thinking of shirking my workout today – no more. If you can walk 2.2 miles just to get to the gym, I can surely make it downstairs to my dreadmill!
Erin (Travel, Eat, Repeat) says
That looks great! I haven’t tried a smoothie with granola yet but you always make it look appealing. :
I’m happy my gym is a 5-minute walk away so it was easy to get up and back this morning.
Kati @ Living Well says
I’m such a fan of staying in lounge clothes on lazy days! I’m not going anywhere = I’m not dressing up! :>
Sarah (Running to Slow Things Down) says
Good for you for enjoying the last couple days in your pj’s! 😀 I’m the same way, I never get gussied up when I know I won’t be leaving the house anyways!
The smoothie looks delicious. You’re so right…salads and running do not mix together very well. 😉
Hope you have a good workout at the gym! 😀
Kristen says
You get so much sun and Vitamin D from walking in the snow (if your face stays exposed!!), and I get energized by snow walks. We slept in and made pancakes, too. Nothing better!
Btw, I have a giveaway on my blog for one of my favorite kitchen appliances. 😀
Jen (Running With Cake) says
You are the queen of making odd food pairings WORK!
Sam (Merit to the Carrot) says
Now this, Kath, is a revolutionary lunch. Only you could make a LIAB like that. KUDOS!
Karla says
What an interesting combination! I never would have guessed to put a sweet potato in there! Have a great workout!
Jessica @ How Sweet It Is says
I love that little leaf plate!
Lauren @ eater not a runner says
That looks so good, I’m still jealous of the vitamix though 😉
sirenjess says
What does kale taste like? I want to try it. What could it be compared to?
Kath says
It’s chewy and doesn’t really have much flavor. I would say chard is its closest relative?
Mrs. Money says
I am so jealous of your Vita Mix too!! We have a KitchenAid blender and it is not the best 🙁
Jessica @ The Process of Healing says
Love love spending the day in PJs. I’ve spent this entire weekend in PJs.. BUT i have showered so it’s ok 🙂
That sounds really good and such a cool idea! You are right, it’s all the great components of a salad plus protein, dairy, and fruit; a perfect meal! I’ve never thought of asweet potato in a smoothie but that’s a great idea!
Allie (Live Laugh Eat) says
Super jelly of your vita mix!! I always have lumps in my concoctions. And I have to help them along with a spoon sometimes….scary!!
Jessie says
lol Allie “super jelly” 😀 My blender is so puny that whenever I make a SIAB I always end up chewing spinach leaves with my granola. Let me tell you, that really detracts from the yumminess of the smoothie 😛
Anna @ Newlywed, Newly Veg says
Yep– vita mixes are the best!!!
Jamie says
safe travels at the gym! i tried to run yesterday… epic fail…. haha
Katy ( The Balanced Foodie) says
Okay, I will admit, SIABs(or even LIABs) scare me! Okay scare is a strong word, but I”m not quite brave enough to try it. I think it’s because I have an awful blender and it seems to take 30 minutes to make a smoothie, so it’s quicker to make something not blended! Gosh, I need a VitaMix.
rustique says
Looks incredible–especially that BREAD!
Gabriela says
Love the idea of LIAB…I don’t think my blender would be up to the task, though!
Freya @ foodfitnessandfreya.wordpress.com says
GOOD LUNCH!! I did that with my breakfast the other day – just blended it all up, and it was sooo tasty!
Haha I’m exactly the same with my PJs – if I’m not going anywhere, they stay on! I look like a bum but no-one cares 😀
Have a good afternoon!
Hillary [Nutrition Nut on the Run] says
Quite the smoothie. Lots of healthy ingredients = energy for the gym :o)
christie @ honoring health says
I am so jealous you are getting out of the house. They haven’t done anything to our roads so we are still snowed in. I did get a nice workout in by clearing the snow, though 😀
Kristen @ Change of Pace says
I had pretty much the same thing for breakfast. Why is it always better in a bowl? 🙂
Hannah says
My favourite foods are those I can eat out of a bowl, so I totally get the awesomeness of this LIAB! But oh, if only the Vitamix was available in Australia, or could at least fit in my suitcase…
Cole says
Oh yum. That bread looks so chewy and delicious.
Heather @ Get Healthy With Heather says
That Vita-mix is crazy powerful! LIAB looks like deliciousness.
Estela @ Weekly Bite says
The cali bowls are really growing on me 🙂
Jenn (www. j3nn.net ) says
I know exactly what you’re talking about with jammies and not leaving the house. Working at home means lots of jammies around the office lol.
Your smoupie looks delish! 🙂 I totally need to get a Vita-Mix!
Jenn
Ashley says
I just had a green monster fail..flavor was good but something left it chalky! I used a pack of the wheatgrass + a pack of the berry kids wheatgrass…I’m thinking the kids packet was the problem. Luuuurve your first photo…mmmmm – I am loving my vitamix as well!!
lynn (The Actors Diet) says
mmm….i bet you’re gonna be a pro when it comes to making baby food!
Lauren says
I like the idea of running to the gym. Sounds like the perfect warm up.
RJ says
Having a relaxed Sunday here too, with a little exercise thrown in! But I FINALLY made your Coconut Almond Granola. What can I say? The other recipe I have been using for a few years is getting canned. Coconut Almond granola is here to stay. Will try not to scarf all of it down tomorrow morning….
Kath says
Yay 🙂
Heather @ Health, Happiness, and Hope says
What an awesome mix… it’s always fun to switch things up for lunch!
Meghan@traveleatlove says
I soooo want a Vitamix. Looks amazing! We also stayed in our pj’s until after 12 yesterday, was just what we needed!
Amanda says
Your vita smoothie lunch sounds so nutritious! You give us all vita-envy. Also, props to you for getting a workout to/from the gym! The total mileage for your trip alone was my run today! Keep it uP!
Adrien says
I want that vitamix- so bad!
How are they to clean?
Kath says
SO EASY!!!!!!! You just put in water and a drop of detergent and blend it up!
Paige@ RunningAroundNormal says
That smoothie sound great! Hope you were able to get a run in! Have a fun relaxing night 🙂
Jenna @ RunEatRide says
never heard of putting almonds in a smoothie before! 🙂 Pretty sure it would kill my blender though…
Marla says
Ewwwww…does anyone else out there NOT enjoy green smoothies and find they give them a tummy upset? I feel ill from them and wonder if anyone else has the same digestive problems from these concoctions?
Cynthia (It All Changes) says
Vitamixes sound amazing if only I could afford the price tag.
I love walking to the gym when its not too cold. Get a mini workout in with the walk alone 🙂
Foy Update - Cook. Garden. Write. Repeat. says
I love the pretty green leaf shapped plate!
Lisa @ Early Morning Run says
Hmmm.. Really not sure about the smoothie thing, but the pb&j looks great! Glad you enjoyed your lunch. Hope your workout was great!
Sara says
Your so lucky you live so close to your gym! Ours is about 15 minutes away and with the snow in Raleigh we couldn’t make it there all weekend 🙁 I wish I was brave enough to try that smoothie, you have such good ideas!
Heather says
wow that’s a beastial blender to chop up almonds like that!
Kath says
GUYS: Don’t be afraid of green blends!! Honestly, this was sweet as banana pudding!!
Jenna says
How do those smoothies taste?!
Mel says
Can you tell me more about the Amazing Meal product? Why did you choose that brand and what are the health benefits? I am interested in adding it to my smoothies.
Kath says
Mel,
You can find a lot of info on the benefits:

and

I chose it because I like the taste, the texture when blended (it thickens slightly) and the boost of protein from hemp in a smoothie.
