Cue the music! I’m only 27 for a few more hours
Got lots done this afternoon, so we could kick back and enjoy dinner. And Karen brought over a gift!! I’m saving it for tomorrow : )
I was supposed to go grocery shopping today, but I surveyed the fridge and determined I could make it until Wednesday before a trip, thanks to half a head of cabbage and a duo of leftover chicken sausages!
This dinner was characterized by Matt as such: "You could never describe this meal to someone else and make it sound appealing, but it is SO good!"
But first, a cocktail. Literally!

A mini Manhattan just for me.
Chicken + Apple Cabbage Tacos with Broccoli Salad
Cabbage (1/4 a head of green), 1 apple, 1 small zucchini from the garden, sauteed in olive oil, salt and pepper
Plus two of these, which I really cant’ recommend because they are a bit bland
Our sauce was a sample sent to test for OpenSky.
Because it’s a vinaigrette, I haven’t opened it in the longest time. It’s by the same company that makes that delicious Pear Fig Jam. As a salad dressing, I’m not sure how good this would be, but as a SAUCE it was incredible!! Definitely going to look to add this.
We drizsled it onto the tacos as you would a taco sauce. Amazing!
After eating some off the top, this actually made a great wrap!
Karen’s broccoli salad was our side. She brought over some leftovers. It had a half and half mix of mayo and greek yogurt plus something sweet (honey), raisins, apple and almonds. I loved it!
He had two beauties!
We talked well into the evening.
Just ended the night with this fig cordial that Brittany and Cara brought me on Saturday. I’m not sure what was in it other than a fig and chocolate, but it was incredible!!
Tomorrow’s gonna be fun!!!

I love the idea of using that dressing as a taco sauce! I love having some sauce on Mexican/wraps but am not a fan of traditional taco sauce so I’ll have to try something like this out… yum!

Broccoli salad is one of my fav sides..I make it quite a lot, and always with that combo…part mayo, part Greek…add a touch of cider vinegar and honey and kosher salt..yum!

I’ve just started reading your blog and I’m wondering…as someone who is really health conscious and “real” food conscious, you do seem to eat a bit of the sweet processed stuff particularly in the morning oatmeal with the cookies, toppings etc. Are those actually healthy? I don’t mean in the calorific sense because well, I don’t worry about calories these days cause I’m pretty active, but in the sugar-processed food sense? I’m trying to be pretty real food, natural food with my diet at the moment, and I’d just be interested to get your perspective?

I hardly think a birthday is a time to bring this up 🙂
But the “cookies” and what not that I put on my oats aren’t all that processed. They are usually homemade and made with TLC. It would be different if I were putting Oreos on there, but a crumbled homemade granola bar or some made-from-scratch-last-week Mandel cookies I wouldn’t consider processed. Sure the flour might have been white, but on top of a 90% whole grain, fibrous, protein-packed breakfast, that little bit of flour isn’t going to do much.
