Taking a break from Beach Week to talk about last week’s meals ; ) Talk to you again in a few days!
^^ That’s me mid-soccer game on a 95* day at 6pm. HOT!! But worth it because I scored a GOALLLL!
So what has been served this week…
Cool yogurt bowls. With blueberries, banana and drippy sunbutter on top!
An egg sandwich on Honey Whole Wheat roll with half a sunbuttered banana
Swirl bread with eggs, strawberries and pineapple
A frozen waffle (Julians brand) covered in butter and syrup with a small smoothie on the side!
And a smoothie in a bowl topped with cereal for cruuuunch and a blob of partially melted coconut butter.
Lunches to note were kind of all over the place –
No Bull Burger with melted cheese, leftover grilled squash and freshly cooked green beans. Cherries on the side.
Mom’s lunch out with some of my girlfriends. We had about 2 seconds of peace and quiet before all the toddlers started screaming at one another and lunch was over. We dined at Eppies and I shared this veggie plate with Mazen (although he won’t touch the collards or green beans!)
Next up: homemade smoked trout salad with chopped veggies, mayo, mustard, greek yogurt, and curry powder. Delish! Served with those amaaaazing Carrs whole wheat crackers that taste like cookies!
Lunch with a blog reader at the bakery! Matt made me a salad surprise with a few of our spreads over lots of greens and pesto. A piece of chocolate bliss cookie for dessert ; )
And finally, a romantic lunch for two with Mr. Mazen.
We shared two slices of veggie pizza. I’m proud of him for eating his spinach!
On the dinner front….Karen and Matt made this big pot of pasta one night featuring a marinara sauce, spinach, broccoli, chicken and cheese.
Served with roasted veg and portabella mushrooms
Toddler approved!
Next up we had seared tuna steaks with grilled zucchini and a millet-quinoa blend. The “sauce” on top was a wasabi mayo Matt whipped together, and we found our jar of pickled ginger that we so rarely use in the fridge!
Next up: Book Club!! Which means I had wine + cheese for dinner : ) Plus on the left there you can see some tomato stacks from Allison’s garden – a veggie! My friend Alice made Martha’s Cornmeal Crumble Bars. IN-credible!
And lastly, here’s my post-soccer late-night dinner of leftover shrimp kebobs, leftover squash and some raw veggies dipped in Cava hummus.

man we love those carrs crackers! I give them to my toddler as cookies for dessert 🙂 they are so good with pb or ab!

I love that you get excited about sardines and smoked trout in salad form. It’s rare! I love mashed up sardines with mustard and crackers for a meal, but I’ll definitely have to try adding curry powder.

I can’t imagine 95 degrees. I would die. We’re going through a bit of a cooler spell here (60s) and actually I love it. Rumor is high 80s and H U M I D I T Y is on the way. eek!

I’m craving yoghurt like nothing else and as I don’t eat dairy and coconut yoghurts costs a ridiculous amount here I’m planning on making my own tonight! Fingers and toes crossed!

I love one-pot pasta dishes! But I have to say, it can be frustrating to see all these meals with no context. When did you eat these? A week ago? A month ago? Were they on the same days? I think it’s really interesting to see how you fit so many fresh and homemade meals (and veggies galore!) into your really busy life, but that’s kind of lost completely when we’re just seeing meals with no clue how they fit into your life. Just a thought from a long-time reader! Thanks for reading.

That cheese plate looks amazing! One small typo: I think in your tuna steak dinner you mean “asparagus,” not “zucchini.” Unless those are a delicate new zucchini variety 🙂

That pasta looks yummy! I don’t often mix so many ingredients together. My husband is Italian and pretty traditional-it’s either with sauce,cream sauce, pesto, etc!
