This week’s eats. Salad heavy and breakfast light – my hands were full!
Overnight oats blended into a Dough Boy Smoothie drizzled with Wild Squirrel and buckwheat!
Smoked salmon over a salad with avocado, carrots, and bleu cheese. This was a different kind of smoked salmon – a filet instead of the thin lox kinds. I loved it!!
Served with buttered toast and an apple with Wild Squirrel.
I lovely salad topped with a No Bull Burger, Red Hot & Blue Chip crumbles, avocado, bleu cheese, celery, peppers, and Maple Sesame Almonds.
A frozen salmon patty (Whole Foods brand) over a salad with veg and blue cheese. Orange. Whole Wheat Cinnamon Swirl bread.
Lunch at Great Harvest!! Our best sandwich toppers as a salad – plus Pesto Parmesan Swirl!
The second No Bull Burger in my pack on an arugula salad with goat cheese, carrots and torn pieces of Cville Crunch bread
With a pear! <3 pears and need to eat them more!
Cake pops at a moms group meetup!!
Amazing cappuccino foam on a walk
Tofu for dinner!
Roasted in a 400* oven for about 40 minutes on a cooling rack and served with sautéed portabella mushrooms and kale. All drizzled in a 50/50 blend of Dr. Pete’s Praline Mustard Glaze and soy sauce.
Take out sushi! Matt worked late and I failed on my planned crockpot meal. Next week!
California roll. Philly Roll. Spider Roll (love!). Tempura Sweet Potato (it was good!)

Ooh the dough boy smoothie! I’ve been craving one these days but it has been so, so cold and gross here that most of my recent breakfasts have been in veggie scramble form, and nice and hot! Your Whole Foods patties look delicious. I’ve been making my own but I’m going to look for some when I’m there tomorrow!

The last pear I bought had that weird gritty texture that pears sometimes get. Ick! That salad with the sandwich toppings looks amazing. That pesto-parm bread looks fantastic as well. Yum!

Yes to the filet of smoked salmon! This is what I grew up with in the northwest. Thick slabs of smoked salmon is what we eat. I had never had lox until I went to college in CT. Everyone was raving about the bagels with smoked salmon served on Sundays in our dining hall and I thought “that is a bizarre combination” until I realized it was thin, barely smoked salmon LOX. I didn’t eat it for years because I thought it was weird but I eventually came to love it. Both are delicious in their own ways though I will always love a hearty chunk of smoked salmon.

Your smoked salmon salad looks just like one I had earlier in the week, except my salad also had red peppers, sunflower seeds and the bleu cheese was smoked. Later in the week had the same salad with apricot white stilton instead. If you haven’t had that cheese, you should seek it out. So good!.
On a side note, I get HUGE hunks of honey smoked salmon at Costco, it looks very similar to what is on your salad, and my 5 year old happily takes it in his lunch to eat wrapped in spinach leaves. D-E-L-I-S-H.

The spider rolls (the saucy ones!) look so good! And the Pesto Parmesan Swirl – I don’t think I’ve ever seen a savory, swirled bread. Usually it’s cinnamon or sweets, fruit spread, etc. Fun idea!

We do coat in olive oil but otherwise kept it simple ready for sauce

I’ve seen those whole smoked salmon fillets before! So tempted to buy one but they are so darn expensive at my grocery store! Glad to hear it was a good buy though…may have to splurge on that now!

I usually just drizzle them in olive oil and some sea salt. I don’t really care for bottled salad dressings and don’t always have time to make my own, so I’ve gotten used to olive oil alone
