We have had SO MUCH rain in May. Very, very good for sod. Very, very bad for active little boys!
However, we’ve completed lots of art projects and made this fun fort together one afternoon. It was two stories high and could fit grown-ups in it too!
Lucky me, I had not one but two empty Wild Friends jars to pour oats into last week! This Chocolate Almond Butter one was filled with overnight oats and raspberries.
And this one was the end of a jar of Classic Creamy Peanut Butter, filled with hot oatmeal (and cooled down some with Greek yogurt).
On some days though, it’s nice just to have some nut butter toast and a banana. No cooking. Just eating. Chia seed sprinkles!
For lunch I had a big ol’ kale salad, served in the mixing bowl for efficiency! I believe this had mushrooms, sweet potatoes and some smoked trout mixed in.
On another day I ate leftover Cook Smarts salad, which tasted even better the next day! I loved the crumbled pita chips on this salad.
Last on the lunch list was a plate of crispy tofu sticks – the recipe is coming tomorrow – with pickles! (Slacking in the veggie category 😉 )
However, I made up for it at dinner that night with this salad! Avocado Fattoush with chickpeas, cashews, spices, pita chips, feta and creamy Tahini dressing. It was soooo good!! Lauren joined me for a girls’ night for dinner and vino!
When you don’t know what to make for dinner, you can always make a frittata.
This one had a bunch of different veggies and cheeses in it – both ricotta and pimento – and I ate it two nights in a row.
And finally, I had dinner at Sarah’s house.
She made salads topped with a whole roasted chicken, olives, tomatoes, peppers, hearts of palm, and avocado. So good!

Haha i woke up thinking it was Wednesday too! Cabin fever with endless rain and 3 little boys 3 and under, all sick, has definitely caught up to me.

There’s nothing better than a nearly empty jar of nut butter! The possibilities are endless and I don’t think I ever look forward to breakfast as much as I do when I know a nut butter jar is involved! I’m nearing the end of my Maranatha creamy almond butter and foresee one of those excitingly delicious breakfasts early next week!

This rain is CRAZY! We were thinking about doing sod earlier this spring and I totally wish we had! I’ll be ready for the sun but it’s definitely helping all the plants!

Fritatas are a go to after church lunch for us. We usually have it with a side of roasted potatoes! Yum.

Playing outside in the rain is a necessity in the Pacific Northwest where I live! We have rain gear for the kids. The Tuffo Muddy Buffy or waterproof pants and jackets for the young people, and a good rain jacket for you, makes it possible.

Have to agree, rainy days are NOT GOOD for little boys. I’ve been finding this out the hard way a lot lately! Forts are a good tactic though! Fun and should keep them busy! 🙂

Rainy days are not so good for bigger boys either! My 12 yr old got a new bike for his May 5th birthday and it’s been hard to fit rides in between rain showers/thunder storms. He’s been really good about it. I have to admit that in our house the dog gets the almost empty peanut butter jar. It keeps him busy for quite some time and it is funny to see how long his tongue is as he tries to get the last drop out. Lol. I do keep the almost empty jelly jars for my overnight oats.
