The Lannisters sent a raven. They said summer is on the way.
(Currently in the middle of Season 2 of Game of Thrones! Loving it!
And now I see giant black birds everywhere!)
Breakfasts are in da house! Still eating lots of mango (^^) but strawberries have started to climb into the menu. Irecently bought some great ones at the farmer’s market.
I thawed out some Morning Glory Muffins from the freezer, and they kept beautifully. I want to make more and freeze more! If my breakfasts are looking any smaller than they used to it’s because of the coffees. I foam about a quarter cup of whole milk almost every morning and that helps fill me up!
One day recently we were out of fruit and I thought it would be smart to thaw out some frozen blueberries for breakfast. They were horrible! No flavor at all and slightly freezer burned. Threw most of these away.
And then I went grocery shopping!
I’m really into juuuust cooked through hard-boiled eggs. I learned the technique from Blue Apron:
- Bring water to boil
- Add eggs and cook for 6 minutes
- Shock in ice water
They are just barely cooked enough to not be runny inside but are nice and soft and bright yellow. So good! Served with leftover roasted potatoes and greens for lunch!
I met my friend Kristin for lunch at Bashir’s. It was my first visit and Kristin told me how good the vegetarian plate is. She was right!! I loved all the diversity on this plate.
And finally I had a kale salad in some Whole Foods Greek yogurt herb dressing (good but not great) plus smoked salmon, capers and manchego.
Here were two keeps from my latest Stitch Fix box – a Collective Concepts blouse that has a cute tailored waist and Level 99 jeans – my second pair from this brand that I love!
Dinners…
Kale salad with mushrooms plus roasted potatoes, smoked trout and local pimento cheese.
Dinner at Sarah’s! Salmon salad, green beans, greens and too many chips!
And finally, a quesadilla! Spinach and mushrooms plus lots of cheese and kale salad on the side. Mazen has actually warmed up to spinach and mushrooms and ate the same dinner. #winning
Now I just want to sit here for the next few months. The view from our gym rooftop pool!

I’ve used thawed out blueberries before and the same thing happened to me! I can’t face throwing away fresh blueberries when they are reaching the end of their freshness date, so I do freeze them. Now, I only use them in smoothies or in muffins/pancakes! How do they manage to keep their flavor when mixed in with something else?? The mysterious frozen blueberry chronicles lives on! Lol Thank you for sharing!

blueberries definitely get freezer burnt but i find they’re really tasty to just eat frozen! once they’re dethawed – the texture and flavor is just off.
Alana says
Yes, I agree! Frozen blueberries are fantastic. Add some greek yogurt: major yum!

Love just barely cooked through soft boiled eggs, not too runny, just enough to slightly ooze! Perfect instant salad dressing! I prefer them with hard yolks as a snack though, I just find them more satisfying that way!

Love the view! We really want to start watching game of thrones!

I love frozen berries, but mainly as a topping (microwaved with a teeny amount of maple syrup) on french toast, waffles, or pancakes. My fave weekend breakfast. Yum. I also dont mind them thawed and mixed into yogurt, but yuck, I wouldnt want to eat them plain and thawed out either. At least you tried!
Has anyone ever had frozen grapes? I’ve heard they are a delicious snack eaten frozen, but I’ve never tried them! I wonder if you should just freeze them for an hour or two, or can they just stay in the freezer?
Lastly, you really gotta catch up on GoT! This season is awesome!!
KathEats says
My teeth are way too cold to eat frozen grapes 🙂
Chelsea says
Tess, I LOVE frozen grapes. I will buy fresh grapes, remove them from the stem, and keep them in the freezer. They stay good for a LONG time. And they are so delicious!

I’m not really enjoying the la croix cran-rasberry like I thought I would. It’s meh..
What did you think of it? Coconut will forever be my favorite I guess!
KathEats says
I like it! Coco is my fav though 🙂

Did you have to alter your jeans? My daughter has the hardest time finding petit length in denim. Those jeans look fabulous on you.
KathEats says
No they are petites so they are perfect
Shannon says
Kath, I have cooked my eggs the same way but I still haven’t mastered peeling them when cooked that way. Do yours peel easily?
KathEats says
I think the ice bath shock is what makes them easy to peel. Make sure your water is really cold!
aimee says
I just learned a great trick for peeling eggs..crack then a bit on counter top then put it in a cup with lid and shake shake shake! They practically fall out of the shells!
Louise RD says
I have a great use for frozen blueberries: put them in your Manhattans in lieu of the cherry. It’s how it’s done in TX, apparently…so that’s what we do now and they are great!:-)
Caitlyn@SoDamnGood says
AH the perfect hard boiled egg trick. Love when eggs come out like that so I can’t wait to try it, thanks!!

I’m jealous that strawberries are about to be in season there. Our strawberry season just ended and now all of ours taste awful. Local fresh strawberries are my favorite. I’m also want to eat up that local pimento cheese. Looks so good!
I need you to teach me how to get my toddler to eat what I eat for dinner too. I always serve him what we are eating but most nights he ends up going to bed without eating. I keep thinking he will catch on, but it isn’t happening.

What’s the fruit/veg on the left of the salad greens? Can’t figure it out!
KathEats says
The purple roasted potatoes?! Which picture?
KB says
No, no, the grocery shopping pic with all the groceries at the till. The two light green “things” next to the salad tub under the orange. Looks like a gourd we have in India but I’m pretty sure it isn’t. Maybe more mangoes?
KathEats says
Oh – those are mangos!!!
Jacqui says
oh- not 1/4 cup of milk. So filling -really?

Since you’re a fan, I think you need this in your life… https://www.youtube.com/watch?v=5Krz-dyD-UQ
You’re welcome 😉 P.S. Don’t make fun of my immature humor.
KathEats says
Is that going to spoil any seasons for me!? Have to check first!
Susan says
You tested a FoodSaver vacuum sealer several months back… seems like the perfect solution to preserve berries in the freezer. We have one and it works great for freezing all sorts of foods in the freezer, including berries. No freezer burn can happen without air.
KathEats says
Yes!

GoT is the best show ever!! Dying over the current season! 🙂
