Everything here is covered in pollen! I hate to say it, but we need a good rainfall to wash it all away. I have neglected to bring in my outdoor furniture cushions and now I’m scared to sit in them 🙂 But in exchange for the pollen, we have finally reached the point of spring where temperatures are consistently allowing me to wear short sleeves. I can’t wait for dress season! I just bought a few dresses with zip pockets from Title Nine. Pockets rule!
With warmer weather comes smoothies! I hadn’t done a coconut butter “magic shell” in ages, so I made one and drizzled some melted coconut butter in my spinach smoothie the other morning. It hardens to provide a nice crunch in contrast to the…well…the smooth of the smoothie!
Breakfast #2 to share is overnight oats. I’m into simple toppings these days. A scoop of Wild Friends peanut butter on top is all for today! Bananas are mixed inside along with oats, milk, yogurt, cinnamon, salt and chia seeds.
Breakfast #3 is a fried egg, lots of strawberries (that I have to microwave because of my sensitive teeth!) and a foamy cappuccino.
Lunches included a trip to the Juice Laundry after hot yoga at Elements! I was craving something cold and this smoothie with their homemade granola and fruit on top Hit.The.Spot!
Leftovers still rule for lunch at home. I ate some of the Skinny Suppers garden bake.
And lastly this salad with cottage cheese, greens, peppers and lots of Red, Hot & Blues!
Here’s a good example of how I’m trying to cook solo these days. I baked cod topped with herbs de Provence pesto and served that with leftover rice (from Mexican night) and some roasted veggies I snuck from the Whole Foods hot bar. Mazen had some fish, sweet potato wedges and rejected the veggies and rice. Gotta keep trying!
Dinner #2 at a friend’s house – BBQ chicken and grilled veggies. So glad grilling season is back! The chicken was covered in Bone Suckin’ Sauce – the best!
And lastly, it’s true. I had olives, chips, guac and cheese for dinner. I went to a Stella and Dot party at Ellen’s and had plans to make a kale salad to go with this, but I just wasn’t hungry after too many snacks! #truth
I’ve just bought these three products from Birchbox that I enjoyed so much in sample size. The Foreo cleanser smells SO GOOD. Actually, the smell is what got me on all three! The RMS make-up remover wipes smell like those toasted coconut chips, and I love the Clean perfume duo to keep in my purse 🙂
And finally, these kiddos love each other so much! We had Sylvia over for a playdate and they had fun pretending to swim in the bathtub.

Question about cottage cheese, especially now that my 1 year old is eating all foods! What is the best cottage cheese you have found? So many of them have scary ingredients like cargeenan and weird “gum” products—we try to eat real food but not sure if cottage cheese would fall under that category and what the best choice would be? I just got those makeup wipes in my box too, really liked them! I just use straight up coconut oil on a cotton ball for a remover, works awesome!

I’ve given up dairy for health reasons and I really miss the doughiness of overnight oats. I’ve tried to recreate it with chia seeds (oh she glows versions) and using non-dairy yogurt buts its not the same. Do you have any recommendations to replicate the doughiness factor or maybe you can make a recipe for the blog, please 🙂

Hmmm….maybe try mashed banana? It might just be your ratio of oats to milk (non-dairy milk) so I’d keep playing with that.

I’m totally with you on sensitive teeth. If I even hear someone crunching ice… Or worse, see them biting into ice cream… I get goosebumps and chills for days! I’ll have to try the microwave trick.
